Swedish meatballs in a light cream sauce are delicious on their own or served over noodles.

Yield About 50 mini meatballs (serves 4-6 for a main course, 10-12 as an appetizer)

Number Of Ingredients 19

2 large eggs
½ cup heavy cream
1½ cups cubed white sandwich bread, crusts removed (you'll need about 4 slices)
1 pound ground pork
2 garlic cloves, minced
¼ teaspoon ground allspice
¼ teaspoon ground black pepper
1½ teaspoons salt
2 teaspoons baking powder
1 pound ground beef (85% lean)
2 tablespoons unsalted butter
2 tablespoons all purpose flour
3 cups low sodium chicken broth
2 tablespoons packed light brown sugar (see note below recipe)
1 cup heavy cream
1¼ teaspoons soy sauce
¼ teaspoon ground black pepper
1 tablespoon lemon juice, from one lemon
2 tablespoons finely chopped fresh parsley, for serving

Steps:

  • Preheat the oven to 325. Line a baking sheet with aluminum foil for easy clean-up and place an ovenproof baking/cooling rack over top; spray the rack very generously with nonstick cooking spray.
  • Whisk the eggs and cream together in a medium bowl. Stir in the bread and mash until no large bread chunks remain. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat the pork, garlic, allspice, pepper, salt, and baking powder on high speed until smooth and pale, about 2 minutes, scraping bowl as necessary. Add the bread mixture to the mixing bowl and beat on low speed until combined (so it doesn't splatter), then increase the speed to high and beat until smooth and homogeneous, about 1 minute, scraping the bowl as necessary. Add the beef and mix on medium-low speed until just incorporated, about 20 seconds, scraping the bowl as necessary. Using wet hands, form the meat mixture into 1½-inch round meatballs and place on the prepared rack. (The mixture is very sticky and wet hands help; keep wetting your hands as you go). Bake for about 20 minutes, until just done.
  • Note: You'll notice that the rack will leave little marks on the meatballs but they will not be too noticeable once the meatballs are covered with sauce.
  • While the meatballs are cooking, make the sauce. In a large sauté pan over medium-high heat, melt the butter. Add the flour and cook, whisking constantly, until flour is golden and fragrant, about 1 minute. (Careful not to burn; it goes from golden to burnt quickly.) Whisk in the chicken broth, getting rid of any lumps. Add the brown sugar and bring back to a boil. Reduce the heat to medium and cook, whisking and scraping down the sides of the pan occasionally, until sauce is slightly thickened and reduced, about 10 minutes. Add the cream, soy sauce and pepper and bring to a boil. Reduce the heat to medium and cook, whisking and scraping down the sides occasionally, until the sauce is thick enough to coat a spoon, about 10 minutes. Add the cooked meatballs to the sauce and simmer, turning occasionally to coat with the sauce, until heated through. Stir in the lemon juice, then taste and adjust seasoning if necessary. Transfer the meatballs to a serving platter, sprinkle with parsley, and serve.
  • Note: The cream sauce is a touch sweet. For a less sweet sauce, you can reduce or omit the brown sugar.
  • Freezer-Friendly Instructions: The meatballs (without the sauce) can be frozen for up to 3 months. When ready to serve, prepare the sauce and reheat the meatballs in the sauce until hot in the center.

I found this recipe years ago in the church cookbook my grandmother gave to each of her grandchildren. I have spent many Christmas's with my cousin Heidi and we have made and enjoyed these together. I can't tell you if this is an authentic Swedish meatball, just that the church has a large population with Swedish roots.

3/4 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
1 1/2 cups breadcrumbs
1 cup light cream
1/2 cup chopped onion
1 tablespoon butter
1 egg
1/4 cup finely snipped parsley
1 1/2 teaspoons salt
1/4 teaspoon ginger
1 dash pepper
1 dash nutmeg (optional)
butter
2 tablespoons flour
1 (15 ounce) can beef broth
1/4 cup water
1/2 teaspoon instant coffee
salt and pepper

Steps:

