PUMPKIN (OR SQUASH) BARS



PUMPKIN (OR SQUASH) BARS image

These bars are yummy - and they freeze well!

Number Of Ingredients 16

2 c sugar
4 eggs
16 oz pumpkin or squash
1 c oil
DRY INGREDIENTS:
2 c flour
1/2 tsp salt
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon (or more)
FROSTING:
8 oz cream cheese
6 Tbsp butter, softened
1 tsp vanilla
4 c powdered sugar
1/2 c walnuts, chopped

Steps:

  • 1. Mix dry ingredients. Add all other ingredients. Then mix. Pour into a greased and floured jelly roll pan. Bake at 350 degrees for 20 to 30 minutes. Touch middle to detect doneness. Cool completely, then ice with powdered sugar frosting.
  • 2. Frosting: Mix cream cheese and butter. Add vanilla. Add powdered sugar, a cup at a time. Spread frosting over bars. Sprinkle with walnuts (if desired). Store covered in refrigerator.
  • 3. Cut into bars. This freezes well.

2 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
4 large eggs, beaten
2 cups mashed cooked winter squash
1 cup canola oil
CREAM CHEESE FROSTING:
3 ounces cream cheese, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract
6 tablespoons butter, softened
1 tablespoon milk

Steps:

  • In a bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt. Stir in eggs, squash and oil; mix well. Spread into a greased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick comes out clean. Cool on a wire rack. , Meanwhile, for frosting, beat together cream cheese, confectioners' sugar, vanilla and butter. Add milk; stir until smooth. Frost cooled cake. Cut into squares.

3/4 cup butter
3/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 egg
1/4 cup strong brewed coffee, cooled
1 1/2 cups flour
2 cups raisins
1 cup chopped pecans

Steps:

  • Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.
  • Add brown sugar, cinnamon, baking soda, cloves, and nutmeg; beat till combined.
  • Beat in egg and coffee. Beat in as much of the flour as you can. Stir in remaining flour with a wooden spoon. Stir in raisins and chopped pecans.
  • Drop dough by rounded tablespoons 2 inches apart on an ugreased cookie sheet. Bak in a 375 ove for 8 to 10 minutes or till edges are lightly browned. Transfer cookies to wire racks to cool.

1/4 cup Splenda granular, sugar substitute
2 scoops protein powder (I use the IDS chocolate)
1/3 cup ricotta cheese

Steps:

  • Melt together in the microwave chocolate, peanut butter.
  • Stir in Splenda, protein powder, ricotta cheese.
  • Mix well and shape into a round flat disc about 6 inches across. Cover tightly with plastic wrap and chill until hardened.
  • Cut into 12 pie shaped wedges.

The omega 3 fat in the flax meal balances the omega 6 in the oats. These bars are a good source of both soluble and insoluble fiber, calcium, and magnesium.

1 cup rolled oats
1 cup nonfat dry milk powder
1/2 cup wheat bran (not bran cereal)
1/2 cup flax seed meal
1 cup almond meal
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1 (15 ounce) can white beans, drained & mashed
2 eggs, beaten
1/4 cup honey
1/4 cup water
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Mix dry ingredients.
  • Mix wet ingredients in a separate bowl, or blend in food processor.
  • Stir wet ingredients into dry ingredients.
  • Spread mixture into a 9x13" greased (or non-stick) cake pan. I use a glass pan.
  • Bake for 20 minutes, or until dry to the touch and lightly browned at the edges.
  • Cool and cut into 12 bars. I store them in the frig to keep them fresh.
  • Alternate "orange" version: Replace honey and water with 1/2 cup frozen orange juice concentrate, thawed, and replace cinnamon and ginger with 1 t dried orange peel.

I got this from Delicious Living Magazine. I made it vegan by using margarine, but otherwise left it as is. I didn't have soy flour, so subbed soy protein powder. This comes out like a cakey bar. Because I am not a fan of molasses, I used 1/2 C honey and 1/4 C molasses but think I might up the molasses more next time. The flavor might change based on what squash you use, but I think it's a great snack or dessert and they said, "packed with vitamins, protein and minerals." You could use whatever nuts or fruit you like. Since my family is not big on dried fruit, I used 1/2 C raisins and 1/2 C granola to make up the remainder.

  • Let cool; cut into squares.
