1 medium sweet yellow pepper, chopped
1 medium onion, chopped
2 teaspoons olive oil
3 garlic cloves, minced
1 jar (24 ounces) garden-style spaghetti sauce
1 package (16 ounces) frozen Italian vegetables
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
1/2 pound small red potatoes, quartered
1 cup water
1/3 cup uncooked orzo pasta
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme

Steps:

  • Saute pepper and onion in oil in a Dutch oven until tender. Add garlic; cook 1 minute longer. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes and pasta are tender.

Orzo Vegetable Soup a hearty soup packed with plenty of veggie, leafy greens and tender pasta. These easy flavors come together in a snap and it's a healthy meal packed full of flavor!

3 carrots
2 stalks celery
1 medium onion (yellow onion)
8 cups spinach
1 clove garlic
1 14.5 oz can fire roasted tomatoes
1 cup orzo pasta
4 cups vegetable stock
3 cups water
1 tablespoon olive oil
1 teaspoon italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
Pinch red pepper flakes
1/2 tablespoon lemon ((optional))
1 tablespoon parsley minced ((optional))

Steps:

  • Dice the carrots, celery & onion. Heat a large Dutch Oven over medium heat. When it is good & hot, add the olive oil.
  • Then add the carrots, celery, onion and the spices - Italian seasoning, salt, pepper and red pepper flakes.
  • Sauté for 4-5 minutes until the vegetables begin to soften. Add in the garlic & sauté for about another minute, until the garlic becomes fragrant.
  • Run your knife thru the spinach a couple times, chopping it into bite sized pieces. Add it to the soup pot.
  • Next add the pasta and give everything a good stir, scrape the bottom of the pot to loosen the brown bits. Pour in the tomatoes, stock and water.
  • Increase the heat to high and stir well to combine. Bring to a boil, then reduce the heat to medium - you'll still want to keep it a light bubble and cook until the orzo is cooked thru - about 8-9 minutes.
  • Continue to stir the soup often. The orzo has a tendency to stick to the bottom of the pan. In addition, stirring it will release the starches in the pasta and help to thicken the soup.
  • When the orzo is cooked, remove the soup from the heat. Add a squeeze of fresh lemon juice and about a tablespoon of chopped parsley for bright fresh flavor.

1 small onion, finely chopped
1 cup sliced mushrooms
1 1/2 cups orzo pasta
1 cup sliced baby carrots
1/2 cup green peas
32 ounces chicken broth or 32 ounces vegetable broth
1 cup grated parmesan cheese (plus more for table)
chopped parsley
salt
fresh ground black pepper

Steps:

  • Melt butter in a large heavy saucepan.
  • Sauté onions and mushrooms until tender but not browned.
  • Add orzo and stir to coat.
  • Add carrots, peas and broth. Bring to boil and cook until orzo is tender, about 5 minutes.
  • Remove from heat, stir in Parmesan and cover.
  • Let rest 5-8 minutes. Sprinkle with parsley and season with salt and pepper.

With the appearance of the first zucchinis and chard in my home garden and some below-average summer temperatures, I quickly threw together a hearty summer orzo soup

1 onion
2 cloves garlic
1 carrot
a handful of chard leaves
1 zucchini
1/2 cup peas (fresh or frozen)
1 cup orzo pasta
1 tbsp chopped parsley
1 tbsp olive oil
0,5 l vegetable stock
salt, pepper to taste

Steps:

  • Peel and finely dice one onion and garlic cloves. Peel and slice a carrot. Wash and slice zucchini and chard leaves.
  • In a pot heat olive oil to medium. Add chopped onions and lightly fry until translucent, stirring regularly so as not to burn the onion. Then, add garlic and carrots. Stir well and pour in your stock and let it simmer for about 10 minutes, so that the carrots tenderize.
  • Add orzo pasta, peas and zucchini, season with salt & pepper to taste and let it cook for another 10 minutes until the orzo is cooked al dente.
  • When the orzo is almost done, fold in your sliced chard and chopped parsley, then serve hot.
  • Note: If the soup is too thick, add some hot water.
