SPRING HILL RANCH'S SAZóN SEASONING
Sazón is a traditional Latin-American and Caribbean/West Indian seasoning mix. It is usually available in the Latin section of larger supermarkets, but we don't have any of them here in the puckerbrush of rural New Mexico. 1 1/2 teaspoons of this seasoning is the equivalent of 1 small packet of the commercial stuff. Steps:
- 1. In batches, use a spice grinder to grind the peppercorns, oregano, dried culantro leaves (or coriander seeds, if using), and cumin seeds, placing the powder in a small mixing bowl.
- 2. Add the granulated garlic, annatto and salt (if using). Mix it all up well. Store the seasoning in an airtight container in a cool dry place for up to six months, or in the freezer for two years.
SPRING HILL RANCH'S REFRIED BEAN DIP
This is absolutely the best bean dip anywhere. Enjoy it with tortilla chips, or add some to your tacos or burritos. Don't tell anyone, but I even serve it in lieu of regular refried beans as a side dish!

Steps:
- In the bowl of a food processor, place the beans, jalapeños, brine, salt, sugar, sazón (if using), onion powder, paprika, garlic powder and cayenne. Pulse-process until the mixture is smooth. Transfer the dip to a bowl and place it in the 'fridge for at least an hour before serving. Store it in the refrigerator.
SAZON
This is a copycat version of sazon, which I always use in Puerto Rican dishes. Other versions of this recipe call for only paprika or turmeric. I find adding both achieves the reddish-orange color without affecting flavor. The salt in this recipe can be reduced or omitted as many dishes call for additional salt. I prefer to omit and just add salt as needed to dishes while I'm cooking. I hope you will enjoy it!
