This stew recipe is for those of us who are hunters and are more of the country ilk. It is easy that you can go to work while it simmers in your pot and when you return home, dinner is ready.

2 squirrels - skinned, gutted, and cut into pieces
4 large potatoes, quartered
1 pound carrots, chopped
1 green bell pepper, chopped
4 onions, sliced
2 cups water
¼ medium head cabbage
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • In a slow cooker, place the squirrel meat, potatoes, carrots, green bell pepper, onions, water, cabbage, salt and ground black pepper.
  • Cover and cook on low setting for 8 hours.

1/2 pound lean ground beef (90% lean)
1/2 medium onion, chopped
3 tablespoons chopped green pepper
1 can (8-3/4 ounces) whole kernel corn, drained
2/3 cup condensed tomato soup, undiluted
1-1/2 teaspoons Worcestershire sauce
1 teaspoon sugar
3/4 teaspoon salt

Steps:

  • In a large saucepan, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes.

1 squirrel, cut up
flour
salt and pepper
2 1/2 tablespoons butter
7 cups boiling water
1 teaspoon thyme
1 cup corn
3 potatoes, cubed
1/4 teaspoon cayenne
3 medium onions, sliced
2 cups canned tomatoes with juice

Steps:

  • Roll the squirrel pieces in flour, salt, and pepper.
  • Brown in butter.
  • Add squirrel and all other ingredients, (with the exception of the tomatoes), to the boiling water, cover, and simmer for 1-1/2 to 2 hours.
  • Add the tomatoes and continue to simmer another hour.

70 - squirrels, cut up
2 large stewing chickens, cut up
6 gallon water
2 1/2 pound(s) salt pork
2 1/2 gallon lima beans
3 1/2 gallon cubed peeled potatoes
4 gallon chopped peeled tomatoes
1 gallon cubed peel carrots
2 1/2 gallon freshly cut corn
1 gallon shredded cabbage (optional)
1 - pod red pepper, chopped
3/4 cup(s) black pepper
1 3/4 cup(s) salt
2 1/4 cup(s) sugar

Steps:

  • Clean, dress and cut up squirrels and chickens. (If your hunter are not ardent squirrel hunters you can increase the number of chickens used. If using all chickens you will need 24)
  • Bring 4 gallons of water to boil in 30 gallon kettle. Add squirrel and chicken pieces. Cook stirring often, until meat fall off the bone. Remove bones and add remaining water.
  • Chop salt pork, fry out and add pork drippings to boiling mixture.
  • Add beans, potatoes, tomatoes, carrots and corn in order. Continue cooking and stirring until vegetables are tender.
  • Add cabbage and seasonings, and cook 1 hour, until stew is thick and flavors well blended.

  • Salt the squirrel pieces well and then dust in flour. Heat the olive oil in a large Dutch oven or other heavy, lidded pot over medium-high heat. Brown the squirrels in batches, being sure to not overcrowd the pot. Move the browned pieces to a plate or cutting board while you cook the rest.
  • When the squirrels have been nicely browned, remove them all from the pot and add the onion. Saute the onion until it just begins to brown on the edges, about 6 to 8 minutes. Add the garlic and cook another minute. Add the tomato paste, mix well and cook this for 2 to 3 minutes, stirring often.
  • Pour in the white wine, vinegar and about 1 quart of water. Add the savory, red pepper flakes and paprika, then the torn-up tomatoes, then the squirrel. Mix well and bring to a simmer. Add salt to taste and cook gently until the squirrel wants to fall off the bone, about 90 minutes. Fish out all the squirrel pieces and pull them off the bone -- this makes the stew a lot easier to eat. Return them to the pot.
  • Add the smoked sausage and the greens and cook until the greens are done, about 10 minutes (If you are using collards, they need more than 10 minutes to cook so adjust accordingly). Add salt, black pepper, chile and vinegar to taste and serve with crusty bread.
