1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1/2 teaspoon almond extract

Steps:

  • Press cookie dough onto an ungreased 12-in. pizza pan. Bake at 350° for 10-15 minutes or until golden brown. Cool on a wire rack., In a small bowl, beat the cream cheese, sugar and extract until smooth. Spread over crust. In center of tart, arrange berries in the shape of a star; add a berry border. For the crusts:
2 1/4 cups all-purpose flour, plus more for dusting
3/4 cup pecans
6 tablespoons granulated sugar
1/4 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into 1/2-inch pieces
1 large egg, beaten
For the pastry cream:
1 cup whole milk
2/3 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup plus 3 tablespoons buttermilk
3 large egg yolks
3 tablespoons cornstarch
1 pint raspberries
1 pint blueberries
Confectioners' sugar, for dusting

Steps:

  • Make the crusts: Pulse the flour, pecans, granulated sugar and salt in a food processor until the nuts are finely ground. Add the butter and pulse until the mixture looks like coarse meal. Drizzle in 6 tablespoons ice water and pulse until the dough comes together. Turn out onto a piece of plastic wrap and form into a disk; wrap and refrigerate until firm, about 1 hour.
  • Lightly flour a large sheet of parchment paper. Roll out the dough on the parchment into a 9-by-13-inch rectangle. Trim into an 8-by-12-inch rectangle (reserve the scraps). Cut into eight 3-by-4-inch rectangles. Separate the pieces slightly on the parchment, then use your fingers to crimp the edges. Slide the parchment onto a baking sheet. Roll out the scraps until 1/4 inch thick. Cut out 8 stars using a small floured star-shaped cookie cutter; arrange on the baking sheet around the crusts. Refrigerate until firm, about 20 minutes.
  • Preheat the oven to 375 degrees F. Poke holes in the crusts with a fork. Brush the stars and the edges of the crusts with the beaten egg. Bake until golden brown, about 25 minutes; remove to a rack to cool completely.
  • Make the pastry cream: Combine the milk, 1/3 cup granulated sugar and the vanilla in a saucepan and bring to a simmer over medium heat. Whisk 1/2 cup buttermilk, the egg yolks, cornstarch and the remaining 1/3 cup sugar in a bowl. Slowly pour the hot milk mixture into the egg mixture, whisking constantly. Pour the mixture back into the saucepan and cook, whisking, until thick and bubbling, about 3 minutes. Transfer to a bowl; stir in the remaining 3 tablespoons buttermilk. Lay plastic wrap on the surface and refrigerate 45 minutes.
  • Carefully transfer the crusts to a platter. Spread the pastry cream on the crusts, then top with the berries. Top each tart with a star. Dust with confectioners' sugar.

FINNISH STAR COOKIES (JOULUTORTTU)

A rich cream-cheese dough flecked with lemon zest is filled with sweet-tart raspberry preserves in these festive pinwheel cookies known as joulutorttu, which means Christmas tart in Finnish.

2 1/4 cups unbleached all-purpose flour, plus more for dusting
1/2 teaspoon baking powder
1/2 teaspoon plus a pinch of kosher salt
1/2 cup (1 stick) unsalted butter, room temperature
6 ounces cream cheese, room temperature
1 cup sugar
1 tablespoon grated lemon zest
2 large eggs
3/4 cup raspberry preserves

Steps:

  • Whisk together flour, baking powder, and 1/2 teaspoon salt in a medium bowl. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and cream cheese on medium speed until well combined, about 1 minute. Add sugar and lemon zest and continue to beat until fluffy, about 2 minutes. Add 1 egg and beat until combined. Beat in flour mixture on low speed until combined. Divide dough in half. Shape each half into a square, wrap in plastic, and refrigerate until firm, 1 to 2 hours.
  • Preheat oven to 325 degrees. Line two baking sheets with parchment paper.
  • Remove one-half of dough from the refrigerator. On a lightly floured sheet of parchment, roll out dough into a square about 1/8 inch thick. Cut out squares using a 3 1/2-inch square cutter, then carefully transfer to prepared baking sheets, spaced about 1 1/2 inches apart. If dough becomes too soft, transfer parchment with dough to a baking sheet and refrigerate until firm.
  • Place 1 teaspoon preserves in the center of each square. Using a small paring knife, cut 1 1/4-inch slits diagonally from each corner toward the filling. Fold every other tip over to cover filling, forming a pinwheel. Press lightly to seal. If dough becomes soft, refrigerate until firm.
  • Lightly beat remaining egg with remaining pinch of salt. Using a pastry brush, lightly brush tops of cookies with egg wash. Bake until edges are golden and cookies are slightly puffed, 15 to 20 minutes. Let cool on sheets 5 minutes, then transfer cookies to a wire rack to cool completely. Repeat with remaining dough.

