BRAIDED WREATH BREAD

Braided Wreath Bread image

I make this attractive bread to celebrate Santa Lucia Day on December 13. This Swedish custom is the symbolic start of Christmas in Scandinavia, a festival of lights that brightens the short, dark days of winter. I position seven birthday candle holders in my braided loaf before adding candles to prevent wax from melting on top of the bread.

Provided by Taste of Home

Time 1h

Yield 12 servings.

Number Of Ingredients 12

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)

GLAZE:
1 large egg

Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide into thirds. Roll each portion into a 20-in. rope. Braid the ropes; shape into a wreath and pinch ends to seal. Place on a greased baking sheet. Cover and let rise in a warm place until doubled, about 45 minutes., For glaze, beat egg; lightly brush over dough. Bake at 350° for 30-35 minutes or until golden brown. Yield 32

Number Of Ingredients 15

1/16 to 1/8 teaspoon crushed saffron or 2 or 3 drops yellow food color
1/2 cup warm milk (105°F to 115°F)
2 packages regular or fast-acting dry yeast
1/2 cup warm water (105°F to 115°F)
1/2 cup granulated sugar
1 teaspoon salt
2 eggs, beaten
1/4 cup butter or margarine, softened
4 1/2 to 5 cups Gold Medal™ Better for Bread™ bread flour or Gold Medal™ all-purpose flour
1/2 cup chopped citron or lemon peel
1/4 cup chopped blanched almonds
1 tablespoon grated lemon peel
1 cup powdered sugar
1 to 2 tablespoons milk or water
Green and red candied cherries

Steps:

  • Stir saffron into warm milk. In large bowl, dissolve yeast in warm water. Stir in saffron-milk mixture, granulated sugar, salt, eggs, butter and 2 1/2 cups of the flour. Beat with spoon until smooth. Stir in citron, almonds, lemon peel and enough remaining flour to make dough easy to handle.
  • Place dough on lightly floured surface. Knead about 10 minutes or until smooth and springy. Grease large bowl with shortening. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour 30 minutes or until double in size. (Dough is ready if indentation remains when touched.)
  • Grease 2 cookie sheets with shortening or cooking spray. Gently push fist into dough to deflate. Cut off one-third of dough for top braid and reserve. Divide remaining dough into 3 equal parts; roll each part into 25-inch rope. Place ropes close together on cookie sheet. Braid ropes loosely; shape into circle and pinch ends to seal.
  • Divide reserved dough into 3 equal parts; roll each part into 16-inch rope. Place ropes close together on second cookie sheet. Braid ropes loosely; shape into circle and pinch ends to seal. Cover both braids; let rise in warm place about 45 minutes or until double in size.
  • Heat oven to 375°F. Bake 20 to 25 minutes or until golden brown. Remove from cookie sheets to wire rack. Cool completely, about 1 hour.
  • In small bowl, mix glaze ingredients with spoon until smooth and thin enough to drizzle. Drizzle glaze over both braids. Make holes for 5 candles in small braid. Place small braid on large braid. Garnish with cherries. Insert candles.

HOW TO MAKE A ST. LUCIA WREATH - WIKIHOW FUN

From wikihow-fun.com
  • Make the wreath base. Cut out the center of your paper plate. The cutout needs to allow it to sit comfortably and snugly on your head.
  • Cut the candle shape. Use a candle as a pattern for construction paper candles. Cut out and color four candles. Traditional wreaths have 6-8 candles.
  • Make the candles. Cut the black lines at the candle bottom to form tabs. Roll the candles into tubes and cut apart the flaps.
  • Attach the candles. Glue the tabs on to the paper plate. Space the candles equally around the plate. The plate forms the brim of a hat.
  • Make holly leaves and berries. Cut out and color the holly leaves and berries or use them as patterns to cut them from construction paper. Glue the leaves and berries to the paper plate.
  • Wear the wreath. You can glue a strip of ribbon or fabric to the inner edge of the plate. This will stop the wreath from slipping off your head.
