- Preheat a toaster oven on broil setting, or set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Spray a small baking sheet with cooking spray.
- Insert toothpick vertically into each cheese stick half to mid-way point. Beat egg in a small bowl. Place bread crumbs in a separate small bowl.
- Dip each cheese stick into egg, then press into bread crumbs. Repeat dipping in egg and breadcrumbs for a double-thick coating. Place cheese sticks on prepared baking sheet and spray with additional cooking spray for uniform browning.
- Broil in preheated oven until golden brown, 4 to 5 minutes. Allow cheese sticks to set before serving, about 1 minute.

- Mix the bread crumbs and garlic salt in a medium bowl. In a medium bowl, blend the flour and cornstarch.
- In a large heavy saucepan, heat the oil to 365 degrees F (185 degrees C).
- One at a time, coat each mozzarella stick in the flour mixture, then the egg mixture, then in the bread crumbs and finally into the oil. Fry until golden brown, about 30 seconds. Remove from heat and drain on paper towels.

- Preheat oven to 350°. In a large bowl, beat butter until light and fluffy. Beat in cheese until blended. Combine flour, salt and cayenne; stir into cheese mixture until a dough forms. These super-simple breadsticks are easy, cheesy, and there's no dough to make because we're going to use frozen puff pastry for this. They're very cool for entertaining.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
- Place a sheet of frozen puff pastry dough onto a floured work surface and allow dough to thaw just until it can be unfolded. Unfold dough into a flat sheet; brush top of puff pastry dough with olive oil. Season with salt, black pepper, and cayenne pepper.
- Sprinkle white Cheddar cheese and 1/4 cup Parmigiano-Reggiano cheese onto the dough, covering the surface. Top with a piece of plastic wrap; press cheese and seasonings firmly into the dough with your fingers or by laying a sheet pan onto the dough over the plastic and pressing it down.
- Remove plastic and use a pizza cutter or sharp knife to cut the dough down the seam lines into thirds; cut each third lengthwise into thirds for a total of 9 breadsticks.
- Pick up a dough strip, place it seasoned side down on the work surface, and twist from both ends 8 or 9 times to make a rolled tube of dough with the seasoned side out. Place breadsticks onto prepared baking sheet.
- Sprinkle remaining 1 tablespoon Parmigiano-Reggiano cheese over the sticks. Roll the sticks lightly to even up their shapes and pick up and press any dropped cheese onto the surfaces.
- Bake in the preheated oven for about 10 minutes; flip and continue baking until breadsticks are browned and crisp, 10 to 20 more minutes. If you pick up a stick by one end and it droops, bake for several more minutes. Cool on a wire rack before serving.

I got this recipe from a friend that is a gourmet plus cook - he got the recipe from Stacey. It is delicious and a little different than any I could find here on Zaar. Handle this dough like you would pie crust dough. Serve them as appetizers, with dip, with soup anyway you want but better hide them until you want to serve them because they will disappear. very quickly

- Cut in the butter with a pastry knife or 2 knives.
- Cut until the mixture is crumbly.
- Slowly add milk again using the pastry knife or two knives.

- 1/4" thickness.
