ANN'S ROASTED POTATO SALAD



Ann's Roasted Potato Salad image

11 tablespoons olive oil, divided
6 garlic cloves, chopped
1 teaspoon salt
1/2 teaspoon ground pepper
Handful chopped fresh thyme and rosemary leaves
3 pounds russet potatoes, cut into large dice
2 tablespoons white vinegar
2 teaspoons Dijon mustard
1/4 cup chopped shallots
1 cup chopped basil leaves

Steps:

  • Preheat oven to 375 degrees F.
  • Mix 6 tablespoons of olive oil, the garlic, salt, pepper and herbs. Add potatoes and toss. Spread out onto a baking sheet and bake for 55 minutes, stirring occasionally. When potatoes are golden brown remove the pan from the oven and let cool. When potatoes are cool, place them in a bowl and scrape the pan drippings into a measuring cup. Add enough oil to the drippings to measure 6 tablespoons of oil. Whisk the vinegar and mustard in a small bowl. Gradually add the oil and then mix in the shallots. Pour the dressing over the potatoes and combine. Season with salt and pepper, if needed. Add chopped basil. Let stand for 1 hour at room temperature. Serve.

1/4 cup finely chopped shallots
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon pepper
2 lb baby Yukon gold or red potatoes (each about 1 1/2 inches in diameter), cut in half
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb fresh asparagus spears, cut into 2-inch pieces (about 3 cups)
3 cups baby arugula

Steps:

  • Heat oven to 450°F. Spray 18x13-inch rimmed baking pan with cooking spray.
  • In small bowl, mix dressing ingredients with whisk.
  • Place potatoes in center of baking pan, and drizzle with 1 tablespoon of the oil; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss to coat. Spread in single layer in pan. Roast 30 minutes, turning once.
  • In medium bowl, toss asparagus with remaining 1 tablespoon oil.
  • Remove potatoes from oven, and arrange asparagus on baking pan with potatoes. Roast 5 to 7 minutes or until potatoes are lightly browned and asparagus is tender.
  • Transfer roasted vegetables to serving bowl. Add dressing; toss to coat. Let stand 15 minutes to allow vegetables to absorb dressing. Add arugula; toss to combine. Serve immediately.

2 tablespoons olive oil, plus more for the pan
1 1/2 pounds red potatoes
1 small red onion
1 clove garlic , finely minced
1 teaspoon dried dill weed, or 1 tablespoon fresh chopped dill
1 tablespoon chopped fresh chives
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper (freshly ground)
1/2 cup mayonnaise
3 tablespoons sour cream
1 tablespoon freshly squeezed lemon juice

Steps:

  • Gather the ingredients.
  • Pre heat the oven to 425 F. Line a 9 x 13 x 2-inch baking pan with foil; brush the foil lightly with a small amount of olive oil.
  • Scrub the potatoes. Peel, if desired, and then cut them into bite-sized pieces, about 1/2 inches to 3/4 inches big.
  • Peel the red onion and cut it into 1/2-inch pieces.
  • In a large bowl or in a food storage bag, toss the potatoes and onion chunks with the olive oil, garlic, dill weed, chives, salt, and pepper.
  • Transfer the potato mixture to the baking pan and bake for 45 to 55 minutes, or until potatoes are tender. Stir occasionally so the potatoes will brown evenly.
  • Let the potatoes cool completely.
  • Combine the mayonnaise, sour cream, and lemon juice in a small bowl.
  • Toss the mayonnaise mixture with the potato mixture, adding more mayonnaise if needed.

2 pounds Yukon gold potatoes
Salt
8 ounces extra-virgin olive oil
Black pepper
1 fennel bulb with fronds
1 bunch celery hearts with leafy tops
1 teaspoon Dijon mustard
2 tablespoons cider vinegar
1 tablespoon fennel seeds, toasted

Steps:

  • Preheat oven to 450 degrees F.
  • Cut potatoes into quarters, cover with water, salt the water, and bring to a simmer. Simmer until tender and drain, letting all the steam evaporate. When dry and cool, toss with 4 ounces extra-virgin olive oil and season with salt and pepper, to taste. Place in a single layer on a roasting pan and roast for 30 minutes until tender and golden brown. The potatoes will need to be stirred while roasting to insure all sides are nicely browned.
  • While potatoes are roasting, "shave" the fennel using a mandoline or the slicing side of a box grater. Thinly slice celery stalks and tops. Reserve.
  • Make the vinaigrette: In a large bowl, whisk together the Dijon mustard, vinegar, and salt, to taste. Gradually whisk in the remaining 4 ounces extra-virgin olive oil. Fold in fennel seeds and season with salt and pepper, to taste.
  • Remove roasted potatoes from oven and allow to slightly cool. Add potatoes and their oil to the vinaigrette bowl. Top with shaved celery and fennel and toss.

6 cups water
1/2 pound fresh green beans, cut into 1-1/2-inch pieces
1 large whole garlic bulb
2 pounds small red potatoes, quartered
1/4 cup chicken broth
2 medium sweet red peppers, cut into large chunks
2 green onions, sliced
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 teaspoons sugar
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/2 teaspoon salt

Steps:

  • In a large saucepan, bring 6 cups water to a boil. Add beans; bring to a boil. Cover and cook for 3 minutes. Drain and immediately place beans in ice water; drain and pat dry., Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulb. Place cut side up in a greased 15x10x 1-in. baking pan. Add potatoes; drizzle with broth. Bake, uncovered, at 400° for 30-40 minutes or until garlic is softened., Remove garlic; set aside. Add the red peppers, onions and reserved beans to the pan. Bake 30-35 minutes longer or until tender. Cool for 10-15 minutes. , Squeeze softened garlic into a large bowl. Stir in the vinegar, oil, sugar, rosemary and salt. Add vegetables; toss to coat. Serve warm or cold.

6 cups diced peeled cooked potatoes
4 hard-boiled large eggs, chopped
1/2 cup chopped celery
1/2 cup chopped sweet pickles

1/2 cup mayonnaise

1 tablespoon white vinegar
1 tablespoon milk
1-1/2 teaspoons prepared mustard

This potato salad has a bit of a kick to it from the dry mustard. Easy, light and delicious. I serve this with Roasted Green beans for an all vegan menu. Cut the potatoes to your liking or, if small enough leave whole. I soak the scallions in cold water as they are a bit strong for me.

1/4 chopped parsley
1/4 cup olive oil
2 tablespoons white vinegar

  • Cook new potatoes in boiling salted water to cover for 15-20 minutes.
  • Peel .
  • Toss warm potatoes with scallions.

Let them sit in the ice bath for several minutes, then drain.
  • Make the vinaigrette. In a medium bowl, whisk together the lemon juice, garlic, shallot, dijon, olive oil, salt, and pepper. Set aside.
  • Once potatoes are finished roasting, let cool for a few minutes, then add to a large bowl along with the asparagus, red onion, radishes, two-thirds of the vinaigrette, and a couple big pinches of salt and several grinds of freshly cracked black pepper. Toss to combine. Add the herbs and toss once again. Season to taste with additional salt and pepper if desired. Serve immediately with the extra vinaigrette!
