THE CLASSIC STEAK AND KIDNEY PIE



The Classic Steak and Kidney Pie image

This is Gary Rhodes recipe for a great steak and kidney pie, which also allows you the bonus of making the filling the day before you need it. Cover it and bake the following day for 45 minutes to 1 hour and dinner is ready!

1 tablespoon beef drippings or 1 tablespoon cooking oil
1 1/2 lbs chuck steaks, cut into 1 inch dice
1/2 lb ox kidney (or lamb's, trimmed and diced)
12 ounces puff pastry
2 onions, chopped
3 carrots, peeled and cut into rough dice (5/8 inch)
butter
4 large flat mushrooms, cut into thick slices
2 tablespoons flour
1 teaspoon tomato puree
1 bay leaf
1 pint veal stock (or water and stock cube or granules) or 1 pint beef stock (or water and stock cube or granules)
Worcestershire sauce
salt and pepper
1 egg, beaten, for glazing

Steps:

  • Heat a large frying pan with a little of the dripping or oil. Season the diced beef with salt and pepper. Fry in the pan until well coloured and completely sealed. Life out the meat and transfer to a large saucepan. Add a touch more oil, if necessary, to the frying pan. Season the kidneys and also fry quickly to seal and colour in the hot pan. Also transfer to the saucepan.
  • Melt a knob of butter in the pan and cook the onions and carrots in the melted butter for 2 - 3 minutes. They will lift any flavours left from the meats. Put into the saucepan with the meat. Fry the mushroom slices in a little more butter, just turning in the pan for a minute or two; keep to one side.
  • Place the saucepan on medium heat, stirring in the flour, and allow it to cook for 2 to 3 minutes. Add the tomato puree, bay leaf and mushrooms. Pour in the stock and bring to a simmer, skimming off any impurities. The meat should just be covered with the stock; if not, top with a little more stock or water. Simmer gently, partially covered, for 1 1/2 to 2 hours. During the cooking time it may need to be skimmed several times.
  • After 1 1/2 hours, check the meat for tenderness. If not quite soft enough, cook for the additional 30 minutes. If the meat is cooking gently, it will not need to be topped up with any additional stock or water. The sauce will have reduced, thickening it's consistency and increasing it's flavour.
  • Taste for seasoning, adding a dash or two of Worcestershire Sauce to the mixture. Transfer to a 2 pint pie dish and allow to cool to lukewarm.
  • Preheat the oven to 220°C/425°F.
  • Roll the pastry 1/4-inch thick. Cut a strip of pastry to sit around the rim of the dish. This will help the top to stay on. Brush the rim of the pie dish with some beaten egg and apply the strip. Brush again with egg. Making sure the pastry top is bigger than the dish, sit it on top. Push down around the sides, trim and crimp for a neat finish. Brush completely with egg wash and place in the preheated oven. Bake for 30 to 40 minutes until golden brown.

3 tbsp sunflower oil
1kg braising steak, diced
2 onions, roughly chopped
3 tbsp plain flour
1 tbsp tomato ketchup
2 beef stock cubes mixed with 600ml boiling water
375g sheet of ready-rolled puff pastry
1 egg yolk, beaten

Steps:

  • To make the filling, heat the oven to 160C/140C fan/gas 3. Heat half the oil in a large casserole dish, brown the meat really well in batches, then set aside. Add the onions adding a drizzle more oil, then cook on a low heat for 5 mins until coloured.
  • Scatter over the flour, stirring until the flour turns brown. Tip the meat and any juices back into the pan along with the ketchup and give it all a good stir. Pour over the stock, season, and bring to a simmer then cover with a lid and put in the oven for about 2 hrs, until the meat is tender. The filling can be made up to three days ahead and chilled or frozen for up to three months.
  • To make the pie, heat the oven to 220C/200C fan/gas 7. Tip the filling into a 24-26cm rimmed pie dish and brush the rim of the dish with some yolk. Unravel the pastry, drape over the dish and use a knife to trim and press the edges against the side of the dish. Re-roll your trimmings to make a decoration if you like. Brush the pie heavily with egg yolk. Make a few little slits in the centre of the pie and bake for 40 mins until golden. Leave to stand for a few minutes before serving.

Beef Steak Pie is a wonderful, mostly forgotten old recipe that needs to be brought back to life! It is a rich, meaty steak and mushroom pie recipe that gives you a taste of history and is super comforting for cold weather days!

