HOMEMADE DEVILED HAM SPREAD
I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

Steps:
- Place ham, mayonnaise, mustard, hot pepper sauce, garlic powder, onion powder, celery salt, black pepper, paprika, and caraway seeds in a large mixing bowl. Stir to combine.
- Use an immersion blender or food processor to puree the ingredients to your desired texture; stir in onion and celery. Chill before serving.

- 1. Cut the eggs in half lengthwise. Remove the yolks to a mixing bowl and use a fork to mash them. Add the deviled ham, mustard, mayonnaise, and black pepper and mix it all together well. Spoon or pipe the filling into the egg white halves. Garnish each deviled egg with an olive slice, chopped chives and a sprinkle of paprika.

I've always loved deviled ham...you know, the stuff that comes in that little can wrapped in white paper? It goes great in sandwiches or on crackers. You can even put it in omelets or put a few dollops on a helping of macaroni and cheese!

- 1. Place the diced ham in the bowl of a food processor with a metal blade in place. Pulse to a consistency of wet coarse sand. Move the ham to a medium mixing bowl and stir in the mayonnaise, mustard and hot pepper sauce until everything is well blended. Refrigerate until ready to use.
DEVILED HAM SPREAD
Going through old family recipes I found this one from my Mom's cousin. Mae had a reputation as an excellent cook and this is a testimony to her culinary skills! It is so quick and easy to make! This is especially nice to serve during the upcoming winter holidays. You can make about 30 tea sandwiches with this recipe. Or use it as a dip for crackers or even filling for celery sticks! I hope you will enjoy it and also the compliments that are sure to come your way! Note: Prep time does NOT include chilling or making sandwiches or filling celery sticks.

- 1. Cut the eggs in half lengthwise and pop the yolks into a medium mixing bowl. Set the whites aside.
- 2. To the bowl with the yolks, add the Spam cubes and mayonnaise. With the back of a fork, mash it all together until the mixture is relatively smooth.
- 3. Add the lemon juice, mustard, sugar, pepper sauce, and green onions. Mix well and add a little salt and pepper to your liking. If the mixture is too stiff add a little more mayonnaise and mix.
- 4. Spoon or pipe the filling back into the egg whites. If desired, dust the tops of the eggs with paprika or pico de gallo. Cover and refrigerate at least one hour before serving.
