Number Of Ingredients 15

2 hearts of romaine, chopped
1 cup cherry tomatoes, cut in 1/2
1/2 cup roasted salted almonds, roughly chopped, plus more for garnish
G's Green Goddess Dressing, recipe follows
Kosher salt and freshly ground black pepper
1/4 cup crumbled feta
2 tablespoons roughly chopped flat-leaf parsley
2 tablespoons roughly chopped tarragon
2 tablespoons roughly chopped basil
1 small shallot, roughly chopped
1 clove garlic, roughly chopped
1/2 cup buttermilk
1/2 cup light sour cream
2 tablespoons Champagne vinegar
Juice of 1/2 lemon

Steps:

  • In a large salad bowl, toss lettuce, cherry tomatoes, and almonds. Drizzle with the Green Goddess Dressing and season with salt, pepper, and then toss again. Serve on plates and top with more almonds and a sprinkling of feta.
  • Add the parsley, tarragon, basil, shallot, garlic, buttermilk, light sour cream, vinegar, and lemon juice to a blender or food processor and blend until smooth.

1/2 red onion, halved, thinly sliced
2 hearts romaine, chopped
1/2 cup mayonnaise
1/2 cup sour cream
1/4 English cucumber, including peel, sliced
1 anchovy fillet, rinsed, patted dry, and roughly chopped
1 garlic clove
1/4 cup fresh cilantro leaves
1 tablespoon red wine vinegar
Salt and freshly ground black pepper

Steps:

  • In a large bowl combine onion slices and romaine. Set aside.
  • In a food processor, combine all the dressing ingredients and puree until smooth. Adjust seasoning, to taste. Pour half of the dressing over salad and toss. Refrigerate remaining dressing.

  • Preheat oven to 375 degrees Fahrenheit. Place asparagus on a cookie sheet and lightly coat with olive oil and salt and pepper. Roast for 5-10 minutes (depending on the thickness of the spears). You want the asparagus to be barely tender, not limp. Set them aside to cool.
  • DRESSING: Thinly slice one shallot bulb and place it in a small bowl. Zest half a lemon in the bowl, then squeeze the juice from the whole lemon (2-3 TBSP). Add Olive oil according to your taste. Start with 1 TBSP of Olive oil and add more if needed.
  • In a large bowl, gently toss and coat roasted asparagus, mixed greens, chopped basil, zucchini ribbons, peas, and sliced radishes in the lemon dressing, adding salt and pepper to taste.
