CHARRED PADRóN CHILES AND SQUID SALAD



Charred Padrón Chiles and Squid Salad image

One in ten Padróns or shishitos is actually spicy. Pepper roulette!

Yield Serves 4

Number Of Ingredients 12

1/2 serrano chile, thinly sliced into rings
3 tablespoons olive oil
2 tablespoons fresh lime juice
1 teaspoon fish sauce
1/4 teaspoon sugar
Kosher salt, freshly ground pepper
2 cups Padrón chiles or shishito peppers
1 tablespoon plus 1 teaspoon vegetable oil
1/2 pound squid, bodies sliced into rings, tentacles halved
1 teaspoon Aleppo-style pepper
1 cup cilantro leaves with tender stems
1 cup basil leaves, torn if large

Steps:

  • Whisk serrano chile, olive oil, lime juice, fish sauce, and sugar in a small bowl to combine; season vinaigrette with salt and pepper. Very thinly slice 2 Padrón chiles into rings and add to vinaigrette. Let sit 10 minutes.
  • Heat 1 Tbsp. vegetable oil in a large skillet over medium-high. Pat squid dry with a paper towel; sprinkle with Aleppo-style pepper and season with salt and pepper. Cook, undisturbed, until bottom side is golden brown, about 1 minute. Toss squid and continue to cook, tossing often, until cooked through, about 1 minute longer. Transfer to a medium bowl and wipe out skillet.
  • Heat remaining 1 tsp. vegetable oil in skillet and cook remaining Padrón chiles, tossing occasionally, until blistered and browned in spots and crisp-tender, about 5 minutes.
  • Transfer chiles to bowl with squid; add vinaigrette with sliced chiles, cilantro, and basil and toss to combine. Season with salt and pepper.

Grilled Squid and Sweet Onion Salad with Roasted Tomatoes and Green Chile Vinaigrette image

8 plum tomatoes, halved
2 tablespoons pure olive oil
Salt and pepper
16 whole squid, cleaned
Olive oil
Salt and pepper
2 large sweet onions, (Walla Walla, Vidalia), peeled and sliced 1/4-inch thick
1 poblano pepper, roasted, peeled, seeded and chopped
6 cloves roasted garlic
1/2 cup red wine vinegar
3/4 cup pure olive oil
1 tablespoon honey
Salt and pepper

Steps:

  • Roasted Tomatoes: Preheat oven to 350 degrees F. Rub the tomatoes with the olive oil and place on a baking sheet. Roast for 25 to 30 minutes, or until soft. Remove seeds and dice.
  • Squid: Preheat grill or grill pan. Brush squid with olive oil and season with salt and pepper to taste. Grill the squid for 3 minutes on each side. Cut into 2-inch pieces. Brush the onions with olive oil and season with salt and pepper to taste. Grill for 3 to 4 minutes on each side until almost tender.
  • Green Chile Vinaigrette: Place pepper, garlic and vinegar in a blender and blend until smooth. With the motor running, slowly add the olive oil until emulsified. Add the honey and season with salt and pepper, to taste.
  • Assembly: 1 pound arugula 1 pound frisee Grilled Squid Grilled Onions Green Chile Vinaigrette Roasted tomatoes 12 fresh mint leaves, chiffonade
  • Combine the greens, squid and onions in a large bowl and toss with some of the vinaigrette. Place on a large platter and top with the tomatoes and fresh mint. Drizzle with additional dressing.

2 cups peanut oil
2 green plantains, peeled and sliced very thin on a mandolin
8 whole squid, skinned and cleaned
Pure olive oil
Salt and pepper
2 ripe mangoes, peeled and diced
4 cups arugula leaves
1 red bell pepper, seeded and diced
8 fresh mint leaves, cut into chiffonade
1/4 cup rice wine vinegar
1/3 cup extra virgin olive oil
1 teaspoon pureed canned chipotle pepper
1 tablespoon honey
1/4 cup fresh mint leaves, cut into chiffonade
2 tablespoons chopped cilantro
Salt and freshly ground pepper

Steps:

  • Heat the peanut oil in a large skillet over high heat to 375 degrees F. Fry the plantain slices in batches until crisp. Drain on paper towels and reserve. Heat a grill or grill pan. Brush the squid with olive oil and season to taste with salt and pepper and grill for 3 minutes on each side. Cut into 2-inch pieces.
  • Combine all ingredients in a blender and blend until smooth. Season with salt and pepper.
  • Assembly: Toss the squid, mangoes and arugula with the vinaigrette in a large bowl. Heap the salad onto a large platter and garnish with the fried plantains, red pepper and mint leaves.

