Steps:
- Preheat your oven to 350 degrees. Spray a mini muffin pan with cooking spray.
- Mince the onion, red bell pepper, and ham.
- Sauté the onion, pepper, and ham mixture on medium-heat for 3-4 minutes. Allow to cool.
- In a large bowl, whisk together three eggs. Then add in the onion, pepper, and ham mixture.
- Add in the cottage cheese, Monterey jack cheese, cheddar cheese, salt, and garlic powder and stir well to combine.
- Scoop the mixture into greased mini muffin pan. Using a cookie dough scoop works well for this step, or utilize a small measuring cup. Fill the mini muffin pan to just before the top. Sprinkle with additional cheddar cheese, if desired.
- Bake the egg bites for 13-15 minutes until slightly golden.
- Serve with additional shredded cheddar cheese and green onions, if desired.
- Store leftover egg bites in an airtight container in the fridge, and reheat as desired.

Steps:
- Preheat the oven to 350 degrees F. Spray 6 or more cups in a regular-sized muffin tin generously with nonstick spray.
- In a large bowl, whisk the eggs. Then whisk in the cheese, cottage cheese, salt and pepper. Alternately (suggested from readers), you can combine the eggs and cottage cheese in the blender, and then stir in the cheese, salt and pepper. This results in a fluffier texture without the cottage cheese being visually present.
- Pour the mixture into the muffin tins- filling each about ½-full to leave room for the egg to expand while baking. Top with bacon bits.
- Bake 30 minutes, or until the eggs are completely cooked. Remove from the oven, take out of the tin and serve warm.

You can substitute Gruyere cheese for the Swiss and ham for the bacon, or add in small-cut veggies to these copycat Starbucks egg bites. I also like to bake these in small Mason jars for fun single-portion presentations. Serve with avocado slices and fresh fruit for a healthy breakfast. -Maria Morelli, West Kelowna, British Columbia