1 1/4 cups unbleached all-purpose flour (plus extra for the work surface)
1/2 teaspoon table salt
3 Tablespoons vegetable shortening
5 Tablespoons butter (cut into 1/4-inch pieces and chilled)
4-6 Tablespoons ice water
2 lbs. chuck steak (cut into 1/2- to 1-inch cubes)
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
2 Tablespoons olive oil
1 onion (chopped)
3 cloves garlic (minced)
1 celery rib (chopped)
3-4 carrots (peeled and chopped into bite-size chunks)
1 yukon gold potato (unpeeled, washed and diced)
8 ounces button mushrooms (sliced)
2 Tablespoons fresh rosemary (chopped)
1 teaspoon dried oregano
1 teaspoon dried thyme
3 cups beef broth
1/3 cup flour
1 egg (beaten)

Steps:

  • Prepare pie crust by stirring together the flour and salt. Using a pastry cutter or a food processor, cut the shortening and butter into the flour until the mixture resembles coarse crumbs.
  • Sprinkle 2 tablespoons of the ice water over the flour mixture and gently stir it in using a fork, then repeat with the remaining water, adding 2 tablespoons at a time, just until the dough starts to come together. Use your hands to press the dough into a ball, then flatten into a disc and wrap tightly in plastic wrap and refrigerate for at least 1 hour.
  • Season the meat with the salt and pepper. In a large skillet or dutch oven over medium-high heat, add the oil. When the oil is hot, add the seasoned meat, working in batches if necessary, and searing until nicely browned on all sides, about 8 to 10 minutes. Remove from skillet and set aside.
  • Reduce the heat to medium and add another tablespoon of oil if the skillet is looking dry, then add the onions and garlic and sauté for 2 minutes.
  • Add the carrots, celery and potato and cook for another 6 to 8 minutes, until the vegetables are starting to soften a bit and the onions look translucent. Add the mushrooms and continue to cook 2-3 minutes more.
  • Add the chopped rosemary, thyme, and oregano and cook for another 30 seconds, then sprinkle the flour over the vegetables and stir to coat everything evenly. Cook for another 2-3 minutes.
  • Stir in the beef broth until flour is completely dissolved, then add the seared beef back to the vegetables and gravy. Cover the skillet or dutch oven with a lid and reduce the heat to low. Simmer gently for 1 1/2-2 hours or until the meat is tender, stirring occasionally. Allow the chilled pie crust dough to sit on the counter for 10 minutes before rolling it out to assemble the pie.
  • Pour the beef stew filling into a deep pie dish until 3/4 full. Any remaining stew can be used to make individual size pies or eaten plain.
  • Roll out the pie crust on a floured surface, then transfer it to cover the beef filling, making sure there is some overhand so the crust doesn't shrink entirely away from the side of the pie dish while baking.
  • Decorate the pie with leaves cut from scraps of pie crust, if desired and brush the entire crust with the beaten egg. Cut slits in the top of the pie to allow steam to escape, then bake for 25 to 30 minutes in a 400 degree oven until the filling is bubbling and the crust is golden brown.
  • Remove from the oven and allow to cool for 30 minutes before serving.

3 c milk
1-1/2 c flour
1 stick unsalted butter, softened
1/2 c chopped pecans
3 Tbsp granulated sugar
1 pkg (8 oz) cream cheese, softened
1 c confectioners' sugar
1-1/2 c frozen whipped topping (such as cool whip), thawed

Steps:

  • Heat oven to 350. Whisk together chocolate pudding mix and milk for 2 minutes. or until thickened. Cover with plastic wrap; refrigerate. Using your hands or a pastry blender, mix together flour, butter, pecans and granulated sugar until well combined and crumbly. Press into bottom and sides of a 9-inch deep dish pie plate. Bake crust at 350 for 18 minutes, until very lightly browned. Remove to a wire rack and cool completely. Beat together cream cheese and confectioners' sugar on medium-high speed until completely smooth. Spread cream cheese mixture evenly over cooled crust. Top with chocolate pudding, then spread whipped topping over the pudding. Chill for at least 1 hour or until set.

1 cup corn kernels, frozen, canned or roasted
1 cup salsa, homemade or store-bought
1 (4.5-ounce) can Old El Paso™ chopped green chiles, drained
2 teaspoons Old El Paso™ taco seasoning mix
1 (10-ounce) can Old El Paso™ mild enchilada sauce, divided
4 9-inch flour tortillas
2 cups shredded Mexican blend cheese, divided
1 avocado, halved, seeded, peeled and diced, for serving
1 Roma tomato, diced, for serving
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat and remove from heat. Stir in black beans, corn, salsa, green chiles, taco seasoning and enchilada sauce, reserving 1/2 cup. Lightly coat the inside of a slow cooker with nonstick spray. Place 1 tortilla on the bottom of the slow cooker. Spread 1/3 ground beef mixture evenly over the top; sprinkle with 1/2 cup cheese. Repeat with 2 more layers; top with remaining tortilla, enchilada sauce, and cheese. Cover and cook on low heat for 3-4 hours or high heat for 2-3 hours. 3 (9 inch) unbaked pie crusts
4 eggs
2 cups white sugar
½ cup butter, melted
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 cup heavy cream
1 ½ cups brown sugar
1 cup heavy cream
½ cup white sugar
2 tablespoons butter at room temperature
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place the pie crusts in 3 pie pans, and set aside.
  • Beat together the eggs, sugar, melted butter, flour, and vanilla extract in a bowl until smooth, and stir in 1 cup of cream. Pour the mixture in equal amounts into the pie crusts.
  • Bake in the preheated oven until the filling has set, about 35 minutes. Let the pies cool, and trim off the excess pie crust down to the top of the filling.
  • Place the brown sugar, 1 cup of cream, and 1/2 cup of sugar in a heavy saucepan over medium-low heat, bring to a boil, and cook, stirring constantly to prevent burning, until a candy thermometer reads 140 degrees F/60 degrees C, or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Remove from the heat, and beat the mixture with a wooden spoon until thickened and cool. Stir in the butter and vanilla extract, and continue beating until the butter is incorporated, about 5 minutes. The icing should be thin and smooth, like a glaze.
  • Spread a thin layer of the caramel glaze on top of each pie, and firmly stack the pies together. Glaze the edges of the stacked pie.

