Time 30m

Yield 2

Number Of Ingredients 10

1 (12 ounce) sirloin steak
salt and freshly ground black pepper to taste
2 tablespoons oil, or as needed
⅓ cup shiitake mushrooms, stems discarded, caps thickly sliced
½ shallot, sliced
1 clove garlic, peeled
⅓ cup dry white wine
⅓ cup beef broth
¼ cup butter, cubed
2 tablespoons chopped fresh tarragon

Steps:

  • Season steak with salt and pepper on both sides.
  • Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. Add steak and cook until it is beginning to firm and is hot and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Remove steak from skillet and set aside. Tent with foil to keep warm. Discard oil remaining in the skillet.
  • Reduce heat to medium-low and cook mushrooms, shallot, and garlic, stirring frequently, until softened, about 5 minutes. Pour in white wine and cook until slightly reduced. Pour in beef broth. Reduce heat to low and stir in butter, 1 cube at a time, stirring well after each addition. Stir in tarragon. Season with salt and pepper. Serve mushroom sauce over the steak.

We decided to top our steak with all the delicious components of a stuffed mushroom, from the crispy, buttery breadcrumbs to the bits of savory bacon. Slice any leftover steak thinly and serve in a warm crusty roll with the horseradish sauce for a quick meal.

Provided by Food Network Kitchen

Categories     main-dish

Time 8h50m

Yield 8 servings

Number Of Ingredients 14

One 2 to 2 1/2-pound 1 1/2-inch-thick London broil
1/4 cup olive oil
1/4 cup Worcestershire sauce
2 tablespoons balsamic vinegar
4 cloves garlic, smashed
2 whole sprigs rosemary plus 1 teaspoon chopped leaves
Kosher salt and freshly ground black pepper
1 strip bacon, chopped (about 1/2 ounce)
1 pound cremini mushrooms, halved
1/2 cup panko breadcrumbs
2 tablespoons unsalted butter
1/2 cup sour cream
2 tablespoons prepared drained horseradish
1 tablespoon chopped fresh parsley, for garnish

Steps:

  • 1. Pierce the meat all over with a fork and place in a large resealable plastic bag. Add 2 tablespoons of the olive oil, the Worcestershire, vinegar, garlic and whole rosemary. Seal the bag, pushing out all the air. Shake the bag a few times and refrigerate 8 hours or overnight.
  • 2. Preheat the broiler and line a rimmed baking sheet with aluminum foil. Remove the meat from the marinade and pat dry. Sprinkle both sides with 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Broil, flipping once, until the internal temperature reaches 125 degrees F, about 13 minutes. Transfer to a cutting board, tent with foil and let rest at least 15 minutes.
  • 3. Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Cook the bacon, stirring, until crispy, about 5 minutes. Add the mushrooms and cook until golden brown and tender, about 10 minutes. Add the breadcrumbs, butter, chopped rosemary and 1/4 teaspoon each salt and pepper. Cook, stirring, until the breadcrumbs are golden brown, another 3 minutes. Set aside.
  • 4. Stir together the sour cream and horseradish and season with salt and pepper. Slice the steak against the grain, top with the mushrooms and garnish with the chopped parsley. Serve with the horseradish sauce on the side.

  • Prepare the steaks first and get them marinating. Do not trim the steaks of fat before grilling; the fat will keep the moisture in. Place the steaks onto a tray and drizzle the olive oil and vinegar over each steak, massaging them into the meat. Next, season generously with coarse sea salt, followed by a sprinkling of the herb de provence blend and black pepper. Wrap the tray with plastic wrap and place the steaks into the refrigerator. Allow the steaks to marinate for a minimum of 4 hours; best if done overnight.
  • For grilling the steaks, preheat the grill to 600F (high heat) first. Place the steaks onto the hot grill, spacing at least 6 inches apart. Grill the steaks with the grill lid open; grill for 7 to 8 minutes per side, rotating 45 degrees at the halfway point to achieve even grill marks. After 7 to 8 minutes, turn the steaks and repeat for the other side. Allow the steak to rest for at least 5 minutes before trimming away fat and cutting away the bone.
  • While the steaks are grilling, prepare the salad. Plate approximately 4 cups of spring greens per serving, then top with sliced cucumbers, thinly sliced shallots and place the sliced avocado on the side. Top the salad with crumbled cheese, quartered figs and sliced almonds.
  • Add a light drizzle of the French vinaigrette dressing over the salad, then add a light drizzle of balsamic vinegar and honey. Don't overdress the salad; a light tough of each. Serve the steak on top or on the side and dress with steak sauce. Serve the salad with a side of toasted baguette.

  • To make the dressing, add soy sauce, vinegar, 1 tablespoon vegetable oil, sesame oil and ginger to a mason jar. Cap and shake until well combined. Set aside.
  • Prepare a charcoal grill to medium-high heat using Kingsford® Original Charcoal Briquets. Let the grill grate preheat for 15 minutes, and clean and oil it just before cooking. Brush mushrooms and steak with oil, then season mushrooms with salt and season both sides of the steak liberally with salt and pepper.
  • Grill mushrooms, turning often, until tender, golden and charred in spots (4 to 6 minutes). Sear steak until golden and charred in spots (about 4 minutes), then flip the steak and continue to cook until the internal temperature reaches 120°F for rare, 130°F for medium-rare, and 140°F for medium ( 2 - 3 minutes more). Transfer mushrooms and steak to a plate, and let steak rest for 5 minutes before slicing.
  • Tear mushrooms into bite-sized pieces and slice steak against the grain. Add mushrooms, arugula and scallions to a large bowl, and toss with some of the dressing. You want the vegetables evenly coated, but not swimming in it. Divide steak and dressed salad between 2 to 4 plates, then top with toasted sesame seeds, sliced chiles, mint leaves and a sprinkling of flaky sea salt.
