Spring greens with bacon image

Combine rich greens with salty bacon and a little nutmeg to make a versatile side dish

700g spring green , roughly shredded
8 rashers smoked streaky bacon , chopped
a little nutmeg

Steps:

  • Bring a large pan of water to the boil, add spring greens and cook for about 5 mins until tender, then drain well.
  • Meanwhile, heat a non-stick frying pan, add bacon and cook until crisp. Tip in the greens, toss and warm through. Grate over nutmeg, season, and serve.

A seasonal and delicious take on a traditional saag recipe.

600 g Potatoes (chopped into 2cm cubes)
200 g Spring Greens (loosely chopped into thick ribbons)
1 head Calabrese Broccoli (thinly sliced into 1/2cm thick peices)
700 ml Vegetable Stock
2 Tablespoons Sunflower Oil
2 Medium Green Finger Chillies (thinly sliced)
2 Medium Onions (finely diced)
4 Cloves Garlic (finely diced)
20 g Fresh Ginger (peeled and finely diced)
2 Teaspoons Cumin Seeds
2 Teaspoons Coriander Seeds
1 Teaspoon Ground Turmeric
1 (400g) Can Chickpeas (drained and rinsed)
15 g Fresh Coriander (finely chopped)

Steps:

  • First cook the potatoes. Place them into a large saucepan and cover with water. Boil for 8-10 minutes until just cooked. Drain and reserve.
  • In a separate pan combine the chopped spring greens, broccoli and stock. Bring to a boil and cook for 2-3 minutes until the broccoli has started to soften and the greens have wilted.
  • Pour the stock and greens into a food processor and whizz until smooth. Reserve until needed.
  • Heat the sunflower oil in a large pan over a medium heat. Toss in the cumin and coriander seeds and toast for about a minute until they begin to release their fragrance.
  • Tip in the chopped chillies, onion, garlic and ginger. Fry for 4-5 minutes until the onion is soft and is starting to take a little colour.
  • Pour in the cooked potatoes, chickpeas and turmeric. Combine evenly with the cooking veggies and spices. Then pour in the blended greens. Simmer for 5 minutes.
  • Remove the pan from the heat and season to taste. Finish the saag with the chopped fresh coriander sprinkled over the top.

  • While the pasta cooks, heat the butter and oil in a large skillet over medium heat. Add the spinach in batches, cooking until wilted, about 4 minutes. Add the garlic and peas, and sauté until fragrant, about 2 minutes more.
  • Reserve 1 cup of the pasta cooking water, then drain the pasta. Add the pasta and the reserved pasta water to the skillet and toss well to combine. Add the Parmesan and stir until the mixture is creamy, about 2 minutes more.
  • Season the pasta with salt and pepper (and red pepper flakes, if using). Garnish with almonds and Parmesan cheese before serving.

  • Trim the base of the spring greens and chop roughly into pieces. Cook them in a pan of boiling water for about 4 minutes, until tender. Drain and toss with salt and pepper to season and add a large knob of butter.
  • Heat a little olive oil in a pan, and fry the bacon for a couple of minutes until browned. Add sliced spring greens and cook for a further 5 minutes, stirring continuously. Season with pepper. For a bit of added flavour try mixing some caraway seeds in with the greens, or some shredded wild garlic leaves.
  • Cut 2 or 3 bunches of greens into strips. Heat a little sunflower oil in a pan and stir fry the greens for about 2-3 minutes with a couple of chopped garlic cloves and one small fresh chilli, chopped (or chilli flakes). Add a couple of shakes of soy sauce just before serving.
  • Heat some oil suitable for frying in a pan and add the chicken or pork. Fry on one side until coloured (about 3 minutes) then turn and smear with a little honey and mustard. Add some chopped fresh ginger, some sliced spring greens and a little lemon juice. Cook for another 3-5 minutes or until the meat is cooked through. Season, add some chopped parsley if you wish and serve with buttered noodles or mashed potatoes.