KINDER COOKIE PIE!

A giant Kinder cookie pie with a chocolate chip cookie dough, white chocolate hazelnut filling with kinder bueno and chocolate!

200 g Unsalted Butter
225 g Light Brown Soft Sugar
100 g White Granulated Sugar
1 Medium Egg
1 Egg yolk
1 tsp Vanilla ((optional!))
425 g Plain Flour
2 tbsp Cornflour
1.5 tsp Bicarbonate of Soda
1/2 tsp Sea Salt
400 g Chocolate Chips ((I used Milk) )
750 g White Chocolate Hazelnut Spread
150 g Kinder Chocolate/Kinder Bueno

Steps:

  • Add the unsalted butter, light brown soft sugar and white granulatted sugar to a bowl and beat together until creamy - I use my stand mixer with the beater attachment.
  • Add in the egg, egg yolk, and vanilla extract and beat again.
  • Add in the plain flour, cornflour, bicarbonate of soda, and salt and beat until a thick cookie dough is formed!
  • Add in the chocolate chips and beat the cookie dough again until distributed well!
  • Split the cookie dough into three equal portions (about 475g each).
  • Line the bottom of a 8" springform cake tin (at least 2.75" in depth).
  • Press the first third of cookie dough onto the bottom of the cake tin.
  • Press the second third of cookie dough around the sides of the cake tin evenly.
  • Melt the white chocolate hazelnut spread for 20 seconds in the microave to loosen slightly or mix in a bowl briefly to loosen. Pour into the cake tin inside the cookie dough case!
  • Press the kinder chocolate/kinder bueno into the spread. Freeze the pie at this stage for an hour.
  • Once frozen, cover the top of the Kinder Cookie Pie with the final third of cookie dough, making sure to seal it well!
  • Freeze the Kinder Cookie Pie for another hour whilst you preheat the oven to 200°c for a regular oven, or 180°c for a fan oven like me.
  • Once chilled and the oven preheated, bake the Kinder Cookie Pie for 30 minutes until the pie is lovely and golden on top. Leave to cool outside of the oven for an hour and do NOT remove from the tin.
  • Once cooled for an hour, put the Kinder Cookie Pie in the fridge and chill for 5-6 hours (or preferably overnight!)
  • Once it has been chilled, carefully remove from the tin!
  • Using a large and sharp knife, portion the Kinder Cookie Pie!
  • ENJOY!

Transporting multiple pies to social functions and storage was a challenge . so they stacked. Upon cutting .. Cut thin slices. Its very rich and makes Paula Dean seem like a butter...

4-5 pie shells
5 eggs
1 egg yolk
3 c sugar
1 1/2 c melted buttery
1 c cream
ICING
2 c brown sugar
1 c cream

Steps:

  • 1. Beat eggs well and cream in sugar beat well
  • 2. Add butter and cream beat well
  • 3. Pour 1 cup into each pie crust. The pie that will be on the bottom fill with a little more filling.
  • 4. Bake 350° about 45 minutes or until It is bubbly and almost set
  • 5. Cool pies in pans. Once fully cooled remove from pans . it may take a knife around edges. I admit store bought is easier . don't worry about broken edges they get trimmed
  • 6. Place fullest pie on bottom and stack others on top
  • 7. Trim pie crust edges off.
  • 8. Icing Cook 2 cups brown sugar and cream until soft ball stage. It will be brown and bubbly. A bit on a spoon when dunked in cold water will form a blob
  • 9. Beat until creamy. This can take a few minutes depending on your mixer.
  • 10. Ice the stacked pies. If icing hardens while icing mix in a wee bit of cream in very small amount.

  • Remove the meat from the fridge half an hour before you start to let it reach room temperature. Remove any fat and sinew from the meat. You can use stewing beef or any lean cut of braising steak for this dish.
  • Coat the beef in seasoned flour and fry in olive oil in batches until browned on all sides, and set aside on a plate. [Other chefs suggest doing this in your casserole, but I do not like doing this as I find that it messes up the bottom of the casserole and you have to clean it again before continuing.] I prefer to fry the meat in my wok or a frying pan.
  • Chop the onions and fry them in olive oil in your casserole for about 3-4 minutes [this is OK and does not make a mess like the meat frying does].
  • Then add the beef back to the casserole, the beef stock, the bay leaves, the Worcestershire sauce, the Marmite, the red wine vinegar, the crushed garlic and the red wine.
