Steps:
- Preheat the oven to 350 degrees F. Remove steak from the refrigerator and place on a plate. Season liberally with salt and pepper on both sides. Let come to room temperature while you caramelize the onions.
- Prepare the Dijon onions: Heat 1 tablespoon olive oil in a large sautee pan over medium high. Add the sliced red onions and 1/4 teaspoon kosher salt. Cook until the onions begin to soften and brown, 5-8 minutes. Reduce heat to low and let cook, stirring occasionally, until the onions are very soft and caramelized, about 15 additional minutes. Remove from heat and stir in the Dijon to evenly coat. Remove the onions to a plate or bowl, then gently wipe the skillet clean with a paper towel.
- Heat the remaining 1 1/2 tablespoons olive oil in the skillet over medium high. Once the oil is very hot and almost smoking, add the seasoned steaks. Do not crowd them-if your skillet is not large enough to easily accommodate both, cook them in batches. Sear the steaks for 1 minute on each side, then reduce the heat to low and cook the steak for about 6-8 minutes, turning once, until rare and a thermometer inserted in the center reaches 125 degrees F. Transfer to a plate and cover with foil. Let rest for 10 minutes, then slice into strips.
- Spread the melted butter onto the bottom of a 9x13-inch baking dish, using just enough to coat the pan. Lay the bottom of the buns in a single layer in the baking dish, then top with the arugula, steak slices, Brie, and the caramelized onions. Spread the inside of the top buns with about 2 teaspoons jam, then lay the buns on top to complete the sandwiches. Brush the bun tops with the remaining melted butter, then cover the pan with foil. Bake for 15 minutes, just until the cheese has melted. Transfer to a serving plate and enjoy warm.

Steps:
- Trim off the excess fat from the meat, and then cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
- Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
- Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat.
- Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.
- Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

Steps:
- Add the olive oil to a large skillet and heat it over high heat. Make sure the olive oil is hot, then add the steak pieces to it. Season them generously with salt and pepper.
- Cook for at least 2 minutes before stirring the steak pieces. You want to make sure you get a good sear on them. Continue cooking for another 2 minutes until they're golden brown. If your skillet isn't big enough, you may need to do this batches.
- Transfer the steak bites to a plate and in the same skillet add the butter. Turn the heat down to a medium and after the butter has melted, add the garlic and red pepper flakes. Cook for about 30 seconds while stirring, just until the garlic becomes aromatic and starts to brown.
- Pour the garlic butter over the steak bites and toss well. Garnish with parsley and serve.

- Cut beef into ¾" cubes and trim away any excess fat or gristle. Season steak cubes lightly with salt and pepper. Remember, the sauce will also contain the salt from Worcestershire sauce.
- Heat a large heavy-bottom skillet, preferably cast iron, over medium-high heat and allow it to become very hot. Add 1 Tbsp butter and swirl the pan to melt butter and coat the bottom of pan. Immediately scatter half of seasoned steak cubes evenly across the bottom of pan and allow it to cook, undisturbed, for about 1 minute before stirring to cook on other sides.
- Continue cooking, stirring occasionally for 2–3 minutes or until browned on most sides then transfer to a plate. If you prefer your meat well done, just leave it in the pan a bit longer until cooked through. Add second batch of meat and cook in same manner, adding a bit more butter if necessary.
- Once all meat has been removed from skillet, return skillet to heat and add red wine and Worcestershire sauce. Allow liquid to bubble and reduce until only about 1 Tbsp remains. Remove from heat and add remaining ½ tsp butter and swirl or stir quickly to melt and emulsify butter into sauce, which will thicken slightly and make it nice and glossy.

- Drop in steak pieces and seal (or cover bowl) for about 30 minutes. (I like it right at 15 minutes, but you can do as much as overnight)
- Heat a large skillet to medium-high heat. (You want it hot) Remove steak pieces from marinade and place in hot skillet. Discard remaining marinade.
- Cook for 1 minute then flip each piece and cook an additional minute. That is for medium steaks, so cook longer if you prefer yours well done.

- Set a large cast iron (or stovetop grill pan) over medium-high heat with 2 tablespoons olive oil and butter. Once hot, sear the steak, untouched, for 4 to 5 minutes on the first side. Flip over and cook for another 2 to 3 minutes on the second side for about medium rare. Transfer to a plate and let rest for about 5 to 8 minutes before slicing.
- Lay the bread slices on a baking sheet in a single layer and drizzle with remaining 2 tablespoons olive oil. Toast under the broiler on both sides.
- To assemble the sandwiches, spread half of the bread slices with grainy mustard and the other half with bacon jam (or tomato jam if using). Lay a piece of lettuce on top of the jam halves of bread and top each with 2 slices of Brie. Divide the sliced steak amongst each sandwich and then sandwich together with the mustard halves. Skewer with a long toothpick to hold in place and serve. Enjoy!
