SUMMER SQUASH AND SWEET CORN CASSEROLE



Summer Squash and Sweet Corn Casserole image

This recipe is an adapted combination of Southern Living's Old-School Squash Casserole and Katherine's recipe recommendations.

Number Of Ingredients 13

8 T. (1/2 c. or 1 stick) unsalted butter, divided
5-6 medium yellow squash, sliced, approximately 3 pounds
1½ c. Vidalia onion, diced
1 c. sweet corn kernels
2 t. Kosher salt, divided
2 large eggs, lightly beaten
1-8 oz light sour cream
1½ c. mild cheddar cheese, finely shredded
1 T. fresh thyme leaves
½ t. freshly ground black pepper
2 sleeves of Ritz crackers, coarsely crushed
½ c. mild cheddar cheese, finely shredded
1 t. thyme leaves

Steps:

  • Slice squash into ¼" rounds.
  • Dice onion.
  • Melt 4 tablespoons of the butter in a medium skillet.
  • Cook squash, corn and onions in melted butter and 1 teaspoon of the salt, stirring frequently, until centers of squash are tender, about 10-12 minutes.
  • Place squash mixture in a colander over a bowl and allow any excess water to drain off for about 30 minutes. This step cannot be skipped ! You don't want your casserole to be soggy!
  • Stir together the beaten eggs, sour cream, cheese, thyme, pepper and remaining salt.
  • Gently fold in the squash mixture.
  • Spoon into prepared 2 quart dish.
  • Sprinkle lightly with a dusting of sugar, if desired.( I didn't do this step because I forgot, but Katherine recommended it.)
  • Microwave the remaining butter in a bowl for 20-25 seconds.
  • Toss together crackers, melted butter and cheese.
  • Sprinkle mixture over the squash and bake 30-40 minutes until golden in a 350 degree preheated oven. Time may vary due the depth of the dish you choose to use.

2 lbs butternut squash, cubed
1 sweet potato, peeled,cut cubed
6 cups water
salt and pepper
2 tablespoons olive oil
2 cups chopped onions
2 cloves chopped garlic
1 large red pepper, chopped
1 teaspoon coriander
3/4 teaspoon cardamom
1/2 teaspoon cumin
1/2 teaspoon ginger
1/2 teaspoon cayenne pepper
1 dash clove
1 large potato, peeled,cubed
2 cups frozen corn
1 cup toasted pine nuts, for garnish

Steps:

  • heat oil in large pot, add onions garlic, red pepper and spices, saute until vegetables are softened, about 8-10 minutes add squash, 1 c corn, sweet potato and 6 c water, bring to boil and simmer 30 minutes using a hand blender puree soup until smooth-- (may put several batches in a regular blender) return to pot, bring to a boil.
  • add potato and remaining corn, simmer about 15 minutes, adding water to thin if desired season with salt and pepper, garnish with toasted pignoli (pine nuts).

In South Africa we braai instead of barbeque, but it "boils" down to the same method. We prefer an open fire to a barbeque kettle but this recipe will work equally well which ever method is being used. This is a quick way of adding vegetables to your braai and so easy that the kids love to do this as part of their duties.

4 squash
1 (410 g) can sweet corn
20 g cheese, grated
5 ml butter
5 ml garlic, crushed

Steps:

  • Cut off the top third section of each gem sqaush. Keep the lid to replace later.
  • Remove all the pips with a teaspoon.
  • Fill eash gem sqaush with sweet corn, clump of butter, garlic and grated cheese.
  • Replace the lid and wrap each gem sqaush with foil.
  • Place in coals.
  • The squashes are ready when soft at touch.

2 ears corn, husked and cleaned
2 yellow squash, diced
½ cup water
2 tablespoons butter, or more to taste
1 tablespoon chopped fresh parsley
salt and ground black pepper to taste

Steps:

  • Place corn into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain and cool corn. Cut corn off the cobs.
  • Place squash into a skillet and add water. Cook squash over medium heat until tender, 5 to 10 minutes. Drain any excess water from skillet.
  • Stir corn, butter, parsley, salt, and pepper into squash; cook, stirring occasionally, until heated through, about 5 minutes.

2 tablespoons olive oil
½ yellow onion, sliced
4 cloves garlic, minced
½ cup vegetable broth
1 ear corn, kernels cut from cob
2 cups sliced yellow squash
2 cups sliced zucchini
1 tablespoon chopped fresh parsley
2 tablespoons butter
salt and pepper to taste

Steps:

  • Heat the oil in a skillet over medium-high heat, and cook the onion and garlic until slightly tender. Mix in the vegetable broth and corn kernels, and cook until heated through. Mix in the squash and zucchini. Cover, and continue cooking 10 minutes, stirring occasionally, until squash and zucchini are tender.
  • Mix the parsley and butter into the skillet with the squash. Season with salt and pepper. Cook and stir until butter is melted, and serve hot.

Number Of Ingredients 5

2 pounds small (4- to 7-inch by 1-inch) yellow crookneck squash, cut in thin rounds, about 5 cups prepared
4 or 5 ears tender corn, enough to make at least 3 1/2 cups prepared
1/4 cup heavy cream or creme fraiche, not ultrapasteurized
1/4 cup coarsely chopped fresh coriander
Tiny pinch of salt

Steps:

  • Put a half cup of water in a large, heavy, non-reactive saucepan and bring to a boil. Add the squash, cover the pan, lower heat to low-medium and cook, stirring occasionally, until the squash is more or less falling apart and all the water has cooked away, about 20 minutes. If necessary, uncover the pan and raise the heat near the end of the cooking so there is no free water.
  • While the squash is cooking, cut the corn kernels from the cobs, keeping the knife perpendicular so only the tips are removed. Then scrape the cobs with the back of the knife to get all the juice and kernel hearts.
  • When the squash is ready, stir in the corn and cream. Cook, stirring often, for about three minutes, just long enough to heat everything through. Add the coriander, taste and add the merest smidgen of salt if you think it's necessary. Serve at once.

2 ears corn
3 large shallots
2 large garlic cloves
1 fresh jalapeño chile
1 tablespoon olive oil

Garnish: corn kernels, chopped fresh jalapeño chiles, fresh cilantro leaves, sour cream, and thinly sliced yellow summer squash

Steps:

  • Cut summer squash crosswise into 1/2-inch-thick slices. Shuck corn and, working over a bowl, cut kernels from cobs. Halve cobs. Chop shallots and mince garlic. Wearing rubber gloves, chop chile, with seeds if desired.
  • In a 5-quart heavy kettle combine all ingredients (including cobs) except water and cook over moderate heat, stirring, 3 minutes. Stir in water and simmer mixture until squash is very tender, about 15 minutes. Discard cobs. In a blender puree mixture in batches until smooth (use caution when blending hot liquids), transferring to another bowl. Season soup with salt and pepper. Divide soup between 2 bowls and garnish with corn, chiles, cilantro, small dollops of sour cream, and squash.