Crispy Squid and Cracked Conch Salad with Orange-Chipotle Vinaigrette image

4 cups fresh orange juice
1/2 small red onion
1 clove garlic
3 tablespoons rice vinegar
2 teaspoons pureed chipotle in adobo
2 teaspoons honey
Salt and freshly ground black pepper
3/4 cup canola oil
Peanut oil
1 1/2 cups rice flour
1 1/2 to 1 3/4 cups cold water
Salt and freshly ground black pepper
1 pound squid rings and tentacles
1 pound conch meat, cut into 1-inch pieces
Cornmeal, for dredging
1/2 pound micro greens
1/4 pound watercress
1 head frisee
4 whole cherry peppers, jarred in vinegar, thinly sliced
Parsley leaves

Steps:

  • For the Orange-Chipotle Vinaigrette:
  • Place the orange juice in a medium nonreactive saucepan and bring to a boil over high heat. Cook until thick and reduced to 3/4 cup. Transfer to a bowl and let cool slightly.
  • Place the reduced orange juice, onion, garlic, vinegar, chipotle puree, honey, salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil until emulsified.
  • For the Crispy Squid and Conch Salad:
  • Fill a large saucepan halfway with the oil and heat until it reaches 350 degrees F on a deep-fry thermometer. Line a large plate or baking sheet with paper towels, set aside.
  • Whisk together the flour and 1 1/2 cups of the water in a large bowl and season with salt and pepper. The mixture should resemble crepe batter, if it is too thick; add more water a few tablespoons at a time, then season with salt and pepper.
  • Season squid and conch with salt and pepper and working in batches, dip 1/3 of the squid in the rice flour batter and allow the excess to drip off then dredge in the cornmeal. Fry until lightly golden brown and crisp. Remove with a slotted spoon and drain on the paper towel-lined plate. Season immediately with salt. Repeat with the conch, dipping into the batter then frying in batches.
  • Place the greens in a bowl and drizzle with about 1/4 cup of the orange-chipotle vinaigrette and season with salt and pepper. Mound the greens on a platter and place some of the sliced cherry peppers on top. Place the squid and conch around the perimeter of the platter, drizzle all with more of the vinaigrette and garnish with parsley leaves.

1 cup white wine

1/2 cup red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons honey
1 cup extra virgin olive oil
2 plum tomatoes, sliced in half and oven roasted until soft and chopped
Salt and freshly ground pepper
1 tablespoon olive oil
1 large onion, finely chopped
4 cloves garlic, finely chopped
4 cups clam broth
1 tablespoons squid ink
Salt and freshly ground pepper
12 sea scallops
Olive oil
Salt and freshly ground pepper

Steps:

  • Place shallot, garlic, white wine and saffron in a small saucepan and reduce by 3/4. Place the mixture into a blender, add the vinegar, mustard and honey and blend until smooth. With the motor running, drizzle in the olive oil and blend until emulsified. Add the tomatoes and blend for 10 second, just to chop slightly. Season with salt and pepper;
  • Heat olive oil in a medium saucepan over medium heat. Add onion and garlic and cook until soft. Increase heat, add clam broth and squid ink and reduce by half, season with salt and pepper, to;
  • Heat grill. Brush scallops with oil and season with salt and pepper to taste. Grill for 1 to 2 minutes on each side.
  • Assemble: Squid ink broth 1 pound angel hair pasta, cooked al dente and drained well Grilled Scallops Tomato-Saffron Vinaigrette Chopped parsley
  • Bring the squid ink broth to a simmer over low heat. Add the angel hair pasta to the broth and toss to coat. Divide the pasta among 4 plates. Arrange 3 scallops around the edge of the pasta and drizzle with the vinaigrette and choppe
