Steps:
- Preheat oven to 350
- Prepare cake mix in large bowl according to directions on box.
- Spray 9 x 13 pan with non-stick spray.
- Pour batter into pan.
- Bake at 350 for 15-20 minutes or until center is just barely set.
- While cake is baking, prepare crumb topping.
- In large bowl of electric mixer combine butter, flour, cinnamon, brown sugar and vanilla until all crumbly.
- Immediately after cake is removed from oven, break crumb topping into marble size pieces with fingers, sprinkling over top.
- Put back in oven and bake an additional 10-15 minutes (topping will begin to look a less less wet/raw) let cool fully then dust with powdered sugar using a sieve if desired.
- Cut into squares and serve.

COPYCAT STARBUCKS CLASSIC COFFEE CAKE
I have found THEE Starbucks Classic Coffee Cake CopyCat!! You may find slight variations of the cake at different Starbucks locations. Sometimes there is a ribbon of cinnamon running through the middle of the cake, and sometimes the cake is dusted with a bit of powdered sugar. You'll also find some versions with a few chopped pecans in the topping; and that's the version here. Double up on the topping for the ultimate topping to match starbuck's cake..and can use smaller pan if needed. Footnotes To add ribbon of cinnamon to cake, double recipe of topping and reserve half (minus nuts if you like), pour half of batter, use half of doubled recipe, make sure to cover entire cake, pour the rest of the batter and top the cake with the reserve. This batter is very thick!! Option: Dust cake with powdered sugar after cooled to give more a starbucks feel!!

- Preheat oven to 325 degrees.
- Make topping by combining 1 cup flour with brown sugar, a stick of softened butter and 1 teaspoon cinnamon in a medium bowl. Mixture should have the consistency of moist sand. Add 1/2 cup chopped pecans.
- In a large bowl, cream together 1 cup butter, 3/4 cup light brown sugar and 1/2 cup granulated sugar with an electric mixer until smooth and fluffy. Add eggs and vanilla and mix well.
- In a separate bowl combine flour, baking powder and salt. Add this dry mixture to the moist ingredients a little bit at a time. Add half n half and mix well.
- Spoon the batter into a 9 x 13-inch baking pan that has been buttered and dusted with a light coating of flour.
- Sprinkle the crumb topping over the batter. Be sure the topping completely covers the batter.
- Bake cake for 50 minutes, or until the edges just begin to turn light brown. Cool and slice into 8 pieces.

- Preheat your oven to 360°F and line a loaf tin with baking paper
- To make the streusel mixture combine all of the streusel ingredients in a bowl and mix well until combined into coarse breadcrumbs.
- Next, in a separate bowl, make the cinnamon layer. Simply mix all of the ingredients given above.
- Now it's time to make the batter. In a bowl, add the flour, sugar, baking powder, baking soda, and salt-whizz in a mixer to combine. Then add the butter and beat until you have a fine crumb.
- While keeping the mixer running, add the sour cream, then the milk, and one by one break the eggs into the mix, finish with the vanilla extract
- In your baking tin, add half of the batter and smooth into an even layer. Next, sprinkle evenly with the cinnamon mix. Top with another layer of batter and smooth until even. Finally, sprinkle the streusel mix over the entire top surface of the cake.
- Bake for 55 minutes. Try the toothpick test to ensure the cake is cooked in the center. Once baked, cool on a wire rack for around 50 minutes before serving in thick slices

Steps:
- Preheat oven to 350 degrees F. and spray a 9 x 13 inch pan with cooking spray.
- Prepare cake mix according to package directions. Bake for 15 minutes.
- While cake is baking, prepare crumb topping. Place butter, flour, cinnamon, and sugar into a mixing bowl, beat with an electic mixer or stand mixer until slightly crumbly, slowly adding vanilla.
