Stuffed Endive with Herbed Goat Cheese image

These bite-sized vegetable appetizers are big on flavor and absolutely gorgeous on a tabletop. As a vessel for the creamy herbed goat cheese, Belgian endive lettuce has a crisp texture and a sweet flavor with slightly bitter undertones. Topped with this herby goat cheese mixture, the lettuce becomes a delicious delicacy. The goat cheese stuffing, made from a creamy combination of crumbled goat cheese, softened cream cheese, lemon zest, chives, parsley, and tarragon, is full of sophisticated flavor. Not a fan of tarragon? You can sub in whichever herbs you like, or even add a little bit of spice for a deeply Southern twist. When choosing a goat cheese, opt for a local brand of full-fat cheese-with goat cheese, it is easy to taste the quality of the brand. 1 ounce goat cheese, crumbled (about 1/4 cup)
2 ounces cream cheese, softened (about 1/4 cup)
1 teaspoon lemon zest plus 1 Tbsp. fresh juice (from 1 lemon)
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 1/2 tablespoons thinly sliced fresh chives, divided
1 1/2 tablespoons finely chopped fresh flat-leaf parsley, divided
2 1/2 teaspoons finely chopped fresh tarragon, divided
24 green Belgian endive leaves (about 2 heads)

Steps:

  • Stir together goat cheese, cream cheese, zest, juice, salt, pepper, 2 tablespoons of the chives, 1 tablespoon of the parsley, and 2 teaspoons of the tarragon in a bowl. Spoon mixture evenly into bottom halves of endive leaves.
  • Combine remaining 1/2 tablespoon each chives and parsley and 1/2 teaspoon tarragon. Sprinkle evenly over stuffed leaves. Serve immediately.

This warm salad is a deliciously different way to serve lettuce. Unlike other wilted versions, this one is not sweet. Vinegar and bacon give it old-fashioned savory goodness.

12 bacon strips, diced
3 bunches curly endive
4 quarts water
2-1/4 teaspoons salt, divided
2 to 3 tablespoons cider vinegar
3 tablespoons finely chopped onion
1/4 teaspoon pepper

Steps:

  • Cook bacon until crisp; remove with a slotted spoon to paper towels to drain. Reserve 3 tablespoons drippings. Cut or tear endive from center stalk; discard stalks. , In a large saucepan or Dutch oven, bring water and 1-1/2 teaspoons salt to a boil. Add endive; cover and cook for 3 minutes or until wilted. Drain. Stir in the bacon, vinegar, onion, pepper, reserved drippings and remaining salt.

My mom used to put cheese in all our stamppotten, this is the one i still make with cheese as well. If you can get rookworst with this would be really nice, but i think any type of sausage or a meatball tastes great with this dish. I used the fit food cookbook for some of the measurements, i usually cook this by intuition... (And i usually add some baked bacon cubes as well, add them on the plate or they will go soft when you reheat)

1 kg potato
3 pinches salt & pepper (freshly ground)
15 g butter
100 ml milk
450 -500 g curly endive lettuce
250 g gouda cheese, in small cubes

Steps:

  • Peel potatoes, cut them in pieces and cook in a little water for ca. 20 minutes.
  • Drain excess water and add all the other ingredients.
  • Mash and stir so you get all the stuff from the corners mixed in as well.
