Time 35m

Yield 8

Number Of Ingredients 12

3 ¼ cups all-purpose flour, or more as needed
1 envelope Fleischmann's® Pizza Crust Yeast or RapidRise Yeast
1 ½ tablespoons sugar
1 ½ teaspoons salt
1 ⅓ cups very warm water (120 degrees to 130 degrees F)*
⅓ cup Mazola® Vegetable Plus! Oil
Green, red and yellow bell peppers
Mushrooms
Black olives
Pepperoni slices
Curly leaf parsley or other fresh herbs
1 pound shredded white and yellow cheeses such as mozzarella and cheddar

Steps:

  • Preheat oven to 425 degrees F.
  • Combine 2 cups flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute.
  • Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky. Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. Divide dough into 8 portions; cover. (If using RapidRise Yeast, let dough rise at this point for 10 minutes.)
  • Pat each portion of dough with floured hands into an 8-inch circle on a greased baking sheet. Form a rim by pinching the edge of the dough. Add a second crust to the same baking sheet.
  • Bake for 6 to 7 minutes, dough will be just set and only lightly browned on the bottom. Remove crusts to a wire rack to cool. Continue with remaining pizza dough. (Works best to use several baking sheets.) May use crusts immediately or place in freezer bags and freeze for up to 1 month.
  • When ready to bake, preheat oven to 475 degrees F. Spread each crust with pizza sauce. Top with desired toppings to make Halloween designs! Repeat with remaining pizzas. Place on a baking sheet and bake for 6 to 8 minutes, until cheese is melted and lightly browned and bottom of crust is browned.

SPOOKY PIZZA

Spooky Pizza image

The Halloween pizza was inspired by the way my mom and I eat pizza--taking a cold salad and putting it on top of a warm pizza. Also, when my daughter Xea was little, we always had pizza before we went trick or treating.

Time 45m

Yield 4 servings

Number Of Ingredients 17

1 cup high-quality, finishing extra-virgin olive oil
4 tablespoons chopped fresh parsley
1 tablespoon chopped Calabrian chiles
1 tablespoon chopped fresh oregano
15 cured black olives, chopped
5 anchovy fillets, chopped
Kosher salt
2 cups canned San Marzano plum tomatoes
2 tablespoons extra-virgin olive oil
2 cloves garlic
Kosher salt
6 large fresh mozzarella balls
Two 10-ounce premade balls of pizza dough
High-quality, finishing extra-virgin olive oil, to drizzle
2 cups picked arugula
1 lemon, cut in half
Freshly grated Parmigiano-Reggiano, for garnish

Steps:

  • For the salsa verde: Mix the finishing oil, parsley, chilies, oregano, olives and anchovies in a small bowl. Taste and adjust the seasoning with salt, if needed, and reserve.
  • For the pizza: Preheat a pizza oven to 550 degrees F. If using a regular oven, put a pizza stone in the bottom and preheat the oven to 550 degrees F.
  • Blend the plum tomatoes with the olive oil, garlic and salt to taste in a blender.
  • Slice the mozzarella into 2-inch-thick slices. Use a ghost-shaped Halloween cookie cutter to cut out mozzarella ghosts.
  • Roll out one of the pizza dough balls to about 12 inches and put on top of a pizza peel. Spoon the tomato sauce all over the pizza, drizzle with finishing olive oil and sprinkle with salt. Bake until the crust is slightly golden brown, about 5 minutes.
  • Carefully remove the pizza from the oven, assemble with the mozzarella ghosts, salsa verde and arugula, drizzle with lemon juice and garnish with freshly grated Parmigiano-Reggiano. Repeat with other pizza dough and serve immediately.

SICILIAN CHRISTMAS PIZZA (SFINCIONE)

Sicilian Christmas Pizza (Sfincione) image

Topping a thick-crust pizza with bread crumbs might sound like a strange idea, but it really is the crispy, cheesy secret sauce behind this Sicilian Christmas Pizza. Well, that and the actual sauce of onion and anchovies--ingredients you might want to keep secret from guests. Also key is the extremely sticky dough, which bakes into a feather-light, spongy crust that contrasts perfectly with the crumbly topping. Garnish with the customary dried oregano if desired.

Time 3h

Yield 12

Number Of Ingredients 21

2 cups warm water (100 to 110 degrees F (40 to 45 degrees C))
1 (.25 ounce) package active dry yeast
1 ½ teaspoons kosher salt
1 teaspoon white sugar
3 tablespoons olive oil
4 ⅔ cups all-purpose flour, or more as needed
2 tablespoons olive oil
2 large yellow onions, diced
salt to taste
1 teaspoon red pepper flakes
1 teaspoon freshly ground black pepper
1 tablespoon tomato paste
1 teaspoon dried oregano
9 oil-packed anchovy fillets, drained and 1 tablespoon oil reserved
1 ½ cups marinara sauce
¼ cup water
¾ cup fine plain dry bread crumbs
1 cup grated Pecorino Romano cheese
6 tablespoons olive oil, divided
3 ounces shredded mozzarella cheese
3 ounces shredded aged provolone cheese

Steps:

  • Pour warm water into the bowl of a stand mixer fitted with the dough hook. Sprinkle yeast on top and let bloom. Add salt, sugar, olive oil, and flour. Knead, scraping down sides as necessary, until dough is very elastic and sticky, 6 to 7 minutes. Cover and let rise in a warm place until doubled in size, about 90 minutes.
  • Heat olive oil over medium heat. Add onions and salt. Saute, stirring occasionally, until onions soften, sweeten, and turn translucent, 6 or 7 minutes. Add red pepper flakes, black pepper, tomato paste, oregano, and anchovies; mix until anchovies dissolve. Add marinara sauce, rinse out the container with water, and add the water. Stir and let simmer on medium-low heat until flavors come together, about 20 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine bread crumbs and Pecorino Romano cheese in a bowl; toss together with a fork. Add the reserved anchovy oil and 2 tablespoons olive oil. Mix until bread crumbs are well moistened.
  • Generously coat a rimmed 13x18-inch sheet pan with up to 3 tablespoons olive oil. Oil your hands and turn dough out onto pan. Pull, stretch, and press it to the sides of the pan, pausing to let dough rest whenever it shrinks back too quickly.
  • Spoon sauce over the dough and spread up to about 1/2 inch from the edges. Add mozzarella and provolone cheeses. Sprinkle bread crumb mixture evenly on top; do not press down. Drizzle remaining olive oil on top.
  • Bake in the preheated oven until pizza is well browned is bottom is cooked, about 35 minutes. Bake for as as long as you can without the crumbs on top burning so that the crust cooks as much as possible.
  • Slide pizza onto a cooling rack to prevent the bottom from getting soggy. Transfer to a cutting board once cooled.
