EASY PEASY SPLIT PEA SOUP



Easy Peasy Split Pea Soup image

1/2 pound slab bacon
1 medium onion, chopped
1 carrot, diced
1 celery stalk, diced
Salt and freshly ground black pepper
1 clove garlic, chopped
1 tablespoon ground cumin
1 pound green split peas, washed and picked clean
6 cups low-sodium chicken stock
1 tomato, diced, for garnish
1 lime, cut into wedges, for garnish
Special equipment: Blender or immersion blender

Steps:

  • Slice the bacon into 1/2-inch chunks. Add to a large soup pot and cook over medium-high heat to render the fat and get crispy on all sides, about 8 minutes total. The more brown the better; just don't burn them. They are perfect when they are more chewy than juicy.
  • Remove bacon chunks and set aside on a paper towel lined plate. Pour off all but 2 to 3 tablespoons of fat from the stock pot. Add the onion, carrot and celery with a pinch of salt and pepper and saute until onions are just translucent, about 6 to 8 minutes. Stir in the garlic and cumin and let cook another minute before adding the split peas and stock. Cover and bring to a boil. Reduce the heat and simmer until the peas are al dente (cooked through, but slightly firm and whole), about 20 minutes. Cool for 5 minutes.
  • Ladle out about 3 cups of the peas and carefully blitz the remaining soup using an immersion blender or countertop blender until creamy. If using a countertop blender be sure to only fill it about 1/3 the way up and start on a slow speed, then raise to a higher speed. This method will take a bit longer due to the need to blitz in batches. Pour the soup back into the pot. Return the 3 cups of peas to the soup and stir to combine and heat through. Season with salt and pepper, to taste. To serve, ladle the soup into bowls and top with bacon, tomato and a squeeze of lime.

This came from the Los Angeles Times via Liz at Recipegoldmine.com. It was a stove top soup, but the closest I've yet found to Anderson's which is a tradition in California. I modified it just a bit for the crock pot and made it a hair thicker to suit our tastes. You can also add bacon, ham, or ham hocks to enhance the flavor a bit.

2 cups split peas, rinsed and picked over
1 stalk celery, coarsely chopped
1 large carrot, chopped
1 medium onion, chopped
1/4 teaspoon thyme

Steps:

  • Combine water, peas, celery, carrot, onion, thyme, red pepper and bay leaf in crock pot.
  • Season to taste with salt and pepper.
  • Cook on low until split peas and vegetables are tender (anywhere from 6-8 hours).
  • Press soup through fine sieve and reheat just to boiling point or use hand blender to smooth.

2 qt soft water (i have always just used whatever came out of my tap)
2 c split peas (a 14-16 oz. bag)
1 branch of celery, chopped
1 large carrot, chopped
1 small onion, chopped
1 clove garlic, minced
1/4 tsp thyme, ground
1 pinch cayenne pepper
1 bay leaf
1 tsp salt
1/4 tsp black pepper

Steps:

  • 1. I usually use a 28-ounce package of peas and double the rest of the ingredients. A single recipe isn't quite enough for a family of two adults and two children, or to have enough for a second meal for two adults.
  • 2. Combine all ingredients in a large pot and boil hard for 20 minutes, then slowly until peas are tender. (The 50-minute cooking time is approximate. After the 20 minutes of "hard boil," I reduce the heat to a simmer and cook until the peas mash easily.)
  • 3. Strain through a fine sieve. (I use my food processor. Don't forget to remove the bay leaf!)
  • 4. Reheat to the boiling point.
  • 5. I ladle the soup into bowls and sprinkle it with a bit of paprika or Parmesan and a few croutons. I never add ham or anything to this recipe because I love Andersen's flavor. I sometimes make a different split pea soup with ham that I don't puree--I leave it kind of chunky with the peas adding texture. It just depends upon what I'm in the mood for. :)

Anderson? Yeah, I'm talking about Anderson's Pea Soup in Buellton,California off Highway 101 very close to the "Dutchtown" of Solvang. Anyone who's ever driven on a long trip up the 5 or 101 freeways in California HAS to have seen these billboard signs seemingly in the middle of nowhere proclaiming: "Try Anderson's Split Pea Soup, only 227 miles!". I don't actually have a picture of one of the signs but I plan to take one next time I drive up north. This is some marketing genius who thought of this. There is absolutely nothing to do while driving up these long stretches of highway, but look at the scenery. So they just buy up some cheap ad billboard space in 50 mile increments or so and plop their signs down advertising how far it is to their Pea Soup Headquarters. I'd like to know how successful they are in getting people to think about Pea Soup... I know it's certainly worked on me! I recently decided to make use of the extra ham and ham hock bones that are inevitably left over from Sunday dinner. I've never tried to make Split Pea Soup so I stopped by the market and picked up a few bags.

