CHIPPED BEEF ON TOAST

Steps:
- In a small pan, melt 2 tablespoons of the butter and add the flour. Cook, stirring, until the mixture begins to turn a light brown color, about 4 minutes. Remove from the heat.
- In a large saucepan, melt the remaining 2 tablespoons butter. Cook the garlic, rosemary and shallots until the shallots are translucent. Add the cream and bring to a boil. Add the butter-flour mixture, reduce the heat and simmer for 10 to 15 minutes, stirring occasionally. Add the salt and pepper and strain.
- For each serving, heat 1 cup of sauce to a simmer, add 2 ounces chipped beef and bring to a boil. Pour the mixture over two to three slices sourdough toast and garnish with parsley and paprika.

MOM'S SOS (CREAMED BEEF ON TOAST)
My dad use to make this all the time. He called it shit on shingle and even though my mom disliked swearing she also referred to it as shit on shingle. I like this better than chipped beef. It is so easy and delicious.

- 1. Brown the beef and drain the fat.
- 2. Pour half and half over the meat and bring to a boil. Mix the flour with the water and stir into beef mixture to thicken. Season with salt and pepper.
- 3. Toast bread. Fry the eggs sunny side up.
- 4. Serve the meat mixture over the toast and top with fried egg.

- Warm milk into a 3 qt (or larger) pot over low heat.
- Chop beef into 1/2 inch pieces and add to milk.
- Add can of peas to milk.
- Mix remaining milk and cornstarch (DO NOT ADD YET)
- Warm them until milk starts boiling then add milk and cornstarch mix to thicken.
- Toast Slices of bread and top with a slice of cheese and sauce!

I've had this recipe for years given to me by my mother. I have to at least triple this when I make it. The recipe says 4 servings, but we like a lot on our toast. What can I say... It is what it is. I'm sure almost everyone has had this super easy, super delicious dish before. It really, truly is a favorite of mine. I just felt the urge to post my recipe after having this for lunch today. And who knows, there may be a newly independent person (college student) that would like to find such an easy (and cheap) recipe. I use my own white sauce recipe when I make it. I've included a link on how to make my Recipe #514038 as well, but you can use your own preferred bechamel, if you so choose. - In a medium saucepan over medium heat, melt the butter.
- Add in the flour and whisk for a minute to cook the flour.
- SLOWLY add in the milk whisking constantly to break up the clumps.
- Reduce heat to medium low and cook, whisking often until the mixture thickens. ~3-6 minutes. Watch so it doesn't burn!
- Once the mixture thickens add in the ham and using a rubber tipped spatula, mix to combine, gently scraping on the base on the pan.
- Cook for 1 minute.
- Add in the peas, stir gently and turn off the heat.
- Toast the bread and place 2 slices of toast on a plate.
- Ladle a generous portion over the toast.
CREAMED CHIPPED BEEF ON TOAST (S.O.S.)
Steps:
- Rinse the slices of dried beef really well - they are VERY salty! Once you have rinsed well, pat dry with a paper towel.
- Chop the beef into small bite-sized pieces. Set aside.
- Heat the butter in the large saucepan over medium heat.
- Add the flour and pinch of cayenne pepper to the melted butter and whisk until well combined and cooked through, about 45 seconds.
- Very slowly add the milk while whisking continually.
- Once the milk has all been added, add the chopped dried beef.
- Cook, stirring occasionally, for a few minutes until thickened.
- Taste and season with sea salt and freshly cracked pepper, to taste, if needed.
- Serve on top of dry toast immediately. Enjoy.

- 1. Mix together the main sauce ingredients in a large stainless steel or non-stick pot. Slowly bring almost to a boil over medium heat (be careful not to scorch!), stirring constantly.
- 2. Mix together the thickener ingredients and slowly add to the hot almost boiling sauce mixture... stirring constantly until well thickened. (If it isn't thick enough, make a bit more thickener and repeat until it is desired thickness.
- 3. Add the chopped up (or torn up) dried beef. Add the thawed peas. When all is hot, turn the heat off.
- 4. Make slices of toast. Butter toast. Cut the toast into desired size cubes.
- 5. Pour desired amount of the sauce mixture over the cut up toast. *** You can also just serve over whole slices of toast the way they did in the old days... but I prefer the bite size pieces, especially for company.

My dad was in the Marine Corps and remembers eating this dish often. It's a simple recipe consisting of ground beef mixed with milk, margarine and beef broth. It's also good using ground sausage. Serve this dish over toast.
