Japanese Grilled Hibachi Steak image

Traditional Japanese hibachi steak is cooked over a charcoal grill, not an iron griddle. Bring authentic hibachi grilling to your next backyard cookout!

2 cloves garlic, minced
1 inch ginger, grated
1 tsp sugar
3 Tbsp soy sauce
1 Tbsp water
1 Tbsp oil
2 1" thick Certified Angus Beef ® brand New York strip steaks
Sesame seeds and scallions, for garnish

Steps:

  • In a small bowl, mix the garlic and ginger with the sugar, soy sauce, water, and oil, until the sugar has dissolved.
  • Place the steak in a tight-fitting dish with high sides (or a zip-locked bag). Pour the marinade over the steak, turning to coat. Marinade for 30 min, while you preheat your charcoal grill.
  • Preheat your charcoal grill to high heat (roughly 450F). (You should be able to hold your hand 4-5 inches from the grates for 2-4 seconds.)
  • Once your grill grates are hot, remove the steaks from the marinade and grill for 2 minutes per side, turning once gently with tongs.
  • When you think your steaks are done, test the internal temperature with an instant-read thermometer. You are looking for an internal temperature of 130F for medium rare or 140F for medium. (The internal temperature of your steak will rise around 5 degrees while the steaks rest, bringing them to the correct temperature for each doneness listed.)
  • Remove the steaks from the grill and let rest for 5 minutes before slicing.
  • Top with sesame seeds and sliced scallions, if desired for serving.
  • Serve with white rice and grilled vegetables.

5 bulbs garlic
2 oz light soy sauce
8 oz whipped butter
1 tsp ground black pepper
1 tbsp lemon juice ((optional))

Steps:

  • Take the butter out from the fridge and let it soften at room temperature for 30 minutes.
  • Prep the bulbs of garlic and toast them in the oven at 350°F for 3o minutes.
  • Once the garlic bulbs are roasted, cut the tip for easy peeling. Squirt and squeeze into a container and continue doing the same process until each garlic clove is peeled. Start smashing like mashed potatoes, turning them into a smooth paste.
  • Gradually add the room temperature whipped butter and combine them with a spatula by folding. This refers to continuously folding the ingredients gently toward the center of the bowl until they are evenly combined. When the color of the mixture is the same throughout, you have got the proper consistency.
  • Crack some black pepper (you can adjust the amount according to your taste). Then, gradually add the soy sauce. Mix until the soy sauce is well incorporated. At this point, you add the lemon juice (optional).
  • Once you have the desired even color and the right consistency, transfer the mixture into a glass container with a lid to seal the flavor. Store your garlic butter in the fridge for up to three weeks if you don't intend to use it straight away.

Pepper to taste

Steps:

  • Combine the sauce ingredients and set aside.
  • Over medium-high heat, melt the butter and toss in the garlic. Saute until fragrant, about half a minute.

5 Tbsp. butter
1 cup chopped onion
1 cup chopped carrots
⅔ cup chopped green onions
3 tsp. sesame seeds
5 eggs
1 cup cooked rice
5 Tbsp. soy sauce
salt, to taste
pepper, to taste
1 Tbsp. grated apple
2 Tbsp. soy sauce
1 Tbsp. grated garlic
1 Tbsp. sesame oil
1 Tbsp. sesame seeds
¾ pounds thin-sliced boneless beef top sirloin steak
(could also use ¾ pound shrimp, chicken, or scallops in place of the steak)

Steps:

  • Melt butter in a large skillet. Add onions, carrots, and green onions. Saute for 2-3 minutes until carrots are translucent. Set aside.
  • Heat the oven to 350 degrees. Place sesame seeds in a shallow pan. Bake 10-15 minutes, shaking pan occasionally, until golden brown.
  • Lightly grease another skillet and scramble the eggs.
  • Combine rice, vegetables, sesame seeds and eggs. Add soy sauce, stir, and salt and pepper to taste.
  • Mix all the marinade ingredients in a small bowl.
  • Marinate meat in the sauce for 30 minutes, or longer.
  • Heat a frying pan or flat grill on high heat.

2 1/2 Tbsp olive oil ((light or extra virgin))
1/4 cup rice cooking wine
2 Tbsp soy sauce
2 cups rice ((cooked long grain white rice, I typically use Jasmine))
1 Tbsp Hibachi Cooking Oil ((see above))
1/4 cup white onion ((finely chopped))
1/2 cup peas and carrots ((frozen blend, or a 1/4 cup of each peas and finely chopped or diced carrots))
1 large egg
2 Tbsp butter ((salted))
2 Tbsp soy sauce

Steps:

  • Combine ingredients in a jar or squeeze bottle that you can seal with a lid to shake up the contents, and for storing any unused portion ( if desired ).
  • Shake container before using to cook hibachi style foods, such as this hibachi fried rice, noodles, vegetables, chicken, steak, or seafood.
  • Set all prepared ingredients near workspace as this is cooked on high heat. Using a large wok is preferable, but a large skillet or frying pan will work. Bring wok or skillet to high heat with hibachi cooking oil blend or alternative ( cottonseed, canola, peanut oil ).
  • Cook the egg in the heated oil, quickly breaking the cooked egg apart and moving to the sides once cooked. Add vegetables and saute for about 2-3 minutes. *Reduce heat in small increments as needed if cooking too hot.
  • Heat butter for 10-20 seconds in the microwave and stir in the soy sauce ( add garlic or garlic powder, if desired ).
  • Add the cooled rice to the wok or frying pan, then the butter sauce. Fry for an additional 5 minutes, or until the rice and vegetables are well combined, coated with butter, and everything is heated through.
  • Serve immediately, garnish with sliced green onion or sesame seeds.
