BAKED BEANS WITH HAM



Baked Beans with Ham image

2 teaspoons canola oil
1 medium onion, diced
12-ounces smoked Virginia ham, cut into 1/4-inch cubes
2 cloves garlic, minced
Two 15-ounce cans navy beans (preferably low-sodium), drained and rinsed
One 15-ounce can crushed tomatoes (preferably low-sodium)
1/2 cup water
1/4 cup unsulfured molasses
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened and translucent, about 5 minutes. Add the ham and garlic and cook for an additional 3 minutes. Stir in the beans, crushed tomatoes, water, molasses, mustard, vinegar, and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook until about half of the liquid is absorbed, 15 minutes.
  • Yield: 4 servings
  • Serving size: 1 1/4 cups baked beans

2 lbs round steaks, cut into 1 inch cubes
2 tablespoons vegetable oil
2 cups cooked but still firm navy beans
1 (16 ounce) can tomatoes
salt and pepper
2 cups sliced onions
1/2 cup brown sugar, firmly packed
5 slices bacon

Steps:

  • In a large frying pan,cook round steak in oil until browned; add beans, tomatoes, and salt and pepper to taste; cover and simmer for 10 minutes.
  • Spoon half of the mixture into a 2-quart casserole; spread onions over the bean mixture, then sprinkle with half the brown sugar.
  • Add remaining half of bean mixture, sprinkle with remaining sugar.
  • Lay strips of bacon over the top.
  • Bake, uncovered, in a 325° oven for about 1 hour.

1 pound dried navy beans
2 quarts water
1-1/2 pounds Italian sausage, cut into 1/4-inch slices
2 cans (14-1/2 ounces each) chicken broth
2 cups chopped onion
1-1/2 cups thinly sliced carrots
1 can (15 to 16 ounces) whole kernel corn
1 tablespoon minced fresh parsley
1-1/2 teaspoons Italian seasoning

Steps:

  • Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., In same pan, bring the water and soaked beans to a boil; boil for 2 minutes. Reduce heat; cover and simmer for 60-70 minutes or until beans are tender. Drain., In a Dutch oven, cook the sausage over medium heat until no longer pink; drain. Add the broth, onion, carrots, corn, parsley, Italian seasoning and beans. Cover and bake at 350° for 30 minutes. Uncover and bake 30 minutes longer or until bubbly.

For the Sauce (Optional: can replace homemade sauce with 3 cups of KRAFT Barbecue Sauce):
1 cup brown sugar
1 cup HEINZ Tomato Ketchup
2 Tbsp. cider or white wine vinegar
2 tsp. dried mustard powder
1/4 tsp. liquid smoke (optional)
2 cloves garlic, peeled and minced or pressed
freshly ground black pepper to taste
For the Casserole:
1 bottle KRAFT Original Barbecue Sauce
2 lb. of OSCAR MAYER Bacon
2 lb. lean ground beef, venison or elk
1 small onion, peeled and finely chopped (or 1 ½ teaspoons onion powder)
6 cups (or 3 cans drained) butter beans
6 cups (or 3 cans with liquid) kidney beans
4 cups (or 2 cans with liquid) pork and beans

Steps:

  • STIR all of the sauce ingredients together in a heavy-bottomed saucepan over medium high heat. Stir frequently until the mixture reaches a boil. Boil for one minute, remove from the heat and set aside.
  • PREHEAT the oven to 325°F.
  • STACK the two pounds of bacon and cut across the slices making ½-inch wide strips. In a large skillet, fry the bacon, stirring frequently, until crisp and brown. Use a slotted spoon to transfer the bacon to a paper towel lined plate. Drain the bacon grease from the pan.
  • PLACE the pan back over medium high heat and break up the ground beef into it. If using the onion, add it at this point. Continue breaking it up with a spoon as you cook it until the beef is browned. If necessary, drain any excess fat away from the meat. In a large mixing bowl, stir together the sauce, beef, bacon, and beans until well combined.
  • DIVIDE the mixture between a 9-inch by 13-inch by 2-inch pan and an 8-inch by 8-inch by 2-inch square pan. Bake (uncovered) for 1 hour or until very bubbly and hot all the way through.
  • To Make in the Slow-Cooker:
  • SPRAY the bowl of a slow-cooker crock insert with non-stick cooking spray.
  • POUR the mixture into the insert, cover, and cook on LOW for 4 to 6 hours or until very bubbly and hot all the way through.
  • STORE leftovers tightly covered in the refrigerator or divide into individual meal sized portions and freeze in an airtight container for up to 6 months. Reheat with a dash of water in a covered saucepan or in the microwave.

1 pound sirloin tips, cubed
1 onion, chopped
1 stalk celery, chopped
2 potatoes, peeled and diced
5 cloves garlic, minced
2 tablespoons olive oil
½ cup red wine
1 bay leaf
1 (16 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 tablespoon ground cumin
1 ½ teaspoons crushed red pepper flakes
1 teaspoon brown sugar
1 tablespoon hot pepper sauce
1 (15 ounce) can navy beans

Steps:

  • In a large stock pot, brown sirloin, celery, onion, and garlic in olive oil until onions are translucent.
  • Add wine, bay leaf, tomatoes, tomato paste, cumin, red pepper flakes, sugar, potatoes, and hot pepper sauce. Bring the mixture to a rapid boil, and then reduce heat. Continue to cook for 30 minutes, or until meat is tender. Stir occasionally to keep meat from sticking to the pan.
  • Stir in navy beans, and heat through. Serve hot, garnished with parsley and cilantro.

1 1/2 pounds ground beef
3 tablespoons chili powder
1 1/2 teaspoons ground cumin

One 15-ounce can pinto beans, strained and rinsed
2 cups jarred tomato salsa, plus more for serving
6 cups yellow corn tortilla chips (about 5 ounces), plus more for serving
3 cups shredded Cheddar and Monterey jack blend
3 cups shredded Cheddar and Monterey jack blend
1 cup sour cream, stirred well for easy dolloping
1 cup shredded iceberg lettuce
2 plum tomatoes, diced

Steps:

  • Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
  • Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
  • Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
  • Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.
