1 cup all-purpose flour
1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees F.
  • Pour melted butter into a shallow 1 1/2 quart baking dish. In a mixing bowl combine flour, baking powder, salt, sugar and milk. Pour evenly over the butter. In a bowl combine berries, water and sugar. Spoon evenly over batter, but do not stir. Bake 40 to 45 minutes. Batter rises to become buttery top crust.

12 Tablespoons Butter (1 1/2 sticks, divided)
1 1/2 cups Sugar (plus more to sprinkle on top)
3 cups Blueberries
1 teaspoon Lemon Zest (grated)
1 1/2 cups Flour
2 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1 1/2 cups Whole Milk or Buttermilk

Steps:

  • Preheat oven to 350 degrees.
  • Place 4 Tablespoons Butter in 9 x 13 baking dish. Place in oven and let butter melt, watching carefully.
  • In a medium-size bowl, stir together blueberries, 1/4 cup of sugar and lemon zest. Set aside.
  • In a large bowl, stir together flour, baking powder, remaining 1 1/4 cup of sugar, and salt. In a microwave-safe bowl, melt remaining 8 Tablespoons of butter. Whisk in melted butter (let cool for several minutes before adding) and milk. Stir until smooth.
  • Remove baking dish from oven and pour batter into the pan.
  • Dollop blueberry mixture evenly over batter. Generously sprinkle with sugar.
  • Bake until golden brown and edges are crisp -- about 42-48 minutes.

1 cup (125 g) all-purpose flour
1½ teaspoons baking powder
½ teaspoon kosher salt
1 cup (238 g) milk
½ cup (1 stick / 113 g) unsalted butter, (melted)
2 cups fresh blueberries, (rinsed and dried)
½ cup (100 g) granulated sugar (*see notes)
2 tablespoons turbinado sugar

Steps:

  • Preheat the oven to 350°F.
  • In a medium bowl, combine sugar, flour, baking powder, salt, and milk. Slowly whisk in the melted butter.
  • Pour the batter into a 10-inch cast-iron skillet.
  • In a medium bowl, combine blueberries and sugar.
  • Add the blueberry mixture evenly over the top of the batter.
  • Bake for 40 minutes. Carefully remove from the oven.
  • Sprinkle the turbinado sugar over the top and RETURN to the oven; bake for 5-10 additional minutes. Cobbler is done when the edges are golden brown and the center doesn't jiggle. A toothpick inserted near the center should be removed with some crumbs and moist blueberry.

2 ½ cups fresh or frozen blueberries
1 teaspoon vanilla extract
½ lemon, juiced
1 cup white sugar, or to taste
½ teaspoon all-purpose flour
1 tablespoon butter, melted

4 teaspoons baking powder
6 tablespoons white sugar
5 tablespoons butter
1 cup milk

Steps:

  • Lightly grease an 8 inch square baking dish. Place the blueberries into the baking dish, and mix with vanilla and lemon juice. Sprinkle with 1 cup of sugar and 1/2 teaspoon of flour, then stir in the tablespoon of melted butter. Set aside.
  • In a medium bowl, stir together 1 3/4 cups of flour, baking powder, and 6 tablespoons sugar. Rub in the 5 tablespoons butter using your fingers, or cut in with a pastry blender until it is in small pieces. Make a well in the center, and quickly stir in the milk. Mix just until moistened. You should have a very thick batter, or very wet dough. You may need to add a splash more milk. Cover, and let batter rest for 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Spoon the batter over the blueberries, leaving only a few small holes for the berries to peek through. Mix together the cinnamon and 2 teaspoons sugar; sprinkle over the top.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown. A knife inserted into the topping should come out clean - of course there will be blueberry syrup on the knife. Let cool until just warm before serving. This can store in the refrigerator for 2 days.

4 teaspoons cornstarch
1 tablespoons lemon juice
1 3/4 cups flour

1 tablespoons baking powder
1/4 teaspoons salt
1 cups heavy cream, plus additional for brushing

Steps:

  • Preheat oven to 450°F. FILLING: Combine the blueberries, water, sugar, cornstarch and lemon juice in a large saucepan and bring to a boil over medium-high heat, stirring constantly. Transfer the mixture to an ungreased 1-1/2 quart shallow baking dish. BISCUITS: Whisk together the flour, sugar, baking powder and salt in a medium bowl. Beat the cream with an electric mixer just until it holds soft peaks. Spoon the cream into the dry ingredients and stir with a fork just until a dough begins to form. On a lightly floured surface, pat the dough out to 3/4-inch thickness and, with a 2 1/2-inch star-shaped cutter, cut out 6 stars. Gather the scraps together and pat out again, if necessary.
