Provided by Martha Stewart

Categories     Pancake Recipes

Time 20m

Number Of Ingredients 9

1 cup all-purpose flour, (spooned and leveled)
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted, or vegetable oil
1 large egg
1 tablespoon vegetable oil
Assorted toppings, such as butter, maple syrup, confectioners' sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup

Steps:

  • Preheat oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
  • In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).
  • Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.
  • For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).
  • Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You'll have 12 to 15 pancakes.) Serve warm, with desired toppings.
  • BUTTERMILK: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with low-fat buttermilk.
  • YOGURT: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.
  • WHOLE-GRAIN WITH YOGURT: In step 1, replace the all-purpose flour with 1/2 cup whole-wheat flour, 1/4 cup each cornmeal and wheat germ, and 1/2 teaspoon baking soda. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.

CLASSIC PANCAKES

Classic Pancakes image

This classic pancake recipe has appeared in every Betty Crocker cookbook since 1950. Pancakes are a breakfast tradition and are so easy to make. Our pancakes from scratch calls for regular milk, but we also give a variation to use buttermilk. Top either version with maple syrup or fresh fruit. Be sure to try our new twist, made with cornmeal, they're hearty and have a delicious buttery syrup on top.

Categories     Breakfast

Time 15m

Yield 9

Number Of Ingredients 7

1 egg
1 cup Gold Medal™ all-purpose flour or whole wheat flour
1 tablespoon sugar
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
2 tablespoons vegetable oil or melted butter

Steps:

  • In medium bowl, beat egg with wire whisk until fluffy. Stir in remaining ingredients just until flour is moistened (batter will be slightly lumpy); do not overmix or pancakes will be tough. For thinner pancakes, stir in additional 1 to 2 tablespoons milk.
  • Heat griddle or skillet over medium-high heat (375°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush with vegetable oil if necessary (or spray with cooking spray before heating).
  • For each pancake, pour slightly less than 1/4 cup batter onto griddle. Cook 2 to 3 minutes or until bubbly on top and dry around edges. Turn; cook other side until golden brown.

PANCAKES FOR TWO, SMALL BATCH PANCAKES

Pancakes for Two, small batch pancakes image

Pancakes for two. A small batch of pancakes for one or two people. Perfect, buttermilk pancakes recipe that makes just 6 pancakes.

Provided by Christina Lane

Categories     Breakfast

Time 15m

Number Of Ingredients 10

1 cup all-purpose flour
2 teaspoons baking powder
2 tablespoons granulated sugar
1 cup buttermilk
1 large egg, beaten
2 tablespoons unsalted butter, melted, plus extra for the skillet
1/2 teaspoon vanilla extract
maple syrup, for serving
salted butter, for serving
fresh blueberries, for serving

Steps:

  • In a small bowl, whisk together the flour, baking powder, and sugar. In a large glass measuring cup, whisk together the buttermilk, egg, 2 tablespoons of the melted butter, and the vanilla. Stir the wet ingredients into the dry ingredients. Stir just until no dry pockets of flour remain, but don't worry about lumps in your batter. Over-mixing will prevent tender, fluffy pancakes. Meanwhile, melt the extra butter in your skillet or griddle over medium heat. Using a 1/4-cup measure, scoop out batter onto the preheated the skillet. Cook until bubbles appear across the entire surface, and then flip to cook the second side until golden brown. Repeat with all remaining batter. Serve with maple syrup, extra butter and fresh blueberries.

STANDARD PANCAKE

standard pancake image

my recipe is very simple recipe to make pancakes..therefore if you follow the recipe then you will have shown me you can cook with a simple recipe. y

Provided by coolchick9898

Time 15m

Yield Serves 8

Number Of Ingredients 4

4oz (100g) plain flour.
Half a Pint (250ml) of milk.
1 Standard Egg. (Size 2)
Pinch of Salt (half teaspoon)

Steps:

  • Making the Pancake Batter
  • 1.Sieve the flour and salt into a mixing bowl.
  • Make a small hollow in the center of the mixture and drop in the egg (not the shell).
  • 2.Begin to mix while gradually adding about one quarter of the milk. Continue to mix well until bubbles become visible in the mixture.
  • 3.Gradually pour in the remaining milk while continuing to mix.
  • (if it's a bit too thick - then add a little water.)
  • 4.Pour batter into a jug for easier pouring into pan.
  • Making the Pancakes
  • 1.Heat the frying pan, and place a small piece of lard/fat in the Center. Allow this to melt and spread over the pan.
  • 2.Get the pan nice & hot and when the lard begins to smoke slightly, stir and pour in some of the batter - approx 30ml or 2 tablespoons, or enough to thinly cover the bottom of the pan. (tilt the pan to help the batter spread evenly)
  • 3.Cook until nicely golden brown on the bottom. (shouldn't take too long)
  • 4.And now the only tricky bit of the whole operation - toss / flip the pancake to within an inch of the kitchen ceiling and position the pan to perfectly catch the pancake on the way down - cooked side up, easy. (you could of course just turn it over with a big plastic spoon, but where's the fun in that? ;-)
  • 5.Cook the other side until nicely golden brown.
  • 6.Serve immediately with sugar, syrup, lemon or orange poured on top.
  • 7.err.... eat the thing, anyway you want. (tip - when frying never turn the pancake more than once.)
  • Easy pancake recipe - Topping ideas
  • Strawberries
  • Lemon
  • Orange Juice
  • Honey, Maple Syrup, Golden Syrup
  • Grated Cheese (grilled)
  • Sugar
  • Raspberries
  • Chocolate Sauce, Blueberry sauce - plus more or less anything you care to try.
  • and then enjoy and add any topping you want
