It wasn't 'til a few years ago that I found a recipe close to the one they used and with just a little adjustment it was spot-on! So then I couldn't leave well enough...

Number Of Ingredients 20

2 Tbsp canola or vegetable oil
1 c (about 1 small) finely chopped yellow or white onion
1 c (about 1 medium) finely chopped green bell pepper
1 1/2 lb ground beef (80/20)
1 c ketchup
2 Tbsp prepared yellow mustard (not the fancy stuff!)
1 Tbsp cider vinegar
1 Tbsp dark brown sugar (light/golden brown sugar is okay)
1/4 tsp ground cloves
1 tsp kosher salt
TO MAKE THIS INTO SLOPPY JOSéS:
2 medium new mexico green chiles, roasted, peeled and diced or 1 7-ounce can of diced green chiles
1 medium jalapeño chile, seeds and veins removed, diced
1 Tbsp hot pepper sauce (i.e. frank's® or tabasco®)
1 Tbsp dried mexican oregano flakes
1/2 tsp ground cumin (freshly ground if available)
FOR SERVING:
4 split and toasted sandwich buns; or
8 fresh 8" flour tortillas; or
4 large baked potatoes

Steps:

  • 1. In a large skillet over medium heat, heat the canola oil. Add the onion, and green pepper. Cook until slightly softened. Add the ground beef. Cook until the beef is browned, and drain off the excess grease.
  • 2. Meanwhile, in a medium mixing bowl, stir together ketchup, vinegar, mustard, brown sugar, ground cloves, and salt.
  • 3. For Sloppy Josés, mix the green chiles, jalapeño, hot pepper sauce, oregano and cumin into the ketchup mixture.
  • 4. Stir the ketchup (or ketchup/chile) mixture into the browned beef mixture. Cover the pan and simmer it for 30 minutes.
  • 5. Serve it up either open-faced or closed-faced on the buns, wrapped in flour tortillas or over hot baked potatoes.

1 beef tongue
3 cups vinegar
4 cups water
1 cup sugar (to taste)
2 large onions, sliced
1 teaspoon pickling spices
1 teaspoon mustard seeds
1 bay leaf
6 garlic cloves

Steps:

  • Boil tongue in salt water for 3 hours. Peel skin from the tongue.
  • Mix remaining ingredients in a large, nonreactive pot and bring to a boil.
  • Add meat and boil for 10 minutes.
  • Cool and store in refridgerator for one week.
  • Slice tongue thinly to serve.

3/4 c soy sauce (low sodium is fine)
2 clove garlic, minced or pressed
2 Tbsp dark brown sugar (light brown sugar may be used)
2 Tbsp tomato paste
2 Tbsp chili powder (use good stuff!)
1 Tbsp ground cumin (freshly ground if possible - it does mnake a difference!)
1/2 tsp ground cayenne pepper (less if you are ummm...heat sensitive)
2/3 c vegetable oil

Steps:

  • 1. In a small mixing bowl, whisk together the soy sauce, garlic, brown sugar, tomato paste, chili powder, cumin and ground cayenne. While whisking vigorously, drizzle in the oil. Store and marinate in the refrigerator.

2 1/2 to3 lb beef tongue
2 medium carrots, chopped
15-20 sprig(s) fresh parsley
2 medium bay leaves
15 peppercorns
1 medium white onion, peeled and quartered
FOR THE SAUCE:
1/4 c olive oil
8 clove garlic, peeled and crushed
2 medium white onions, peeled and diced (about 2 cups)
1 large green bell pepper, diced (about 1 1/2 cups)
1 can(s) (28 ounces) diced tomatoes, drained
1/4 c chopped parsley (or 2 tablespoons dried parsley flakes)
5 c beef broth or stock
we often throw 2 or 3 chopped potatoes in while making the sauce

Steps:

  • 1. Place the beef tongue, chopped carrots, parsley, bay leaves, pepper corns and quartered onion in a 6 qt pot (or pressure cooker) with sufficient water to cover. Bring to a boil, then reduce to rolling simmer covered for 2 1/2 hours. If cooking in a pressure cooker, cook at high pressure (15 psi) for 60-75 minutes, then allow pressure to release normally.
  • 2. Remove the tongue. Peel off the skin and trim the underside a bit. Discard the first 1/4" slice from the back. Then cut 1/4" slices crosswise to tip of tongue. You then add these slices to the prepared sauce (directions following) and simmer covered for about 45 minutes after which you continue simmering for one hour uncovered, stirring occasionally. Then serve the slices covering them with the sauce.
  • 3. For the sauce: While the tongue is cooking, in a 6 quart saucepan sauté the garlic, onion and green pepper in oil. Add the tomatoes, and parsley. Simmer until the tomatoes are tender, about 10 minutes. Add the beef stock, cover the pot and simmer it for 1 hour. Remove the cover and simmer it for another hour to allow reduction and thickening, stirring occasionally. Add the tongue slices as described above to finish the cooking process.

1 beef tongue
2 c vinegar
1/4 c sugar
1 tsp salt
1 Tbsp pickling spice

Steps:

  • 1. Cover tongue with cold water; simmer for 1 hour or until tender.
  • 2. Drain and reserve 2 cups broth. Cool tongue until able to handle, then peel off thick covering.
  • 3. Combine reserved broth with remaining ingredients. Place tongue in a bowl or jar. Cover with vinegar mixture.
  • 4. Cover, chill for 48 hours. Remove from vinegar mixture slice and serve.
  • 5. NOTE; When a recipe call's for vinegar it is most likely white vinegar unless stated apple cider vinegar.

2 Tbsp salted butter, softened
2 Tbsp roquefort cheese (or bleu, gorgonzola or stilton), crumbled
1/2 tsp grated horseradish (not horseradish "sauce")
1/2 lb very thinly sliced cooked and trimmed beef tongue
garnish: fresh parsley leaves or dill weed

Steps:

  • 1. In a small mixing bowl, combine the butter, Roquefort cheese and horseradish, mashing and mixing it thoroughly with a fork.
  • 2. Lay out your strips of tongue out on a flat surface. Place a thin layer of the butter mixture onto each slice of tongue. Place a small bit of parsley or dill on each side. Roll or fold over the tongue so that the bits of the parsley or dill are showing at the ends. Secure them with toothpicks. Cover and refrigerate the appetizers until you are ready to serve them.
