I never really cared for brussels sprouts, but this wonderful recipe I received from a friend changed my mind. The slightly sweet sauce turns the tender veggies into a special change-of-pace side dish. -Mary Devlin Etobicoke, Ontario

2 pounds fresh brussels sprouts, halved
1/2 cup chopped onion
2 tablespoons butter
1 tablespoon all-purpose flour
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/2 cup milk
1 cup sour cream
Minced fresh parsley

Steps:

  • Add 1 in. of water and brussels sprouts to a saucepan; bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until tender., Meanwhile, in another saucepan, saute onion in butter until tender. Stir in flour, brown sugar, salt and mustard until blended. Gradually stir in milk. Bring to a boil; boil for 1 minute. Reduce heat. Stir in sour cream; heat through., Drain the sprouts; place in a serving bowl. Top with sauce. Sprinkle with parsley.

1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/2 pound sliced fresh mushrooms
1 medium onion, chopped
2 tablespoons butter
2 packages (10 ounces each) frozen brussels sprouts, thawed and drained
3/4 cup shredded cheddar cheese

Steps:

  • In a small bowl, beat cream cheese and sour cream until smooth; set aside. In a large skillet, saute mushrooms and onion in butter until tender. Stir in brussels sprouts. Remove from the heat; stir in cream cheese mixture. , Spoon into a greased shallow 2-qt. baking dish. Cover and bake at 350° for 25-30 minutes or until bubbly. Uncover; sprinkle with cheddar cheese. Bake 5 minutes longer or until cheese is melted.

28 ounces frozen Brussels sprouts
1/2 cup chopped onion
2 tablespoons butter or 2 tablespoons margarine
1 tablespoon flour
1 tablespoon brown sugar
1/2 teaspoon ground mustard
1/2 cup milk
1 cup sour cream
salt and pepper

Steps:

  • Cook sprouts according to package directions and drain.
  • In saucepan, saute onion in margarine about 4 minutes.
  • Stir in flour, brown sugar, mustard and salt and pepper, mixing well.
  • Gradually add milk, stirring constantly.
  • Bring mixture to a boil; then simmer for 2 minutes.
  • Reduce heat and add sour cream; just enough to heat through.
  • Pour sprouts in serving dish and cover with cream sauce.

This recipe was found on www.recipes.wuzzle.org & is placed here in preparation for the ZWT6. Although the sprouts in the original recipe were probably cooked in a frying pan, I would steam mine.

1 1/2 lbs Brussels sprouts
3 slices bacon, cooked & crumbled
1 large onion, chopped
1 cup sour cream
1/2 teaspoon pepper

Steps:

  • Put the sprouts in a steamer & cook for about 10-12 minutes or until just tender.
  • About half way through the cooking time for the sprouts, in a large skillet fry the bacon for 5 minutes or until crisp, then remove the bacon to cool, & in the same skillet saute the chopped onion for several minutes.
  • Crumble the cooled bacon & add it, along with the sprouts, to the skillet. Add the remaining ingredients & mix thoroughly.
  • Serve warm.

1 tablespoon extra-virgin olive oil
½ cup finely chopped onion
1 pound Brussels sprouts, trimmed
½ cup sour cream
2 tablespoons bacon bits
1 tablespoon unsalted butter
1 dash hot sauce, or to taste
salt to taste

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir onion until translucent and tender, 2 to 3 minutes. Transfer onion to a large bowl.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add Brussels sprouts, cover, and steam until tender, 10 to 15 minutes. Transfer Brussels sprouts to the same bowl with the onion.
  • Stir sour cream, bacon bits, butter, and hot sauce into vegetable mixture until evenly coated; season with salt.

Fresh herbs, onion and sautéed bacon flavor this easy Brussels sprouts recipe. This savory dish is delicious in the fall and winter months, when Brussels sprouts are in season. If you can find them still attached to the stalk, don't be intimidated--buy them, as they're likely more fresh. Recipe adapted from The Art of Simple Food by Alice Waters.

2 ½ pounds Brussels sprouts, trimmed
4 slices bacon, cut into 1-inch pieces
1 tablespoon extra-virgin olive oil
1 large onion, diced
4 sprigs thyme or savory, plus 2 teaspoons leaves, divided
1 teaspoon salt
Freshly ground pepper to taste
2 teaspoons lemon juice (optional)

Steps:

  • Bring a large pot of water to a boil. If sprouts are very small, cut in half; otherwise cut into quarters. Cook the sprouts until barely tender, 3 to 5 minutes. Drain.
  • Meanwhile, cook bacon in a large heavy skillet over medium heat, stirring, until brown but not crisp, 3 to 6 minutes. Remove with a slotted spoon to drain on a paper towel. Pour out all but about 1 tablespoon bacon fat from the pan.
  • Add oil to the pan and heat over medium heat. Add onion and cook, stirring often, until soft but not browned, reducing the heat if necessary, about 4 minutes. Stir in thyme (or savory) sprigs, salt and pepper. Increase heat to medium-high, add the Brussels sprouts, and cook, tossing or stirring occasionally, until tender and warmed through, about 3 minutes. Remove the herb sprigs. Add the bacon, thyme (or savory) leaves and lemon juice, if using, and toss.
