Steps:
- Preheat oven to 350 degrees. Slice squash and zucchini and arrange in a lightly sprayed 9 inch casserole dish. I lined mine up alternating 2 squash/3 zucchini. Drizzle with avocado oil and season with garlic salt and pepper.
- In a small bowl mix melted butter, fresh grated Parmesan cheese, and panko crumbs. Spread evenly over the top of seasoned vegetables and cover with foil. Place in oven for 30 minutes, then remove foil and turn oven to High broil, and broil casserole for 3-4 minutes until cheese has turned golden brown.

BROILED ZUCCHINI
This is a very simple yet tasty side dish. It is a Semi-cooked hot vegetable that gives a totally different taste and texture to cooked zucchini. I created this dish years ago because I did not care for the taste and texture of soft cooked zucchini. This has been a family favorite ever since. I am giving the ingredients for one serving and you can simply multiply it for the number you wish to make.

Steps:
- Wash off zucchini, cut off ends and split lengthwise.
- Lay the split pieces of zucchini cut side up in a lightly greased baking dish.
- Pour over the butter or oil.
- Sprinkle the cheese evenly over the cut edge.
- Sprinkle with spices.
- Broil just until the zucchini slices get a lovely light brown on the top.
- Remove from the broiler, it will be cooked ala-dente' with about half of the crunch still in it.
- It is easiest to eat with a sharp knife handy to cut into small chunks for each bite -- but make sure you get some of the spices and cheese with each bite -- hm-m-m-m.
ROASTED ZUCCHINI AND SQUASH
This roasted zucchini and squash is baked until tender with Italian herbs and Parmesan cheese! It's the perfect summer side dish.

- Preheat the oven to 425 degrees Farenheit.
- Slice the zucchini and squash into 1/4-inch thick rounds. In a large bowl, mix them with the olive oil, garlic powder, onion powder, oregano, and kosher salt.
- Line two baking sheets with parchment paper. Place the vegetables in a single layer on the baking sheets. Roast for 8 minutes.
- Remove the baking sheets from the oven and sprinkle evenly with the shredded Parmesan cheese. Return the sheets to the oven (on the opposite oven racks) and bake another 7 minutes until tender and the cheese is melted. Serve immediately.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Whisk the olive oil, vinegar, dill, salt, and pepper together in a mixing bowl until evenly blended. Add the onion, zucchini, yellow squash, and radishes; toss until evenly coated. Spoon into an 8x8-inch baking dish, and cover with aluminum foil.
- Broil in the preheated oven 10 minutes, then remove the foil, and continue broiling until the vegetables are tender and nicely browned on top, about 10 minutes more.

- Heat the oil and butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until just softened, about 5 minutes. Add the garlic and cook, stirring occasionally, for 1 minute. Add the zucchini, squash, Italian seasoning and a generous pinch of salt. - 1. Slice squash into rounds 1/8"-1/4" thick.
- 2. When I have time, I salt the squash and let it sit for about 30 minutes to sweat out the excess water but when I am in a hurry I skip this step.
- 3. Combine milk and egg in a small bowl.
- 4. In a 2nd bowl (I use a plate) combine the flour, cornmeal, salt, pepper, and garlic powder.
- 5. If you set the squash aside to sweat, dab them dry with a paper towel.
- 6. Then dip them in the egg mixture.
- 7. Then dredge them in the dry mixture.
- 8. Continue this process until all the rounds have been dredged.
- 9. Using enough to cover the bottom of the pan, heat oil in a large skillet using medium to medium high heat. Place squash in skillet and fry both sides of squash until golden brown.
- 10. Once fried, place on a paper towel to absorb extra oil.

- 1. In a sauce pan add 2 Tbsp of butter/margarine, the garlic, and creole seasoning. Slowly saute.
- 2. Wash zucchini and squash. Cut into thin (1/4 to 1/3" slices). Place in a bowl large enough to stir squash and garlic mixtures together in.

Steps:
- Preheat oven to 400 degrees
- Slice zucchini slices (about 1/2″ thick)
- Place zucchini in a large bowl and drizzle with olive oil
- Shake to coat zucchini with olive oil
- Add parmesan cheese, salt and pepper.
- Shake to coat.
- Place in a single layer on a large rimmed baking sheet lined with aluminum foil or a silicone baking mat.
- Sprinkle with an additional 2 tablespoons of parmesan cheese
- Bake in preheated oven for 10-15 minutes, finish on a low broil for another couple of minutes.

- Prepare two bowls - one with eggs, and the other with a mixture of almond flour, grated Parmesan cheese, Italian seasoning, paprika, garlic powder, sea salt, and black pepper. Get a third bowl and place just enough of the flour mixture in it to cover the bottom in a thick layer.
- Dip each zucchini/squash circle in the eggs, shaking off the excess. Place the circle into the third bowl (the one with just a little flour mixture). Use a spoon to dust more flour mixture (from the second bowl) over the top of the zucchini/squash circle (in the third bowl) to cover completely. Press lightly, then flip and cover the other side. (Use one hand for the egg and the other for the dry mixture, to avoid getting too much egg in the breading which will make it clumpy.
