SUMMER SQUASH AND CORN CHOWDER



Summer Squash and Corn Chowder image

The perfect summer soup! It's rich and creamy and brimming with fresh sweet corn and yellow squash. And when finished shredded cheddar and salty bacon you know it's got to be good!

Number Of Ingredients 13

6 slices bacon, (cooked and crumbled and 1 1/2 Tbsp rendered bacon fat reserved)
1 1/2 lbs yellow squash, (chopped (about 3 medium))
2/3 cup thinly sliced celery
1 cup sliced green onions, (divided)
1 Tbsp flour
2 cloves garlic, (minced)
2 3/4 cup milk ((I used 1%))
5 cups fresh cut corn ((from about 6 ears corn), divided)
1/2 cup heavy cream
1 1/2 tsp chopped fresh thyme ((or 1/2 tsp dried))
3/4 tsp salt, (then more to taste)
1/4 tsp freshly ground black pepper, (then more to taste if desired)
3/4 cup Shredded cheddar cheese, (for serving)

Steps:

  • Heat 4 tsp reserved bacon fat in a large pot over medium-high heat. Add celery and saute 2 minutes then add the squash and 3/4 cup of the green onions.
  • Saute until tender, about 6 minutes, adding in garlic and flour during last 2 minutes of sauteing. Reduce heat slightly.
  • Add 1 1/2 cups milk, 2 cups of the corn, thyme, salt and pepper to the sauteed veggies.
  • To a blender add remaining 3 cups of corn, remaining 1 1/4 cups milk and the cream. Process in blender until nearly smooth (about 30 seconds).
  • Add pureed mixture to pot and stir to blend. Cook until mixture reaches a light boil.
  • Serve warm with shredded cheese, crumbled bacon and remaining sliced green onions.

Chowder Base
1 tablespoon olive oil
1/2 small white onion, minced
1/2 leek (white and pale green parts), halved lengthwise and thinly sliced
1 shallot, minced
1 garlic clove, minced
1 tablespoon peeled and minced ginger
2 cups peeled, seeded, and cubed winter squash, such as kabocha
1 carrot, sliced
1/2 teaspoon mild curry powder
Salt
1 lemongrass stalk, bruised with the side of a chef's knife and halved
1 bay leaf
3/4 cup unsweetened coconut milk
3 1/2 cups Vegetable Broth or water
Mussels
1 tablespoon olive oil
1 shallot, minced
1 garlic clove, minced
1/2 cup white wine
1 pound mussels, cleaned
1 cup diced winter squash, such as kabocha
1 cup diced potatoes
8 baby turnips, peeled and quartered
8 baby radishes, halved
1/2 pound medium shrimp, peeled, deveined, and halved
1/2 pound skinless black sea bass fillet, cut into small chunks
1 ají dulce or other small red pepper, cored, seeded, halved crosswise, and julienned
Salt and pepper
Extra-virgin olive oil
2 tablespoons minced red onion
1 tablespoon finely chopped chives
Aleppo pepper

Steps:

  • Make the chowder base. In a medium pot, heat the olive oil over medium-low heat. Add the onion and cook until softened, about 6 minutes. Add the leek, shallot, garlic, and ginger and cook, stirring occasionally, until the leek is softened, about 6 minutes. Add the squash, carrot, and curry powder, season with salt, and cook, stirring, for a few minutes.
  • Raise the heat to medium-high, add the lemongrass, bay leaf, coconut milk, and broth, and bring to a simmer. Cook the chowder base until the squash and carrots are very tender, about 30 minutes.
  • Meanwhile, make the mussels. In a medium pot, heat the olive oil over medium-low heat. Add the shallot and garlic and cook, stirring often, until softened, about 3 minutes. Increase the heat to high, add the wine, and bring to a boil. Add the mussels, cover the pot, and steam them until they just open wide, 3 to 4 minutes.
  • Using a slotted spoon, transfer the mussels to a medium bowl. Remove the mussels from the shells; discard the shells and any mussels that haven't opened. Strain the broth into a small bowl.
  • Once the squash is tender, discard the lemongrass and bay leaf. Process the chowder base in a blender until very smooth and creamy, then pass through a fine-mesh strainer into a large pot.
  • Bring the chowder base to a simmer, then add the raw diced squash, potatoes, and turnips and cook until tender, about 10 minutes. Add the radishes, shrimp, and sea bass and simmer for about 3 minutes. Stir in the mussels and red pepper. The soup's consistency should be thinner than traditional chowder-add a splash of the reserved mussel liquid, if needed. Season with a touch of salt and pepper. Serve the chowder in bowls, topped with a drizzle of extra-virgin olive oil, the red onion, chives, and Aleppo pepper.

I love squash but wanted a new recipe with fewer calories. I did a search on flavorful ingredients and came up with a bunch of pasta recipes. So I thought, why not substitute yellow squash for pasta? And it worked! All the ingredients can be prepared in advance and refrigerated until ready to cook. Long, slender young squash make for the best texture.

3 slices bacon, cut into 1/2-inch pieces
1 tablespoon olive oil
1 clove garlic, minced
1 sweet onion, chopped
2 pounds yellow squash, cut into bite-size pieces
4 pickled artichoke hearts, chopped
2 tablespoons capers with liquid, or more to taste
½ teaspoon crushed fresh rosemary leaves
salt to taste
ground white pepper to taste

Steps:

  • Place 2 paper towels on a microwave-safe plate; add bacon and top with another paper towel. Cook in microwave on high until some grease is absorbed, about 30 seconds.
  • Transfer bacon to a deep skillet and cook over medium-high heat, stirring often, until crisp, 5 to 10 minutes. Lower heat to medium; stir garlic into bacon and cook until fragrant, about 30 seconds. Add onion; cook and stir until onion is slightly translucent and still firm, about 5 minutes.
  • Mix squash into onion-bacon mixture; cook and stir until squash is slightly softened, about 5 minutes. Add artichoke hearts; cook until heated through, 2 to 3 minutes. Add capers and rosemary; cover skillet and cook, stirring often, until squash is softened but firm to the bite, about 5 more minutes. Season with salt and white pepper.
