Greens, sugar snap peas, and carrots give this soup its lively taste (and colors) and add to its satisfying heartiness.

Vegetable Stock
4 ounces sugar snap peas, thinly sliced on the bias
2 carrots, cut into 1/8-inch rounds
Coarse salt and freshly ground pepper
1 cup canned chickpeas, drained and rinsed
1 cup watercress, large stems discarded
1/4 cup fresh basil, thinly sliced into ribbons
1/4 cup plus 3 tablespoons low-fat cottage cheese (3 1/2 ounces)
1/4 cup soft goat cheese (2 ounces)
2 scallions, thinly sliced
4 thin slices whole-wheat baguette or bread, toasted
Freshly ground pepper

Steps:

  • Make the soup: Bring stock to a gentle simmer in a medium saucepan. Add sugar snap peas and carrots, and simmer for 1 minute. Remove from heat, and season with 1 1/2 teaspoons salt and some pepper. Stir in chickpeas, watercress, and basil.
  • Make the toasts: Stir together cheeses and scallions. Spread onto toasts, and sprinkle with pepper. Serve soup with toasts.

2 tablespoons extra-virgin olive oil
1 leek, white and pale-green parts only, thinly sliced, washed well, and drained
1 stalk celery, thinly sliced
1 carrot, finely chopped
4 cups low-sodium chicken broth
1 piece (about 2 inches) Parmesan rind
4 ounces baby potatoes, scrubbed and cut into 1/4-inch rounds
1 cup shelled green peas (from 1 pound in pods), or 1 cup frozen peas, thawed
8 ounces sugar snap peas, trimmed and cut into 1/2-inch pieces
1/2 bunch asparagus, tips separated, stalks cut into 1/2-inch pieces
Coarse salt and freshly ground pepper
2 tablespoons fresh dill, for serving

Steps:

  • Heat oil in a medium pot over medium. Add leek, celery, and carrot and cook, stirring occasionally, until vegetables are tender, 6 to 8 minutes. Add broth, 2 cups water, and Parmesan rind. Bring to a boil, then reduce to a simmer. Cook, uncovered, until aromatic, about 10 minutes.
  • Add potatoes and simmer until tender, about 8 minutes. Add shelled peas, snap peas, and asparagus tips and stalks; cook, stirring occasionally, until vegetables are bright green and just tender, about 2 minutes. Remove from heat, remove Parmesan rind, and season with salt and pepper. Serve, topped with dill.

Spring Vegetable Soup with Ricotta Toast image

1/4 cup extra-virgin olive oil, plus more for drizzling
12 ounces oyster mushrooms, sliced if large
Kosher salt and freshly ground pepper
5 cloves garlic (4 thinly sliced, 1 lightly smashed)
3 leeks, halved lengthwise, well rinsed and thinly sliced
4 cups low-sodium chicken broth
1 sprig rosemary
4 1-inch-thick slices ciabatta bread
1/2 cup part-skim ricotta cheese
1 teaspoon finely grated lemon zest
1 cup frozen peas, thawed
Shredded pecorino cheese, for sprinkling

Steps:

  • Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the mushrooms, season with salt and pepper and cook, stirring occasionally, until tender and lightly browned, about 5 minutes. Add 1 more tablespoon olive oil and the sliced garlic; cook, stirring, until softened, about 30 seconds. Add the leeks, season generously with salt and cook, stirring, until they start softening, about 3 minutes. Add the chicken broth, rosemary sprig, 2 cups water and 3/4 teaspoon salt. Bring to a boil, reduce the heat to a steady simmer and cook until the vegetables are tender, about 10 minutes.
  • Meanwhile, preheat the broiler. Brush the remaining 2 tablespoons olive oil on both sides of the bread. Broil, turning, until toasted, 3 to 5 minutes. Rub the bread with the smashed garlic. Top with the ricotta and lemon zest; season with salt and pepper.
  • Stir the peas into the soup and heat through; season with salt and pepper. Divide the soup among bowls and serve with the toast. Sprinkle the soup and toast with the pecorino. Drizzle with olive oil.

This satisfying, colorful soup is loaded with chickpeas and vegetables, and it's incredibly easy to make. There's not much more to it than tossing everything into a pot and letting it simmer for a couple of hours (no sautéing!) until everything is tender. Do not forget to finish the soup with a flurry of the rosemary, Parmesan, lemon zest and pepper mixture. It really makes this soup sing.

1 whole clove
1/2 onion, sliced root to stem so it stays intact, peeled
1 pound dried chickpeas, soaked overnight and drained
1 sprig rosemary, plus 1 teaspoon finely chopped leaves
3 garlic cloves, minced
2 fresh bay leaves or 1 dried
1/3 cup extra virgin olive oil
1 1/2 tablespoons kosher salt, more to taste
1 small Parmesan rind, plus 1/2 cup freshly grated Parmesan
1 cup diced tomatoes, canned or fresh
2 medium carrots, sliced into 1/4-inch rounds
2 celery stalks, sliced 1/4-inch thick
Zest of 1 lemon
1/4 teaspoon black pepper

Steps:

  • Insert the clove into the onion. Put the onion in a large pot with the chickpeas, rosemary sprig, garlic, bay leaves, olive oil, salt and cheese rind. Add 5 cups water and bring to a boil over high heat. Reduce heat to low, cover and simmer for about an hour, or until chickpeas are tender.
  • Add the tomatoes, carrots and celery, cover loosely, and simmer until the vegetables are soft, about 25 minutes longer. While soup simmers, mix the chopped rosemary, grated Parmesan, lemon zest and pepper in a small bowl.
  • Season the soup to taste and ladle into bowls. Sprinkle with the Parmesan mixture.

2 medium carrots, diced small
2 celery stalks, diced small
1 medium yellow onion, diced small
3 garlic cloves, minced
1 teaspoon dried thyme

2 cans (15.5 ounces each) cannellini beans, rinsed and drained
1 can (28 ounces) diced tomatoes
4 cups low-sodium vegetable broth
1/4 cup chopped fresh parsley
Grated Parmesan, for serving

Steps:

  • In a large pot, heat oil over medium-high. Add carrots, celery, and onion and cook until onion is translucent, about 6 minutes. Add garlic and thyme and season with salt and pepper; cook until fragrant, about 3 minutes. Add beans, tomatoes, broth, and parsley and bring to a boil. Reduce heat and simmer until vegetables are tender, 25 to 30 minutes. Season to taste with salt and pepper. Divide soup among four bowls and serve with Parmesan.
