FLATBREAD PIZZA WITH BEEF, MUSHROOM, AND CARAMELIZED ONIONS

Steps:
- Preheat oven to 550° F or as high as your oven will go.
- Over medium low heat, caramelize the onions in the butter until soft and golden brown.
- Using tongs, remove the onion to a paper towel-lined, leaving as much butter behind in the pan as possible.
- Add the mushrooms to the hot pan and brown.
- Then add the thyme to the mushrooms and stir to heat.
- Turn off the flame and begin assembling the flatbread pizzas on a section of parchment paper.
- Brush olive oil over the tops of the flatbread pieces, being careful to reach to the edges.
- Spread half of the diced garlic over each, distributing evenly.
- Sprinkle 1/4 cup of shredded mozzarella over each.
- Then layer the onion and mushrooms.
- Drop half slices of the roast beef in small piles.
- Sprinkle some more mozzarella lightly over the roast beef.
- Lift the parchment paper with the assembled flatbread pizzas onto a cookie sheet.
- Place on the middle rack of the pre-heated oven.
- Bake until the cheese is melted and begins to turn golden brown, and the bread edges are becoming crispy, about 2-3 minutes
- Remove from the oven and place on a cutting board.
- Rest for about 3-5 minutes, then slice and serve.

My take on a homemade Philly cheese steak pizza! I'm loading up my homemade pizza crust with a quick garlic white sauce, lots of sautéed peppers, onions, and mushrooms. So why order out on Friday Night when you can make it at home?

- Position a rack in the center of the oven and preheat the oven to 475ºF. Roll the dough out into a 12 inch circle. Create a lip or rim by thickening the dough around the crust portion. This keeps the sauce in instead of running over the sides. Let dough rest for 15-20 minutes while you prepare the sauce.
- Melt the butter in a small saucepan over medium heat. Whisk in the flour and let cook for 1 minute or until it smells like baked pie dough. Slowly stream in the cold milk while you whisk. Add the pressed garlic and allow the sauce to come to a gentle simmer. Season with salt, pepper, and nutmeg. Remove the sauce from the stove; whisk in the parmesan cheese. Allow the sauce to cool for 5-10 minutes, you can prep your veggies in that time.
- The veggies can be used raw on the pizza if you prefer. I like to heat a skillet with a teaspoon of oil and cook each onions, peppers, and mushrooms for just a couple minutes separately. You'll use a total of 3 teaspoons of oil to do this. I sometimes let the onions go low and slow for a little longer to get them to sweeten up a bit more, however this is totally optional.
- Top the dough with sauce, cooked steak, veggies, and shredded cheese. Bake for 12-15 minutes or until the crust is lightly browned and the cheese is bubbling and golden. For the last minute of baking, you can turn it to the broiler setting jus to get everything extra bubbly if you'd like. Slice pizza and serve!

- Preheat oven to 500 degrees, with racks in upper and lower thirds. On a lightly floured surface, roll out 1 dough half into a 14-inch oval. Transfer dough to a parchment-lined baking sheet and brush with 1 teaspoon oil. Repeat with remaining dough half. Bake until crusts are puffed and golden brown, about 14 minutes, piercing large air bubbles with a knife, if necessary, and rotating sheets halfway through.
- Meanwhile, pat steak dry and season with salt and pepper. In a large cast-iron or other heavy skillet, heat 1 teaspoon oil over medium-high until almost smoking. Cook steak until medium-rare, 6 to 8 minutes, flipping once. Transfer to a cutting board, tent with foil, and let rest 10 minutes.

- Season steak with salt and pepper on both sides.
- Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. QUICK SKILLET STEAK WITH ONIONS AND MUSHROOMS

- Slice beef into thin strips. Season with salt, garlic powder and fresh pepper to taste.
- Heat a large skillet over high heat. When the skillet is very hot, spray with cooking spray and add half of the beef.
- Cook 1 minute, then turn steak and cook an additional 30 seconds.
- Set aside in a large dish.
- Spray the skillet again and when it gets hot add the remaining steak, cooking one minute, then turning and cooking 30 seconds more.
- Add remaining steak to the dish.
- Return skillet to heat and spray once again with cooking spray; add onions and season with salt and pepper.
- Cook one minute, then turn and cook onions an additional 30 seconds or until onions are golden.
- Lower heat to medium and add 1/2 tsp olive oil to the skillet, add mushrooms, salt and pepper and lightly spray the top of the mushrooms with oil.
- Cook 1 1/2 minutes, then turn mushrooms and cook another minute and a half.
- Add to dish with steak and onions and stir to combine.
- Serve over rice.

It sounded to me like he might have been inspired by steak & mushroom pie (especially considering he'd just been to the British import shop & bakery!). So here is my interpretation!

- Heat 2 tablespoons oil in a large skillet over medium-high heat. Add onions, mushrooms, and garlic and saute 1-2 minutes, or until starting to release juices. Add salt, pepper, thyme, and balsamic vinegar and stir-fry until onions are just turning brown, about 10 minutes. Remove from pan and set aside.
- In same skillet, heat remaining 2 tablespoons olive oil. Add beef strips and stir-fry until browned, about 4-5 minutes. Add mushroom mixture back to skillet and cook until heated through. Add enough flour to thicken juices. Remove from heat and set aside.
- Meanwhile, heat oven to 400* F. Spread pizza dough out into a 12 inch circle in a greased pizza pan. Bake at 400* F for about 10 minutes, or until just turning pale golden.
- Spread sauce over crust. Top with about 1 cup of the mozzarella cheese (use more if desired). Place beef mixture evenly over cheese. Top with remaining mozzarella.
- Return to oven and bake at 400* F for another 10-12 minutes, or until cheese is melted with golden brown spots.

- Preheat oven to 375 Degrees. Place flatbread pizza crust on large baking sheet or pizza pan. Set aside.
- Using a medium skillet and turn onto medium-high heat. Add a tablespoon of olive oil. Add the shaved beef and season with salt and pepper. Cook just until the beef has turned brown, 5-7 minutes. It will cook more in the oven. Place the beef on a plate and set aside. Using the same pan, cook the mushrooms about 2-3 minutes.
- Sprinkle about ½ cup of Gruyere cheese on top of the flatbread crust. Sprinkle the cooked beef evenly across the flatbread crust along with the mushrooms, and sprinkle about a ⅓ cup of the green onions on top and the remaining cheese. Place in the oven for 12-15 minutes. Remove from oven and sprinkle with remaining green onion.
- While the pizza is baking, add the sour cream, Horseradish, vinegar, and season with salt to taste and mix. Drizzle the horseradish cream on top of the pizza as desired. Finally, sprinkle crispy onions on top of the pizza and serve.
- Note: I put the horseradish cream in a sandwich bag and cut a small tip at the end and drizzled the cream across the pizza that way.
