SPOOKY HALLOWEEN EYES
These festive hardboiled eggs are fun and easy to make. Sure to be a hit at any Halloween party.

Steps:
- Place each egg, cut-side down, into a muffin cup paper liner.
- Spoon mayonnaise into a plastic resealable bag; snip 1 of the bottom corners of the bag. Pipe mayonnaise through the opening around the base of each egg half.
- Portion red food coloring into a small bowl, blue food coloring into a second small bowl, and black food coloring into a third small bowl. Dip a clean and sterile small-tip paintbrush into the red food coloring and paint small lines onto each egg to represent 'veins', making sure to get a little of the red food coloring into the mayonnaise.
- Rinse brush and make a blue circle on the top middle of each egg to represent the 'iris'. Rinse brush and paint a black ring around the iris and put a dot of black in the middle of the iris for the 'pupil'.

SPOOKY HALLOWEEN EYEBALLS
These taste like Peanut Butter cups. They are fun to make and kids really get a kick out them. A bit time consuming, but the end-product is worth it.

Steps:
- Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
- Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
- Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.

Steps:
- Cut the eggs in half and scoop out the yolks.
- In a bowl mash the yolks with the cream cheese.
- Fill the eggs with the cream cheese mixture and push an olive into the middle of each one.
- Dip a wooden toothpick into the foodcolouring and draw bloodshot veins onto the cheese mixture, running from the olive to the outside.

SPOOKY EYEBALL TACOS (JOHNNY #5 TACOS)
These are a sight to see. I originally made them after finding the recipe last year for Halloween and have since changed the recipe around to make them more eater-friendly. The smiles you will receive are priceless! Try to find the widest taco shells possible if you are not making your own. We call them "Johnny 5 Tacos" as they resemble the robot from the movie Short Circuit more than they seem spooky. Kids also love to help prepared these!

- MIX meat and seasoning mix. Shape half of the mixture into 24 (1-inch) balls; place in 15x10x1-inch baking pan and bake at 350 F for 15 to 20 minutes or until cooked through.
- Brown the remaining seasoned ground beef and add salsa.
- Fill each taco shell with a thin layer of ground beef, sour cream, lettuce, and tomatoes.
- Position 2 meatballs inside the taco shell and add a dollop of sour cream to each. Garnish with olives to make "eyeballs." Spread the cheese out along to the top for stringy hair.
HALLOWEEN EYEBALL RECIPE: GIANT EDIBLE COW EYEBALLS

- Place a pea-sized amount of each red, green, and blue food coloring in the bottom of a small, heat-safe mixing bowl. Set aside.
- Pour all the coconut milk and water in a medium saucepan (you want it to equal 4 cups, total). Add 2 tsp of agar agar and whisk until it is all incorporated into the coconut milk.
- Place over medium-high heat and bring to a gentle boil, reducing heat once it boils to bring it to a simmer.
- Add the 1/2 cup sugar and stir until all the sugar is dissolved. At this point, give the mixture a little taste and see if it is sweet enough for you. If not, add sugar by the tbsp until it is sweet enough, stir until dissolved, then remove from heat.
- Remove 1/4 + 1/8 cup of the agar agar mixture and place into the bowl with the food coloring. Whisk until the mixture is black and place 1 tbsp each into the bottom of the six spherical molds (put them all on a cookie sheet for easy moving). Put all molds into the refrigerator to cool.
- After about 15-30 minutes, check and see if the black mixture has set. If it has, begin adding the rest of the white agar agar/coconut mixture on top of the black mixture evenly across the rest of the six molds, leaving a small amount of space at the top. (Note that if the mixture in the pan has started to solidify, you can reheat to make liquid again).
- Once all the molds have been filled, place the lids carefully on each mold and press down gently. Put back in the fridge.
- Allow to chill several hours until eyeballs are fully set. Repeat with the remaining mixture for two more eyeballs if desired. Remove and serve as desired.

- Preheat oven to 350 F. (175 C.) if you're using bread for the bottoms. If you're using crackers, don't preheat. Add six large eggs to a pot of cool water. Place them on the stove and boil them for 20 minutes. Place the eggs in a bowl of cold water for 2-5 minutes to stop the cooking, and peel them one by one.
- Slice each egg in half through the center, then gently slide the yolks out. Place the yolks in a mesh strainer over a bowl and use a spoon to push the yolks through. This turns the yolks into a powder that makes for a creamier, less chunky filling.
- Add 2 tbsp. mayo, 1 tbsp. spicy brown mustard, a sprinkle of salt & pepper, and stir. If the filling appears a little dry, add a little more mayo until the consistency is like a thick hummus. Add a few drops of either red food dye or beet juice until the color is a spooky red. Either put filling in a pastry-piping bag or simply cover so it doesn’t dry out while you follow the next steps.
- If you’re using rice crackers to cover the bottoms, you can skip this step. Otherwise, use a tiny, round cookie cutter (that’s about the size of your eggs) to cut 12 circles out of 3 pieces of bread. Flatten the circles as much as you can into wafers. Toast them for 5-7 minutes at 350 F. (175 C.)