1/2 lb dried split green peas
4 -6 cups chicken stock
2 ham hocks
1 bay leaf
1/2 onion, chopped
2 stalks celery, chopped
1 carrot, chopped
2 garlic cloves, minced
1/2 tablespoon oil

Steps:

  • Wash and drain the dried peas. Watch out for tiny ROCKS in the peas... the occur every so often and can break your teeth if left in! If you'd like to, cut off the ham from the bones, cube it and set aside. Some people leave it on and then cut it off after cooking, but cutting it off before will decrease the saltiness of the soup.
  • Heat up the oil in a large pot, add the onion, celery, and carrot. Cook over medium heat until softened, about 3-5 minutes. Add the garlic and cook for about 1 minute more.
  • Add the chicken stock, peas, ham bones, bay leaf, and bring to a boil. Cook half covered over low heat for about 1 to 1.5 hours stirring occasionally. When you get near the end of cooking, you can add the cubed ham. Add salt and pepper to taste. Delicious split pea soup is now ready!

Homemade Split Pea Soup, just like mom made growing up! This hearty, protein packed, comforting soup is made with tender split peas, flavorful ham and fresh vegetables. It's easy to make and perfect for the cold weather.Makes about 9 cups.

1 Tbsp olive oil
1 1/2 cups chopped yellow onion ((1 medium))
1 1/4 cups chopped celery ((about 3 ribs))
1 tsp minced garlic ((1 clove))
4 cups unsalted chicken broth
4 cups water
1 (16 oz) bag dried split peas, (picked over and rinsed)
2 bay leaves
1 1/2 tsp chopped fresh thyme, (or 1/2 tsp dried)
Salt and freshly ground black pepper
1 1/2 lb meaty ham bone (or ham shanks)
1 cup chopped carrots
Chopped fresh parsley, (for garnish (optional))

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add onion and celery and saute 3 minutes. Add garlic and saute 1 minute longer.
  • Pour in chicken broth and water. Add split peas, bay leaves and thyme. Season lightly with salt and with pepper to taste (I like to wait to add more salt until the end to see how salty the ham has made the soup).
  • Nestle ham bone into soup mixture. Bring mixture to a boil, then reduce to low. Cover and let simmer, stirring occasionally until peas and ham are tender, about 60 - 80 minutes.
  • Remove ham from soup, let rest 10 minutes then shred or dice meat portion into pieces, cover.
  • Meanwhile add carrots* to soup. Cover soup and continue to simmer, stirring occasionally, until peas have mostly broken down, about 30 minutes longer**.
  • Stir ham into soup, season with more salt as needed. Serve warm garnished with parsley if desired.

2 cups Andersen's Specially Selected Green Split Peas
1 branch celery, coarsely chopped
1 large carrot, chopped
1 onion, chopped
1/4 teaspoon ground dried thyme
1 pinch cayenne
1 bay leaf

Steps:

  • Original instructions: Boil hard for 20 minutes, then slowly until peas are tender. Strain through fine sieve and reheat to boiling point.
  • Serves 8. (Or 4, depending on appetites and whether this is a main dish or an appetizer.)
  • Dorothy's helpful tips: Chop the celery, carrot and onion in a small dice, so they cook faster and thoroughly. Instead of straining (why bother?), insert your immersion blender into the pot and whirl until the soup is smooth, like they serve it at the restaurant. If you like chunky soup, whirl it just a bit and leave some chunks of vegetable in there. Peas: you don't actually have to mail-order the peas; just use the dried split peas you find at your grocery store. Water: I am not sure why the restaurant calls for soft water (other than the presumption that is what they have at their location), but of course use your own tap water. Soup is peasant food! We don't put on airs, do we?

  • In a large pot over medium heat, add in the garlic and onions, and sauté with oil or a couple tablespoons of vegetable broth (or water) for 2 minutes, or until fragrant.
  • Add in the carrots and celery and cook for 3 minutes more. If you are cooking with vegetable broth or water, be sure to add more as needed to prevent burning. We like to ad 2-3 tablespoons at a time.
  • Add in the remainder of your vegetable broth along with the split peas, thyme, bay leaves, and cayenne pepper. Mix everything together and bring to a boil over medium heat. Allow the soup to simmer on medium heat for 20 minutes. After 20 minutes, reduce the heat to low and allow it to simmer for 25 minutes more.
  • Season with salt and pepper to taste and be sure to remove the bay leaves. You can serve the soup as or you can puree it (with an immersion blender or regular blender) if desired.
