Weaning recipe: Roasted butternut squash & garlic purée image

This vibrant purée is so simple to make, and is a brilliant way of gently introducing your baby to a wider variety of flavours. But you can simply leave the garlic out, if you prefer

Provided by Caroline Hire - Food writer

Time 1h15m

Yield Makes about 300g (depending on size of squash)

Number Of Ingredients 3

1 small butternut squash , halved
1 garlic clove (still in its papery skin)
knob of butter or splash of milk (optional)

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Place the butternut squash cut-side up on a baking sheet. Cover with foil and roast in the oven for 45 mins, put the garlic on the tray and roast for another 15 mins or until you can easily slip a knife through the flesh of the squash. Take the garlic out if necessary.
  • Allow to cool a little, then scoop the flesh out of the squash with a spoon, discarding the seeds and skin. Squeeze the garlic out of the skin, discarding any tough bits and purée the garlic pulp together with the squash in a food processor.

  • Spiced Butternut Squash Cupcakes with Maple Cream Cheese Frosting. The name of the recipes says it all. Yum.
  • Butternut Squash Croquettes. I would have never thought to make the pureed squash into croquettes, but it could be worth a shot.
  • Butternut Squash Risotto with Sage Brown Butter. I have had butternut squash gnocchi in a sage brown butter before, and I imagine that this will be just as spectacular a combination.
  • Wild Harvest Quinoa Oatmeal. Pureed squash gets mixed into this quinoa breakfast dish along with pecans and dried cranberries. Seems like a real powerful way to start the day.
  • Butternut Squash Baked Vegetarian Taquitos. This sounds like a fabulously creative way to use the squash. Now I wish I had more pureed squash because I want to make several of these recipes.

  • Chili. There is truly nothing cozier than a bowl of chili in the fall, whether you make it with beans, lentils, turkey, beef, or butternut squash. My favorite way to take my chili to the next level is to add a can of butternut squash purée, which results in a beautiful red-orange color, creamy texture, and deep, earthy fall flavor.
  • Pasta or Pizza Sauce. When I have some extra time, I’ll boil cubes of butternut squash, take out my immersion blender, and blend the softened squash into a smooth and velvety sauce — but honestly those nights are few and far between.
  • Toast. Butternut squash purée on toast? Try it — you’ll thank me later. I like to use a swipe of butternut squash purée as an alternative to jelly, giving a slice some extra sweetness.
  • Bread and Muffins. During the fall, my Instagram feed is always overflowing with pumpkin bread and muffin recipes. Curiosity recently got the best of me, and I wondered what would happen if I simply swapped the pumpkin purée for butternut squash purée.
  • Yogurt and Oatmeal Bowls. Another way I like to add some fall flair to breakfast is by mixing in a dollop or two of butternut squash purée with yogurt and oatmeal.