2 (19 ounce) packages refrigerated sugar cookie dough
1 (14 ounce) can fat-free sweetened condensed milk
1/2 cup light sour cream
1/2-1 teaspoon lemon zest
1/3 cup lemon juice or 1/3 cup lime juice
1 cup blueberries
2 cups raspberries or 2 cups strawberries, halved
coarse sugar (plain or colored) (optional)

Steps:

  • Four hours before serving: Preheat oven to 375°F Generously grease the bottom and sides of a 9" or 11" round tart pan.
  • Using one package of cookie dough, flour/grease hands and pat dough onto bottom and up sides of tart pan.
  • Make decorative cookie stars: Roll out remaining dough on a floured surface; cut out star cookies.
  • Place on ungreased baking sheet, and sprinkle with coarse sugar.
  • Bake crust 12-15 minutes and cookies 3-4 minutes; cool.
  • Filling: Combine condensed milk, sour cream, lemon peel, and lemon juice; stir 3 minutes or until thick.
  • Cover and chill up to four hours.
  • Assemble tart: Loosen and remove sides of tart pan; leaving bottom of tart pan under the crust. You can use the star cookies as a border in the event the sides of your cookie tart break off.
  • Spread filling on the crust; top with berries and star cookies.

DRIED-FRUIT STAR-LATTICE TART

A lattice crust is easily altered to replicate a number of artisanal basketweave designs, such as this striking six-point star pattern. The filling is also out of the ordinary-a blend of dried, not fresh, fruits is poached in a fragrant spiced syrup.

Yield Makes one 11-inch tart

Number Of Ingredients 15

All-purpose flour, for dusting
Pâte Brisée (page 322; omit sugar)
4 cups water
3/4 cup Cognac or other brandy
1 cup sugar
1 vanilla bean, halved lengthwise and scraped
1 cinnamon stick
3 (1-inch) strips orange zest
5 whole cloves
1 1/2 cups dried apricots (11 ounces), preferably California
1 cup pitted prunes
3/4 cup dried cranberries
1 large egg yolk, for egg wash
2 tablespoons heavy cream, for egg wash
Créme fraîche, for serving

Steps:

  • On a lightly floured surface, roll disks of dough to 14-inch rounds. Place 1 round on a parchment-lined baking sheet; refrigerate or freeze until firm, 30 minutes. Fit other round into an 11-inch fluted tart pan. Trim dough flush with rim. Refrigerate or freeze until firm, 30 minutes.
  • Make the lattice: Using a ruler, cut chilled round into sixteen 1/2-inch-wide strips with a sharp knife or pastry wheel. Lay 6 strips on another parchment-lined rimmed baking sheet in parallel lines slightly longer than diameter of tart pan. Lay 6 more strips on top, almost perpendicular to first strips. Starting in center, weave 1 new strip diagonally through existing grid, under bottom layer of strips and over top layer. Push diagonal strip into corner of each square (where strips meet) to create a tight fit. Weave a second strip 1 inch away, this time over, then under. Repeat weaving strips across half the tart. (If dough strips become too soft, freeze until firm.) Return to center, and repeat with remaining strips to form a 6-point star pattern. Freeze until ready to use.
  • Bring the water, Cognac, sugar, vanilla seeds and pod, cinnamon, zest, and cloves to a boil in a medium saucepan, stirring until sugar dissolves. Add apricots, prunes, and cranberries; reduce heat, and simmer gently until fruit softens but has not broken down, about 20 minutes. Strain through a sieve into a measuring cup; reserve fruit and liquid separately. Let both cool. Discard vanilla pod, cinnamon stick, orange zest, and cloves. (If you have more than 2 cups liquid, simmer in a small saucepan until reduced; it's fine if you have slightly less than 2 cups.)
  • Spread cooled fruit mixture evenly in tart shell, and brush with 1/2 cup reserved cooking liquid. Combine egg yolk and cream; brush along top edge of tart. Carefully slide frozen lattice on top of tart, centering over filling, and press edges to seal. Trim excess dough. Brush top of lattice with egg wash. Refrigerate, uncovered, until firm, about 1 hour.
  • Preheat oven to 400°F. Transfer tart to a rimmed baking sheet. Bake 15 minutes. Reduce heat to 375°F, and bake until crust is golden brown and filling is bubbling, 40 minutes more. (If crust browns too quickly, tent with foil.) Brush tart with 1/2 cup more cooking liquid. Let cool on a wire rack. Unmold; serve with crème fraîche.
