SWEET, SALTY, SPICY PARTY NUTS



Sweet, Salty, Spicy Party Nuts image

I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.

Cooking spray
1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1 large egg white
1 cup salted cashews
1 cup pecan halves

1/2 cup dried cranberries

Steps:

  • In a small bowl, combine the brown sugar, cinnamon and cayenne; set aside. In a large bowl, whisk egg white; add nuts and cranberries. Sprinkle with sugar mixture and toss to coat. 3/4 cup sugar
3 tablespoons water
1 egg white, lightly beaten
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
2 cups pecan halves
1-1/2 cups whole unblanched almonds

Steps:

  • In a large bowl, combine the first eight ingredients. Add nuts and stir until coated. Spread in a greased 15x10x1-in. baking pan. , Bake at 250° for 45 minutes or until golden brown, stirring every 15 minutes. Spread on a waxed paper-lined baking sheet to cool. Store in an airtight container.

1 teaspoon salt
2 tablespoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 tablespoon water
1 egg white
1 cup pecan halves
1 cup whole cashews
1 cup walnut halves
1 cup red and green candy-coated chocolate candies

Steps:

  • Heat oven to 300°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, beat sugar, salt, cinnamon, ginger, cloves, nutmeg, water and egg white with electric mixer on high speed 1 to 2 minutes or until mixture is frothy. With rubber spatula, fold in nuts until evenly coated. Spread mixture evenly in pan.
  • Bake 45 to 50 minutes, stirring occasionally, until nuts are fragrant and toasted. Cool completely in pan, about 30 minutes. Stir in chocolate candies. Store in tightly covered container.

4 cups unsalted mixed nuts (such as almonds, walnuts, cashews, peanuts)
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.

1 cup turbinado or demerara sugar
1 Tbsp kosher salt
1/8 tsp cayenne pepper
1 tsp ground cinnamon
1 large egg white, room temperature
1 Tbsp water
1/2 lb raw walnut halves
1/2 lb raw pecan halves

Steps:

  • Preheat oven to 300˚F. Line a baking sheet with parchment paper.
  • Mix sugar, salt, cayenne, and cinnamon in a medium-sized bowl, making sure there are no lumps. Set aside.
  • In the bowl of a stand mixer fit with the whisk attachment, or by hand with a whisk, beat egg white and water on medium speed until frothy but not stiff, about 1 minute. Add walnuts and pecans, and stir to coat evenly.
  • Sprinkle with the sugar mixture, and toss until evenly coated. Spread in a single layer on the prepared cookie sheet.
  • Bake for 30 minutes, stirring occasionally. Remove from oven and, using a spatula, gently separate nuts to make sure they are not touching to prevent them from sticking together. Cool completely on the baking sheet.
  • When completely cool, pour the nuts into a bowl and serve or store in an airtight container. Nuts can be stored for 3-4 weeks.

1 egg white
1 cup cashews, unsalted
1/2 cup pecan halves, unsalted
1/2 cup almonds, unsalted
1/4 cup white sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 325F degrees.
  • Grease a baking sheet and set aside.
  • Beat egg white in a large bowl with a fork or whisk until foamy.
  • Stir in two cups of unsalted nuts until coated (amounts listed are my favourites, but any combination can be used, as can other nuts such as peanuts or walnuts).
  • Stir in sugar and spices; toss with nuts until coated.
  • Put nuts onto prepared baking sheet.
  • Spread out well.
  • Bake, stirring often, until golden-- about 20-25 minutes .
  • Cool completely.
  • Store in an airtight container.
