Spring Radish Salad image

Provided by Geoffrey Zakarian

Categories     side-dish

Time 30m

Yield 6 servings

Number Of Ingredients 15

2 cups grapefruit juice
2 tablespoons chardonnay vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1 teaspoon soy sauce
Kosher salt and freshly ground black pepper
1/2 cup olive oil
2 cup mixed thinly shaved radishes, such as red, icicle, Easter egg, watermelon, black, purple ninja, etc.
2 cups watercress
1 bulb fennel, thinly shaved
2 avocados, cut into quarters
1 pink grapefruit, segmented
1 orange, segmented
Kosher salt and freshly ground black pepper
1/4 serrano chile, finely diced

Steps:

  • For the dressing: In a small pot, bring the grapefruit juice to a simmer over medium-low heat. Reduce the juice to 1/4 cup. Set aside to cool.
  • In a medium bowl, whisk together the reduced grapefruit juice, vinegar, mustard, honey and soy sauce and season with salt and pepper. Slowly drizzle in the olive oil and whisk until emulsified.
  • For the salad: Combine the radishes with the watercress and fennel in a medium bowl and toss with a small amount of the dressing. Arrange the avocado, grapefruit and orange on a platter, drizzle with the dressing and season with salt and pepper. Sprinkle on the serrano, then top with the dressed radish mixture and serve.

SPRING CELEBRATION SALAD

Spring celebration salad image

Celebrate spring with this salad using the season's most exciting food, including new potatoes, asparagus and peas. It's even better if you make your own mayo

Provided by Rosie Birkett

Categories     Dinner, Lunch, Supper

Time 50m

Number Of Ingredients 16

300g Jersey Royal new potatoes , scrubbed clean but not peeled, big ones cut in half
1 mint sprig
2 eggs
200g asparagus , woody stalks removed and saved
50g fresh peas , podded
4 tbsp mayonnaise (see recipe below, or use shop-bought)
1 green apple (we used Granny Smith), cored and finely chopped
3 spring onions , finely sliced
1 tsp capers , drained
2 tbsp olive oil
1 tbsp white wine vinegar
1 Little Gem lettuce , leaves washed and dried, heart split in two
3-4 handfuls of soft herbs (we used chervil, tarragon, parsley, mint and chives)
2 slices of sourdough or white baguette
drizzle of olive oil
3 garlic cloves

Steps:

  • Heat oven to 200C/180C fan/gas 6. Drizzle the bread with some olive oil and season, then roast in the oven, turning halfway through, for 12-15 mins or until crisp and golden. Once baked, rub with the raw garlic and break or cut into croutons.
  • Bring a pan of water to boil. Add the potatoes, mint and 1 tsp salt and simmer for 15 mins until the potatoes are tender. Don't be afraid of overcooking them - they're far better tender than chalky. Drain the potatoes and discard the mint sprig.
  • Meanwhile, bring another pan of water to the boil and lower the eggs into the water. Bring back to the boil and cook for 6 mins. Drain, then run the eggs under cold water to cool. Tap the eggs on the work surface and peel.
  • Bring another pan of salted water to the boil. Chop the asparagus spears into three and boil in the water for 3-4 mins until just tender. Scoop out with a slotted spoon and refresh in cold water. Bring the water back to the boil and add a pinch of sugar. Add the peas to the water and cook until tender (about 2-3 mins). Drain.
  • Toss the potatoes with 2 tbsp mayo and the apple, spring onions and capers. Whisk the olive oil and white wine vinegar together, season, then dress the lettuce and soft herbs along with the asparagus and peas. Spread the remaining mayo across your plate, top with the potatoes and dressed salad, halve the eggs and add more mayo, if you like. Garnish with the croutons and extra herbs. Homemade mayoIn a large bowl, whisk 2 egg yolks, ½ tsp salt, 1 tsp Dijon mustard and the juice of ½ lemon. Still whisking, add 200ml vegetable oil a drop at a time, increasing to a stream once it starts emulsifying. If it splits, just add a squeeze of lemon and whisk vigorously - it will come together. Add 100ml extra virgin rapeseed oil, whisking, to finish the mayo, then add 2 tbsp water, a pinch of cayenne pepper and a pinch of white pepper. Whisk until creamy.

