This recipe is as good as any classic ham and egg casserole dish. From start to finish, it takes about 1 hour - there's no overnight soak! Delicious, even for the picky eater. Also, a nice way to use up leftover vegetables and ham.

5 slices bread, cubed
2 tablespoons butter
½ cup sliced fresh mushrooms
¼ cup diced onion
¼ cup diced green bell pepper
¼ cup chopped ham
7 eggs
½ cup 2% milk
2 teaspoons mustard
2 teaspoons Worcestershire sauce
½ teaspoon salt
½ teaspoon ground black pepper
1 dash hot pepper sauce (such as Tabasco®), or to taste
1 cup shredded Mexican cheese blend
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spread bread cubes in a 8x12-inch casserole dish.
  • Melt butter in a large skillet over medium heat. Add mushrooms, onion, and green pepper; cook and stir until starting to soften, about 5 minutes. Stir in ham until heated through, 2 to 3 minutes. Remove from heat.
  • Whisk eggs and milk together in a separate bowl; mix in mustard, Worcestershire sauce, salt, pepper, and hot sauce. Stir in mushroom-ham mixture and cheeses. Pour into the casserole dish. Stir well to moisten the bread cubes. Cover baking dish with foil.
  • Bake in the preheated oven until eggs are set, about 25 minutes. Uncover and continue baking until top starts to brown, about 5 minutes more.

1 lb pork sausage or 2 cups cubed cooked ham
6 cups cubed bread (French bread or a chewy, rustic white bread is good)
1/4 lb medium cheddar, shredded
1/4 lb swiss cheese, shredded
6 eggs
2 cups milk
1 teaspoon salt
1/8 teaspoon pepper
3/4 teaspoon dry mustard
1/4 teaspoon Worcestershire sauce

Steps:

  • Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
  • Place bread cubes in a lightly greased 9" X 13" baking pan.
  • Sprinkle bread evenly with cheese, and top with sausage (or ham).
  • Whisk together eggs, milk, salt, pepper, dry mustard and Worcestershire sauce and pour evenly over sausage mixture.
  • Cover and chill casserole for 8 hours (may be frozen at this point, and thawed before cooking).
  • Let stand at room temperature 30 minutes.
  • Bake at 350 degrees for 45-50 minutes, or until set.
  • Let stand 5 minutes before serving.

12 large Eggs
1 cup Milk
3 cups Crusty Bread (Cut into pieces)
2 teaspoon Oil
200 grams Mushrooms (Cut into 4 pieces)
1 Red Bell Pepper (Cut in to julliens)
100 grams Cherry Tomatoes (Cut in to half)
2 cups Spinach
1/2 cup Green Onions
1 teaspoon Italian Seasoning
1/2 teaspoon Chilli flakes ((optional))
Salt and Pepper
1 cup Cheddar Cheese

Steps:

  • Pre-heat oven to 180 Celcius.
  • Start with heating oil in a pan. Add Mushroom. Cook 5-6 minutes until the mushrooms start to soften.
  • Then stir in Pepper and Tomatoes. Cook for 1-2 minutes.
  • Season with salt and pepper. Add Chopped Spinach. Mix well. And cook for another 1 minutes. Keep aside and let it cool.
  • In a bowl whisk eggs with milk. Season with salt and pepper.
  • Stir in Chopped Spring Onion and Cooled Vegetable mix. Add the Italian Seasoning and chilli flakes. Mix well.
  • Take an 8-inch baking dish. Arrange broken bread pieces at the bottom.
  • Pour in the egg and vegetable mixture. Distribute it evenly.
  • Sprinkle Shredded cheese on top.
  • If you are doing the prep the night before, then tightly cover the pan with aluminium foil and keep in the refrigerator. OR if baking on the same day then skips to the next step.
  • Bake in the preheated oven at 180 degrees Celcius for 35-40 minutes.
  • Towards the end of the baking time, you would see the mixture would have set and start to leave the edges.
  • Sprinkle with more spring onion while serving.

3/4 cup chopped roasted red pepper
1 1/2 teaspoons salt
1 teaspoon ground mustard
1/2 teaspoon garlic powder
12 ounce loaf french bread

Steps:

  • Set out a large mixing bowl and a 9X13 inch (3 quart) baking dish. Grease the baking dish. Chop all necessary ingredients.
  • In the mixing bowl, add the eggs, milk, salt, ground mustard, and garlic powder. Whisk well to break up all the yolks. Then stir in the cheeses, ham, scallions, and roasted red pepper.
  • Tear the bread loaf into 1-2 inch chunks and place them in the baking dish.
  • Pour the egg mixture over the top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed. Cover and chill until ready to bake.
  • Let the strata recipe rest for at least one hour, so the bread soaks up all the eggs. Preheat the oven to 350 degrees F. (This is a fabulous make-ahead overnight recipe, so you can also preheat the oven in the morning.)
  • Bake, uncovered, for 50-60 minutes, until the top is golden-brown and puffy in the center. Insert a sharp knife into the center to check that the eggs are set. If not, bake another 5-10 minutes. Then cool for 5 minutes before cutting. Serve warm!

Butter, for greasing and to dot the top
1/4 cup EVOO
2 to 3 cloves garlic, thinly sliced
2 cubanelle peppers
1 large red sweet pepper
1 red onion, chopped
1 chile pepper, Fresno, jalapeno or Italian cherry, thinly sliced or finely chopped
1 pint cherry tomatoes
Salt and pepper

8 eggs
1 pint cream or half-and-half
1 1/2 cups grated Parmigiano-Reggiano
1/4 cup fresh flat leaf parsley, chopped
Small handful fresh basil leaves, torn or sliced
6 cups chopped or torn stale bread, white or peasant-style

Steps:

  • Grease a casserole dish with some butter, set aside.
  • Heat a large skillet over medium-high heat with the EVOO. Add the garlic, cubanelles, sweet peppers, onions and chiles, then stir. Cook to tender-crisp, 5 minutes. Add the tomatoes, and season with salt and pepper. Remove from the heat and cool.
  • Whisk together the eggs, cream, half of the cheese, the parsley, basil and some salt and pepper.
  • Arrange the bread and cooled vegetables in the casserole dish, it will mound up a bit. Pour the eggs over top of the casserole and top with the remaining cheese and a few dots of butter. Cover and chill overnight or a couple of days ahead.
  • To serve, bring the casserole to room temperature. Then bake at 375 degrees F until cooked through, 1 hour to 1 hour 15 minutes.

Steps:

  • Butter a 9 x 13 x 2 inch casserole dish.
