1½ pounds fresh squash (sliced)
½ green bell pepper, (chopped)
½ sweet onion, (chopped)
2 Tbsp butter
1 tsp salt
½ tsp black pepper
2 eggs
4 tsp chicken base or chicken bouillon
1 (10.75-oz) can Cream of Mushroom soup
1½ cups shredded cheddar cheese
1/4 cup butter, (melted)
20 to 30 Ritz crackers, (crushed)

Steps:

  • Preheat oven to 325°F. Lightly spray a 9x13-inch pan with cooking spray. Set aside.
  • In a large skillet, melt 2 tablespoons of butter. Add squash, bell pepper, onion, salt and pepper. Cook until vegetables are soft. Remove from heat.
  • Mix together eggs, chicken base, mushroom soup, cheese, and melted butter. Stir in cooked vegetables. Pour into prepared pan. Top with crushed Ritz crackers.
  • Bake, uncovered, for 20 minutes.

1/2 cup chicken flavor stuffing mix

Steps:

  • Cook chicken, cool and remove from bone.
  • Bring squash to boil in broth and cook 8 minutes.
  • Drain and combine all vegetables.
  • Combine sour cream, soup and salt and pepper.
  • Add chicken and veggies.
  • Spoon into lightly greased 9x13" baking dish.
  • Combine stuffing and butter.
  • Sprinkle over casserole.

3/4 cup butter, melted
3 cups diced zucchini
2 cups cubed cooked chicken breast
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 medium carrot, shredded
1/2 cup chopped onion
1/2 cup sour cream

Steps:

  • In a large bowl, combine stuffing mix and butter. Set aside 1/2 cup for topping. Add the zucchini, chicken, soup, carrot, onion and sour cream to the remaining stuffing mixture. , Transfer to a greased 11x7-in. baking dish. Sprinkle with reserved stuffing mixture. 2 pounds crookneck yellow squash, sliced
1 small onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
¼ cup butter, melted
1 ½ cups bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the squash and onion in a large saucepan with just enough water to cover. Bring to a boil over medium heat, and cook until tender, about 10 minutes.
  • Transfer the squash, onion, and remaining liquid from the saucepan to a 2 1/2 quart casserole dish. Stir in chicken soup, sour cream, and melted butter. The liquid from the cooked squash should be enough so that mixture is slightly soupy. Sprinkle the bread crumbs over the top. The bread will absorb some of the liquid.
  • Bake, uncovered, for 30 to 45 minutes in the preheated oven, until browned and bubbly.

1 ½ pounds yellow crookneck squash - peeled, seeded, and sliced
1 onion, thinly sliced
1 carrot, grated
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
1 cup butter
7 ½ ounces herbed dry bread stuffing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook squash and onions in boiling salted water until tender. Drain and mash them with 1/2 cup butter or margarine. Stir in sour cream, grated carrot and cream of chicken soup. Set aside.
  • Melt remaining 1/2 cup butter and stir it into the stuffing mix. Pour half of the stuffing mix into the bottom of a 9X13 glass baking pan. Pour the squash mixture over the top of the mixture, and the rest of the stuffing mix on top of the squash.

1 small onion (chopped, about 1/4 to 1/2 cup)
1 (10 3/4-ounce) can condensed cream of chicken soup (undiluted)
1 cup sour cream
1 cup stuffing crumbs (herb-seasoned, or croutons)
2 tablespoons melted butter

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F/180 C/Gas Mark 4. Butter a 1 1/2- to a 2-quart baking dish.
  • Add about an inch of water to a saucepan and heat over medium heat. Add the squash and onion to the pan and cook until tender. Drain off the water.​
  • In a bowl, combine the condensed soup and sour cream and blend well.
  • Add the well-drained sliced squash to the sour cream and soup mixture.

3 lb yellow squash, sliced or diced
1/2 c diced Vidalia onion, optional
1 can(s) cream of mushroom or chicken soup, 10.5 oz.
1 c mayonaise
1 egg
8 oz shredded cheddar cheese (sharp is my favorite)
1 tsp salt
1/2 tsp fresh ground black pepper
TOPPING
2 sleeves of Ritz crackers, crushed
1 stick melted butter

Steps:

  • 1. Preheat oven to 350.
  • 2. Wash and slice squash into small medallions or dice into smaller pieces if the squash is large. I prefer smaller sized squash since it is tender. Put squash into a large bowl for mixing with the filling.
  • 3. In a separate bowl, mix together the soup, mayo, eggs, cheese, onions, salt, and pepper.
  • 4. Pour over squash.
  • 5. Stir until well mixed.
  • 6. Then pour into a casserole dish for baking.
  • 7. Crush crackers while in "tubes" (I usually wrap them in a dish towel to avoid a mess, and use a rolling pin or meat tenderizer) or place in a resealable plastic bag.
  • 8. Pour crushed crackers into a bowl. Melt butter in the microwave and stir into crackers until moist.
  • 9. Drizzle on top of casserole. (You can make more or less of the topping. More topping = more yummy!)
  • 10. Bake at 350 degrees until bubbly and brown on top (usually 45-50 minutes). Bake for 30 minutes covered. with foil to help prevent crackers from burning.
  • 11. Then uncover and bake an additional 20 minutes until golden brown on top.
  • 12. ***If you want, you can add a cup of chopped cooked chicken into casserole. Also, adding 2 cups of cooked rice into it makes a delish meal.

Reserve 1/2 cup of the stuffing mixture and spoon the remaining stuffing mixture into a 2-quart shallow baking dish.Stir the soup, sour cream, yellow squash, zucchini, carrot and cheese in a medium bowl.
