GARLIC BUTTER SKILLET STEAK AND SHRIMP

Garlic Butter Skillet Steak and Shrimp image

Learn how to make the most tender pan-seared garlic butter skillet steak and shrimp. You won't have to go out to get good surf & turf when you can make it at home!

Provided by Marzia

Categories     30 Minute Meals

Time 20m

Number Of Ingredients 11

2 large New York strip steaks (0r 4 small)
8 ounces shrimp, peeled and deveined
salt and pepper
olive oil
1-2 tablespoons cold butter
2 whole cloves of garlic
4 tablespoons softened butter
1 tablespoon garlic, pressed or minced
2 teaspoons chopped thyme (or rosemary, or tarragon)
1 tablespoon chopped flat leaf parsley
a big pinch of maldon sea salt + coarse black pepper

Steps:

  • MAKE THE BUTTER: Combine the butter, garlic, chopped parsley, and chopped thyme with a generous pinch of salt and pepper in a small bowl. Cover and refrigerate until you're ready to use it.
  • PREP THE STEAKS: Make sure to remove the steaks from the refrigerator at least 20 minutes before cooking. Pat down the steaks with a paper towel, brush with just a little bit of olive oil on both sides and generously season your steaks with salt and pepper on both sides, really rub it in and make sure it sticks.
  • COOK: Heat a large cast iron skillet over high heat. Add 1 tablespoon of butter along with roughly 1 tablespoon of olive oil and allow the oil to heat through. Add the steaks to the pan along with the two whole cloves of garlic and cook the steaks for roughly 3-7 minutes on each side depending on the thickness of the steak and your preference of doneness. Check the temperature using a meat thermometer and when it reaches your desired doneness, remove the steaks to a plate and let rest for 5-7 minutes.
  • SHRIMP: If you have a ton of grease leftover from the steak, discard most of it, leaving just 1 tablespoon to cook the shrimp in. While the steak is resting, add the remaining tablespoon of butter to the pan (if you didn't have much oil left) over medium heat and add the shrimp. Move them around and season them with salt and pepper. Cook just long enough for them to curl up into a 'c' shape, about 1 - 1½ minutes.
  • SERVE: when ready to serve, top the shrimp and steak with a generous dollop of the prepared garlic butter and serve warm with your favorite sides!

SURF AND TURF STEAK ROLL UP RECIPE BY TASTY

Surf And Turf Steak Roll Up Recipe by Tasty image

Seared flank steak stuffed with sweet chunks of fresh lobster and topped with a buttery Parmesan cream sauce is undoubtedly a combination made in heaven. Make this when you really want to treat yourself to an indulgent dinner at home!

Provided by Tikeyah Whittle

Categories     Dinner

Time 1h30m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons kosher salt, divided
3 lb lobster
4 oz cream cheese, room temperature
1 ½ teaspoons freshly ground black pepper
1 lb flank steak
1 tablespoon olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
½ cup dry white wine
1 cup heavy cream
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
¼ cup fresh parsley, finely chopped, plus more for garnish
toothpick

Steps:

  • Preheat the oven to 375°F (190°C)
  • Add 1 tablespoon of salt to a large pot of water and bring to a boil over high heat. Once the water is boiling, add the lobsters, heads first, leaving the rubber bands on the claws. Once the water returns to a boil, boil the lobsters for 10 minutes.
  • Use tongs to remove the lobsters and transfer to a cutting board. Let cool for 5-10 minutes. Use scissors to snip off the rubber bands of the claws. With one hand, hold the body of the lobster, and with the other hold the tail. Use your hands to twist the tail off and remove it from the body. Twist the claws off where the leg and body meet.
  • Use a pair of kitchen shears to make an incision at the top of the tail, then snip through to the base. Snap the shell back and remove the tail meat.
  • Twist the legs at the joints to separate from the claws. Use kitchen shears to cut through the shells and remove the leg and claw meat.
  • Roughly chop the lobster meat and add to a medium bowl, along with the cream cheese, 1 teaspoon of salt, and ½ teaspoon of pepper. Use a rubber spatula to mix well.
  • Lay a piece of plastic wrap over a cutting board. Pat the flank steak dry with paper towels, then place on the plastic wrap and cover with another sheet. Use a meat mallet to pound out to ¼-inch thick.
  • Remove the plastic wrap, then season the steak on both sides with the remaining 2 teaspoons of salt and teaspoon of pepper.
  • Spread the lobster mixture in an even layer over the steak. Starting from the short end, gently roll the steak into a log shape. Secure the roll with toothpicks.
  • Heat the olive oil in a large cast-iron or stainless steel pan over medium-high heat. When the oil begins to shimmer, add the steak roll and cook for 3-4 minutes on one side, until browned. Using 2 sets of tongs, gently turn the roll over and sear on the other side for 3-4 minutes, until browned.
  • Transfer the pan to the oven and roast for 27-30 minutes, until the internal temperature of the steak reaches 145°F (63°C).
  • Remove the steak roll from the pan and transfer to a cutting board. Let rest for 10 minutes.
  • Make the cream sauce: In a large pan, melt the butter over medium-high heat. Add the garlic and stir for 30 seconds, until fragrant.
  • Add the white wine and cook for 3 minutes, until reduced by half.
  • Add the heavy cream, salt, and pepper, and cook for 7 minutes, whisking frequently, until slightly thickened and reduced by half.
  • Add the parsley and whisk to combine.
  • Remove the toothpicks from the steak roll, then slice into 1-inch thick pieces. Transfer to a platter and pour the cream sauce on top, then garnish with more parsley.
  • Enjoy!

  • Place a non-stick pan over medium heat. When hot, add butter, onion and garlic, cooking until softened. Add the remaining ingredients and stir until the cheeses have melted and the spinach artichoke dip has heated through. Thin with water if you'd like. Adjust seasonings with salt and pepper. When cool, refrigerate. Can be made several days ahead. Heat and stir before serving. Makes 3 cups with 1/2 cup per serving.
  • Trim the asparagus by cutting off 1 inch off of the bottoms and peeling the last 3 inches with a vegetable peeler. If the asparagus is thin, bend one spear and it will break where it is tender. Use it to cut the rest of the asparagus to length. Place the asparagus in a microwave safe dish with 1 tbsp water and cover with cling film. (Alternately, the asparagus can be steamed on the stove or roasted in the oven before serving.)
  • Have the ingredients for the shrimp scampi chopped and ready. Drain the shrimp on a paper towel, then place on a plate and season with salt and pepper.
  • Remove the steaks from the refrigerator at least 20-30 minutes before cooking. Rub the exterior surface with about 1 tsp of oil, then season liberally with salt and pepper. Remember: protein loves salt.

Away from having both steak and shrimp on a plate, the “surf” and “turf” often share a sauce, like a garlic butter sauce, to unite the flavors of the steak and shrimp. This recipe can be served with the shrimp on top of the steak or the shrimp can be served alongside the steak. If the shrimp is bigger than the steak you may want to serve them next to each other.
