MEATBALL BREAD PUDDING
The ingredients in this dish are similar to the ones my mom uses to make meatballs--tomatoes, ground beef, cheese, and herbs bound together with eggs. A great way to use dried-out leftover bread.

Steps:
- Crumble the ground beef into a large skillet over medium heat. Add onions and garlic; cook and stir until evenly browned. Drain off excess fat. Stir in the red wine, tomatoes, oregano, red pepper flakes and sea salt. Bring to a boil, then reduce heat to low, and simmer for 20 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, whisk together the eggs, brown sugar and half-and-half. Place the bread cubes in a 2 quart casserole dish, or square baking pan. Pour in the egg mixture, and chicken stock, and stir in the ground beef mixture. The bread should be saturated. Sprinkle half of the Romano cheese over the top.
- Bake for 40 minutes in the preheated oven, until the top is golden and the center is set. Portion into individual bowls, and top each one with some of the remaining Romano cheese.

Steps:
- Combine the milk and anise in saucepan. heat to 180 degrees or until tiny bubbles form around edge of pan, stir frequently; do not boil. Remove from heat and cover and steep 20 mins. Strain milk through sieve into large bowl. Discard star anise. Add 1/2 cup sugar, ginger, cinnamon and eggs; stir with a whisk. Gently stir in bread and let stand 10 mins, stirring occassionally. Preheat oven to 350 Pour into 8 inch square baking dish coated w/spray. Sprinkle mixture evenly with 1 tbsp sugar. Bake for 35 mins or until done. Serve w/ice cream.

- If using sliced bread (as I did), remove crusts and butter the slices on one side. Cut each slice into two and place on a cookie sheet (or two sheets) with buttered side facing up. Bake at 180C for 10 -15 minutes till golden brown. I pulsed the peanuts and almonds, separately, in my mixer/ blender jar to just crush them. Otherwise chop them up into pieces.
- I used jaggery here as it seems similar to pilonchillo. I also like the flavor that jaggery lends to sweet dishes.
- Put the jaggery and water in a pan, stir, and bring to a boil. Turn down the heat, add the cinnamon, cloves and star anise and simmer for about 20 minutes, uncovered. Turn off the heat and allow to cool. The flavours of the spices would have infused into the syrup. Remove the whole spices.
- Grease a deep pie dish with 1/2 tbsp butter (I used my 6u201d by 6u201d by 2 1/2u201ccake tin).

- Mix the eggs: Add the eggs to half a cup of milk (you will use the rest of the milk later). Mix well, and strain to remove undissolved egg parts. Set aside.
- Cook the bread: In a pot, mix the remaining milk with vanilla, cinnamon, ginger, cloves, salt, and sugar. Heat this mixture over low heat, and when it breaks the boil add the bread and raisins.
