STARBUCK'S BRAN MUFFINS
Dense bran muffins with bits of apple, dried sour cherries and walnuts, similar to the ones at Starbucks

Steps:
- 1. Preheat oven to 400°F Line 24 muffin cups with muffin papers.
- 2. Stir flour, baking soda and salt in small bowl to blend.
- 3. Combine bran and dried fruit in another bowl; mix in 1 cup boiling water.
- 4. Beat butter in large bowl until creamy. Gradually beat in sugar, then honey. Beat in eggs 1 at a time.
- 5. Beat in buttermilk alternately with flour mixture in 3 additions each. Mix in bran mixture and walnuts.
- 6. Divide batter among lined muffin cups.
- 7. Bake muffins until tester inserted into center comes out clean, about 20 minutes. Turn muffins out onto racks and cool completely.

When my twin sister and I were in high school, these muffins were a staple in our home. I've made a few adjustments to the recipe, but it remains a winner.

Steps:
- Place oats and cereal in a bowl; cover with boiling water. Let stand for 5 minutes. In a large bowl, combine the flour, sugars, baking soda, and salt. In another bowl, combine the eggs, buttermilk, butter and oat mixture. Stir into dry ingredients just until moistened., Fill greased muffin cups two-thirds full. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

- Preheat oven to 400 degrees.
- Lightly spoon flour into dry measuring cups; level with a knife. Set aside 1 tablespoon sugar. Combine flour, remaining sugar, baking powder, salt, and baking soda in a large bowl; make a well in center of mixture.
- Combine rind, juice, oil, and egg in a small bowl, stirring well with a whisk. Add to flour mixture, stirring just until moist. Fold in cranberries and walnuts. Spoon batter into 16 muffin cups coated with cooking spray. Sprinkle evenly with reserved sugar. Bake at 400° for 15 minutes or until the muffins spring back when touched lightly in center. Run a knife or spatula around outer edge of each muffin cup. Carefully remove each muffin; place on a wire rack.
