1/2 cup butter, softened
1-1/4 cups sugar, divided
3 large eggs, room temperature
1 teaspoon anise extract
2 cups all-purpose flour
2 teaspoons baking powder

1/2 cup chopped almonds
2 teaspoons 2% milk

Steps:

  • In a large bowl, cream butter and 1 cup sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extract. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in almonds. , Line a baking sheet with foil and grease the foil. Divide dough in half; on the foil, shape each portion into a 12x3-in. rectangle. Brush with milk; sprinkle with remaining sugar. , Bake at 375° until golden brown and firm to the touch, 15-20 minutes. Lift foil with rectangles onto a wire rack; cool for 15 minutes. Reduce heat to 300°., Transfer rectangles to a cutting board; cut diagonally with a serrated knife into 1/2-in. slices. Place cut side down on ungreased baking sheets. , Bake for 10 minutes. Turn and bake until firm, 10 minutes longer. Remove to wire racks to cool. Store in an airtight container.

1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter (softened to cool room temp (see note))
3/4 cup granulated sugar
1 large egg
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon almond extract (optional)
3/4 cup sprinkles (see note)

Steps:

  • Preheat oven to 350°F. Line two baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking powder and salt. Set aside.
  • Using a hand mixer or stand mixer, beat butter until smooth. Slowly pour in the sugar, mixing as you pour. Beat sugar and butter for a minute, until light and fluffy. Add egg, vanilla extract, and almond extract, mixing until combined and scraping the sides of the bowl as needed. Add in flour mixture and mix until just combined. Add 1/2 cup sprinkles (see note) and stir by hand until combined.
  • Scoop 1½-2 tablespoons of dough and roll into a ball. Place 1/4 cup sprinkles on a plate and press the tops of the dough balls in sprinkles. Place dough balls onto prepared baking sheet leaving about a couple inches for spreading. I like to mound the dough balls higher rather than wider so that they bake up on the thicker side.
  • Bake for 8-10 minutes. The edges should be completely set, and the centers should look slightly under cooked. See note about shaping the cookies immediately after baking. Place the baking sheets on wire racks to cool. Repeat with remaining dough once the baking sheets are completely cool.

3 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon kosher salt
1 cup coconut oil, melted
1 cup sugar
3 large eggs
1 tablespoon clear imitation vanilla extract (such as McCormick)
1/2 cup confetti sprinkles, plus more for topping
Sea salt, for sprinkling

Steps:

  • Preheat the oven to 350˚ F . Whisk the flour, baking powder and kosher salt in a medium bowl; set aside. In a large bowl, whisk the coconut oil and sugar. Whisk in the eggs, one at a time, and then the vanilla. Stir the dry ingredients into the wet ingredients and then fold in the sprinkles.
  • Line a baking sheet with parchment paper. Divide the dough in half, then form each half into a long rectangle, about 4 inches wide, on the baking sheet. Leave a good few inches in between the rectangles because they will spread in the oven. Sprinkle the tops with more sprinkles and a few pinches of sea salt and bake for 25 minutes.
  • Remove from the oven and reduce the oven temperature to 250˚ F. Transfer the rectangles to a cutting board and use a serrated knife to cut them into 1-inch-thick pieces. Place them on their sides on the baking sheet. Return to the oven and bake for 20 more minutes, or until desired crispiness. Transfer to a rack and let cool on the baking sheet.

Flaky salt, such as Maldon, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F.
  • Whisk together the flour, baking powder and salt in a medium bowl and set aside. Whisk together the coconut oil and sugar in a separate large bowl. Whisk the eggs into the coconut oil mixture one at a time, and then the vanilla. Whisk the dry ingredients into the wet ingredients, and then fold in the sprinkles.
  • Line a baking sheet with parchment, divide the dough into 2 parts and form each part into a long rectangle, about 4 inches wide. Leave a few good inches in between the rectangles because they will spread in the oven. Sprinkle the tops with a few pinches of sea salt and bake until firm and just beginning to brown around the edges, about 25 minutes.