  • Have meat ground together twice. When I am not able to find ground veal easily, I use half ground beef and half ground pork.
  • Soak breadcrumbs in cream for at least 5 minutes. I let them soak while sautéing the onions.
  • Melt 1 tablespoons butter and saute the onion until tender but not brown.
  • Combine meats, crumb mixture, onion, egg, parsley, and spices. I am not a fan of nutmeg in meatballs and I do not add that ingredient.
  • Mix thoroughly.
  • Choice, brown meatballs in a skillet on the stove a few at a time until all have been cooked through OR bake in a 350 oven on cookie sheets until cooked through.
  • If you cooked your meatballs in a skillet, use the fat to start the gravy. If you made them in the oven, use the fat you have and a few tablespoons butter. Sorry, this part is not exact but as I figure it out I'll update.
  • Stir 2 tablespoons flour into fat.
  • Add beef broth, water, and instant coffee. I have also used a small amount of coffee left in the pot. I start with a Tbsp or so and just keep taste testing until I find a flavor I like.
  • Heat and stir until gravy thickens.
  • Salt and pepper gravy to your liking.
  • Add meatballs into gravy and cook slowly for 15 to 30 minutes. This is the forgiving part of the recipe, if your meatballs are a bit pink inside, simmer until they finish cooking.
  • Note: If you are new to making gravy and need to add more flour to make a thicker gravy, disolve the additional flour in an equal amount of water and slowly add to your gravy. Stir constantly while adding the flour mixture and for a a few minutes afterwards. By doing this you should be able to avoid a lumpy gravy. You may need to adjust the seasoning when you are done.

1-1/2 cups soft bread crumbs
1 cup half-and-half cream
1 egg, beaten
1/3 cup chopped onion

  • In a large bowl, combine bread crumbs and cream; let stand for 5 minutes. Stir in the egg, onion, parsley, salt, nutmeg and ginger. Crumble meat over mixture and mix well., Shape into 1-in. balls. Place meatballs on a greased rack in a shallow baking pan. Bake, at 350° for 20-25 minutes or until no longer pink. Drain on paper towels. , Transfer meatballs to a greased 11x7-in. baking dish. Scrape pan drippings into a small saucepan; stir in flour until blended. Gradually stir in broth and coffee. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over meatballs. , Bake, uncovered, for 30-35 minutes or until bubbly. Serve with noodles if desired.

1 small onion, chopped
2 slices day-old rye bread, crusts trimmed,torn into pieces
2/3 cup beef stock or 2/3 cup canned beef broth
1 egg
1/4 teaspoon ground allspice
1/4 teaspoon white pepper
1/2 lb ground beef
1/2 lb ground veal
2 tablespoons all-purpose flour

Steps:

  • For meatballs:.
  • Melt 2 tablespoons butter in heavy medium skillet over medium heat.
  • Add onion and sauté until translucent, about 5 minutes.
  • Cool slightly.
  • Combine bread and stock in large bowl.
  • Mix in onion mixture, egg, allspice and pepper.
  • Add ground beef and veal and blend well.
  • Can be prepared 3 hours ahead.
  • Cover and chill.
  • Shape meat into 1 1/4-inch balls.
  • Melt remaining 2 tablespoons butter in heavy large skillet over medium heat.
  • Add meatballs and sauté until cooked through and brown, turning occasionally, about 20 minutes.
  • Using slotted spoon, transfer meatballs to platter and keep warm.
  • Reserve drippings in skillet.
  • For sauce:.
  • Add flour to drippings in skillet and stir over medium heat until brown, about 4 minutes.
  • Gradually whisk in stock and cream.
  • Simmer until sauce is thick and smooth, stirring frequently, about 5 minutes.
  • Season to taste with allspice, salt and pepper.
  • Pour sauce over meatballs and serve.

This is my mom's Swedish meatball recipe. This isn't the kind a lot of people are used to in a creamy white sauce. She served them every Christmas Eve in a chafing dish as part of the 'Smörgåsbord.' My mom used to have a vegetable sour cream and a lingonberry sauce on the table for those that might want to dip these in something.

1 tablespoon minced onion
⅓ cup fine dry bread crumbs
½ cup water
½ cup half-and-half
¾ pound ground beef

Steps:

  • Melt 1 tablespoon butter in a frying pan over low heat; cook and stir onion in melted butter until lightly browned, 5 to 8 minutes.
