STICKY BRAISED CHINESE CHICKEN WINGS



Sticky Braised Chinese Chicken Wings image

This sticky braised Chinese chicken wings recipe is super easy to make and requires only 30 minutes! The sticky sauce is sweet and savory and so addictive that you'll be licking your fingers after you're done!

1 pound chicken wings
1.5 tablespoons cooking oil
2 tablespoons sugar
1 tablespoon shaoxing wine (can substitute with dry sherry or sake)
2 tablespoons soy sauce
2 star anise
1 tablespoon water
Large pan or wok with lid

Steps:

  • Heat up the pan over medium heat. Add oil and sugar and mix with a spatula until all of the sugar looks "wet" with oil
  • Let cook over medium heat until the sugar starts melting into a brown liquid (this should take about 10 minutes). If there are still unmelted chunks of sugar, use a chopstick or fork to swirl the sugar around to help it melt
  • When all of the sugar is melted and an amber brown color, add the chicken wings and shake the pan a bit to make sure all of the bottoms of the wings are coated with the sugar sauce. Cook for one minute then flip the wings and cook for another minute
  • Add the shaoxing wine (Chinese cooking wine) and mix with the chicken using a spatula. Cook for 1 minute
  • Add the soy sauce, star anise, and water. Reduce heat a little bit and cook covered for 15 minutes, stirring the chicken every 5 minutes
  • Remove the lid and cook until the sauce has reduced and thickened, about 2 more minutes. Serve immediately!

16 whole chicken wings, flap segments removed and saved for stock
1/3 cup sake
1/3 cup soy sauce
4 tablespoons brown sugar (see Cook's Note)
3 tablespoons mirin
3 tablespoons oyster sauce
4 large thin slices fresh ginger
2 cloves star anise
1 dried hot chile
1 cinnamon stick
Shaved green onions, for garnish
Sesame seeds, for garnish

Steps:

  • Place a 14-inch nonstick saute pan over high heat. Add the chicken and dry-sear to lightly brown the chicken. Add the sake, soy sauce, 1/3 cup water, brown sugar, mirin, oyster sauce, ginger, star anise, dried chile and cinnamon stick and bring to a simmer. Cook, covered, about 12 minutes.
  • Uncover and simmer until the pan is almost dry, tossing frequently to coat the wings, 10 to 12 minutes. Skim off the fat if you like, and serve, garnishing with scallion shavings and sesame seeds. I like to emulsify the chicken fat into the sauce by turning up the heat at the last minute to boil the fat into the other liquids.

2 teaspoons sesame oil
1/4 cup soy sauce
1/2 cup Chinese wine or 1/2 cup dry sherry
2 star anise
1 cinnamon stick
1 tablespoon brown sugar
4 boneless skinless chicken breasts
1 bunch bok choy or 1 bunch chinese greens, trimmed and halved

Steps:

  • Place the ginger, sesame oil, soy sauce, cooking wine or sherry, star anise, cinnamon stick and sugar in a frying pan over high heat and bring to a boil.
  • Add the chicken and cook for 6-7 minutes on each side or until cooked through.
  • Add the greens to the pan and cook for 2 minutes or until tender.
  • Place chicken and greens on serving plates and spoon over pan juices as sauce.
  • Serve with steamed rice.

They're amazing, baked & delicious! TIP: I made them last night using a 4lbs bag of frozen wings, it worked great. We did one and a half recipe for the sauce, baked for about an hour, remove the extra liquid from the baking dish and boiled it to use as a dipping sauce while the wings were getting a little crispier on the outside. It was a hit!

3 1/2 lbs chicken wings
1/3 cup soy sauce
1 tablespoon brown sugar
1 tablespoon rice vinegar
2 tablespoons dry sherry
1 orange, juice of
2 in strip orange peel
1 star anise
1 teaspoon cornstarch
1/4 cup water
1 tablespoon chopped fresh ginger
chili-garlic sauce, to taste

Steps:

  • Preheat oven to 400°F.
  • Combine soy sauce, brown sugar, vinegar, sherry, orange juice & peel and star anise in a sauce pan. Bring to boil over medium heat.
  • Combine the cornstarch and water in a small bowl and stir until blended. Add to the boiling soy sauce mixture, stirring well. Boil for 1 more minute, stirring constantly.
  • Remove soy sauce mixture from the heat and stir in the chopped ginger and chili-garlic sauce.
  • Arrange the chicken wings in one layer in a large baking dish. Pour over the soy sauce mixture and stir to coat the wings evenly. Bake for 30-40 minutes, until tender and browned, basting occasionally. Serve the chicken wings hot or warm.

  • To make the Star Anise and Ginger Braised Chicken in your slow cooker, see the Slow Cooker Variation below. To make the Star Anise and Ginger Braised Chicken on your stovetop, heat the oil in a large saucepan. If desired, remove the skin from the chicken. Place the chicken in the pan, skin-side down, being careful not to crowd the pieces. (You may need to work in batches.) Cook until browned, about 4 minutes per side. Transfer to a plate and season lightly with salt.
  • Pour off all but 1 tablespoon of oil from the pan. Add the ginger, garlic, rice wine, stock or water, honey, star anise, and soy sauce to the pan and bring to a boil. Add the clementine juice and the chicken, reduce the heat to medium-low, cover, and simmer very gently for 15 minutes.
  • Then turn the chicken pieces and continue to simmer gently until cooked through, about 5 minutes more, depending on the size of the chicken pieces. Use a slotted spoon to transfer the chicken to a plate.
  • Skim any fat from the surface of the sauce. Take a sip of the sauce and adjust the seasoning, if necessary. Return the liquid to a simmer and reduce slightly, 2 to 3 minutes. (Be mindful that reducing it too much could cause the sauce to seem quite salty.)