18 BRIGHT AND DELICIOUS SPRING SALADS - THE SPRUCE EATS

From thespruceeats.com
Estimated Reading Time 7 mins
  • Hearty Chopped Salad. Chopped salads are all the rage, and for good reason. Dicing up the components into similar-sized pieces results in more effective distribution than a traditional tossed salad.
  • Creamy Garden Potato Salad. Just because it's a salad, doesn't mean it has to be lettuce-based. Replace the frozen vegetables with fresh ones in this classic potato salad that's packed with veggies and accented with hard-boiled eggs.
  • Classic Spinach Salad. Spinach salad may have had its moment in the 90s, but this delicious, iron-rich leafy green dish never left our rotation. Baby spinach will be everywhere once the weather warms up, so grab a bag and toss this easy salad together.
  • Green Pea Salad with Creamy Dressing. Showcase the fresh flavor and snappy texture of fresh spring peas with this Southern-style green pea salad. A combination of green, red, and yellow bell peppers add color and sweetness, while red onion adds a zing to contrast with the creamy dressing.
  • Rice Salad with Lemon Dressing. You might not think of rice when you think of salad, so let this colorful vegetable dish change your mind. It's packed with spring veggies, like spinach, green onions, carrots, tomatoes, red bell peppers, parsley, and summer squash, all brightened up with a lemon-spiked dressing.
  • Glazed Salmon Salad. Quickly caramelized salmon fillets are an ideal addition to this glazed salmon salad recipe. It's an easy recipe that will have dinner on the table in 30 minutes.
  • Shaved Asparagus and Arugula Salad. We can't get enough asparagus in the spring, and this delicious asparagus salad is one of the reasons. Shaves or thinly slice these tender seasonal spears, and toss with peppery arugula and protein-packed edamame.
  • Fattoush Salad with Tomato and Asparagus. Fattoush is the Middle Eastern answer to panzanella, or bread salad, using pita instead of crusty bread. This extra-crunchy salad is definitely not low-carb, but it is a great way to enjoy fresh spring asparagus and tomatoes in a new presentation.
  • Spring Greens and Beans. Combine your favorite spring greens, crisp green beans, and freshly grated ginger in this zippy salad that makes an excellent side dish for simple grilled meat or fish.
  • Quinoa, Tuna, and Chickpea Salad. Grain salads are popular right now for a reason: they're delicious, pack in the protein, and make a nice change from leafy greens while still being healthy, hearty, and tasty.

  • Strawberry Cucumber Salad. This lovely salad is so easy, and thanks to the strawberries, there’s even a good chance your kids might eat it!
  • American Potato Salad. The peppery radishes are just the right counterpoint for America’s favorite creamy salad. Potato salad is welcome at every summer meal.
  • Asparagus, Tomato and Feta. Asparagus is another miracle of spring. If you don’t grow it yourself, head to the store to buy fresh stalks. It’ll make the perfect addition to your salads, and you won’t be able to enjoy it 100% fresh for much longer.
  • Arugula, Pesto, and Tomato Salad. This is one of my favorite spring salad recipes to date. It’s fresh and crisp, and the mozzarella gives it an extra great taste.
  • Cucumbers with Peas and Mint. This salad is simple and perfect for those spring days when you don’t want to put a lot of work into making a healthy meal.

COMMENTS ON: SPRING CELEBRATION SALAD
I've just made your salad and it really is Spring in a bowl. Thank you! I tweaked - added purple sprouting broccoli which just shouts "Spring" here in the UK, chucked a few leaves at it and shaved Parmesan on top - but it's a winner. I would never have come up with using butter in a dressing and its soooo good. We'll be making this again and again. Awesome!
