- Heat medium soup pot over medium-high heat. Add the olive oil and sausage and brown. Add veggies, bay leaf and beans. Season with salt and pepper. Cook mixture 5 minutes to begin to soften the vegetables. Add rabe and wilt. Add stock and cover pot. Raise heat and bring soup to a boil. Reduce heat to simmer and cook 15 minutes. Adjust seasonings and serve soup with grated cheese, for topping.
CREAMY BROCCOLI-WHITE BEAN SOUP

- Steam broccoli florets and stems until tenderand bright green, about 3 minutes. Let cool slightly.Reserve 1/2 cup florets for garnish.
- Heat oil in a medium pot over medium heat. Saute onion and garlic until translucent, about 6 minutes.Add beans and stock and bring mixture to a simmer.Remove from heat and add broccoli; puree in batches in a blender until smooth. Season to taste with salt and pepper. Garnish each bowl with broccoli florets, toasted pine nuts, and shaved Parmesan.

- Place a heavy bottomed pot over medium-high heat. Add 2 to 3 tablespoons of olive oil and then toss in the onion. Season with salt and pepper and cook for 3 to 5 minutes, or until just translucent. Add the broccoli and again season with salt and pepper.
- Pour the chicken stock over the broccoli and bring up to a boil and then reduce to a simmer. Cook for 8 to 10 minutes, or until the broccoli is fork tender.
- Let cool slightly and then transfer, working in batches, to a blender. Cover the blender with a towel to ensure it doesn't splatter, and puree until smooth. Taste and adjust seasoning.
- Place another heavy bottomed pot over medium high heat and add 1 to 2 tablespoons of olive oil. Add the sausage and brown on all sides, about 8 to 10 minutes.
- When almost completely browned, add the kale. Season with salt and pepper and cook for 3 to 4 minutes. Add the beans and cook for another 1 to 2 minutes.
- Pour the broccoli soup in the sausage and kale and stir to combine. Let cook for one to two more minutes to let the flavors meld. Taste and adjust the seasoning, then serve while hot.

ITALIAN WHITE BEAN AND SAUSAGE STEW
This comforting and substantial white bean and sausage stew is a soup that eats like a meal! Browning the sausage in a dry pan creates a beautiful fond that adds rich flavor. - Soak beans in cold water, 8 hours to overnight.
- Drain beans and set aside.
- Make a cut down the center of each sausage and peel off the casing. Transfer sausage into a dry soup pot over medium-high heat. Brown sausage, while breaking it up into small pieces with a wooden spoon, 5 to 7 minutes. Cook and stir until juices start to caramelize and stick to the bottom of the pan, creating a fond, 3 to 5 minutes.
- Add onion and stir to coat in the rendered sausage fat. Cook until onion starts to turn translucent, about 5 minutes. Add white wine to deglaze the pot. Add black pepper, red pepper flakes, bay leaf, and water.
- Add drained beans, increase heat to high, and bring to a boil. Once boiling, reduce heat to medium-low and simmer for 30 minutes. Add salt and continue to simmer until beans are tender, about 30 more minutes. Taste beans to be certain they are perfectly cooked.
- Smash about 1/4 of the beans with a potato masher to give the stew a creamy texture if desired. Stir in chopped kale, increase heat to medium, and cook until tender, 10 to 15 minutes. Taste and adjust salt.
- Ladle hot soup into bowls, drizzle with olive oil, and sprinkle with Parmigiano-Reggiano cheese and a pinch of red pepper flakes.

- In a large Dutch oven or pot, heat oil over medium. Add onions and garlic; season with salt and pepper. Cook, stirring frequently, until onions have softened, 8 to 10 minutes. Add mushrooms; cook, stirring occasionally, until mushrooms begin to release their liquid, 2 to 4 minutes. Add broccoli rabe; cook until wilted, 2 to 3 minutes.
- Add broth and 2 cups water; season with salt and pepper. Bring to a boil, and reduce heat to medium-low. Cook, stirring occasionally, until broccoli rabe is tender, 10 to 15 minutes. Add beans and parsley; simmer until warmed through, about 5 minutes.
PASTA WITH SAUSAGE, BROCCOLI RABE AND WHITE BEANS

- Bring a large pot of well-salted water to the boil.
- Cut off and discard the lower part of the broccoli rabe stems, leaving the broccoli about 8 inches long. Remove any large tough leaves. If the stems are very thick, you can peel the lower part with a vegetable peeler. Removing the peel takes out some of the bitterness. Cut the stems into roughly 2-inch lengths. Wash the broccoli and set it aside to dry in a salad spinner or colander.
- Remove the casings from the sausage and crumble it. In a large skillet heat 1 tablespoon of olive oil over medium-high heat. Add the sausage meat and cook until the sausage is no longer pink, about 7 - 10 minutes. When the sausage is brown and just cooked through, remove it with a slotted spoon onto a plate and set aside.
- If there's fat in the pan, pour it out and add a couple of tablespoons of olive oil. Add the garlic, pepper flakes and beans and cook until the garlic is fragrant, about 2 to 3 minutes.
- Add the pasta to the boiling water, stir well and cook, stirring occasionally, until al dente, according to the package directions.
- In the skillet with the garlic, add the broccoli rabe and toss it until it begins to wilt. Cover the pan and steam the broccoli until wilted and bright green, about 4 minutes. Taste and season lightly with salt and pepper. (if the broccoli is getting too dry and starting to brown, add a few tablespoons of the pasta water).
- When the pasta is ready, drain it, but reserve about a cup of the cooking water. Add the pasta to the broccoli mixture and add back the sausage and about a 1/2 cup of grated cheese. Stir and toss well over low heat to combine, adjusting the consistency by adding some of the cooking water, a little at a time, as needed.
- Divide the pasta among bowls, top each portion with a sprinkle of cheese and a little drizzle of your best olive oil.
