SICILIAN LAMB SPEZZATINO WITH SAFFRON AND MINT

Sicilian Lamb Spezzatino With Saffron and Mint image

This simple stovetop lamb stew is seasoned with only a pinch of saffron and a splash of wine, then showered with lots of chopped mint. Once assembled, this fragrant stew takes only about an hour to cook. It has a bright-flavored lightness that makes it ideal for these balmy evenings. I served it with plain boiled potatoes - nothing more was needed.

Categories     dinner, main course

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 9

4 pounds lamb shoulder chops cut 2 inches thick
Salt and pepper
1/4 cup olive oil
2 cups diced red onion
4 cloves garlic, minced
Pinch of saffron
2 tablespoon tomato paste
1 cup dry white wine
1 cup coarsely chopped fresh mint

Steps:

  • Season chops generously with salt and pepper. Put olive oil in a wide deep skillet over medium-high heat. Lightly brown lamb on both sides, then remove and set aside. Lower heat to medium, add onion to pan and season with salt. Cook, stirring, until softened and lightly colored, about 5 minutes.
  • Stir garlic, saffron and tomato paste into onions and cook 1 minute. Add wine and simmer for 2 minutes, then return lamb to skillet. Add 4 cups water, just to cover meat, and bring to a boil. Put on lid, turn heat to low and simmer gently for about 45 minutes, until quite tender.
  • Remove lid and raise heat to a rapid simmer. Simmer until juices have reduced by nearly half and sauce has thickened somewhat (may be prepared ahead to this point). Taste and adjust seasoning. Just before serving, reheat and stir in chopped mint.

SPIT ROASTED LEG OF LAMB WITH PRESERVED LEMON, SAFFRON, OLIVE, AND VINAIGRETTE

Spit Roasted Leg of Lamb with Preserved Lemon, Saffron, Olive, and Vinaigrette image

Provided by Cat Cora

Categories     main-dish

Time 4h50m

Yield 6 to 8 servings

Number Of Ingredients 15

1 cup champagne vinegar
1/2 teaspoon saffron threads
2 cups pure olive oil
1 tablespoon preserved lemon, small diced
1 cup oil cured olives, finely chopped
1 tablespoon cracked black pepper
1 (5 to 6 pound) leg of lamb
8 small sprigs rosemary
3 cloves garlic, sliced thinly
1/4 cup olive oil
1 tablespoon dry oregano, crumbled
1 tablespoon fresh oregano, chopped fine
1 lemon, juiced
2 teaspoon salt
1 teaspoon black pepper

Steps:

  • In a small saute pan, bring the champagne vinegar and saffron to a boil for 1 minute. Pour into a bowl and whisk in the olive oil slowly as to incorporate it. Add the chopped preserved lemon and black olives. Season with pepper. I do not add salt to this because of the saltiness of the olives. This recipe makes a quart and will last for at least a month.
  • Preheat the oven to 500 degrees F.
  • Make sure the lamb leg is cleaned well and any hard fat is trimmed off. Make 8 slits in the leg and stuff them with the rosemary sprigs and garlic cloves. Rub the leg with the olive oil, dry and fresh oregano, lemon, salt, and pepper. Roast at 500 degrees F. for about 30 minutes. Lower heat to 375 degrees F. Add water to the pan if needed. Cook for about 3 1/2 hours.
  • Remove the lamb from the pan and let rest. Skim the fat from the pan juices and pour the juice onto the bottom of a platter. Slice the lamb into thin slices and serve topped with the preserved lemon sauce.

LAMB TAGINE WITH PRESERVED LEMON AND OLIVES RECIPE

Lamb Tagine With Preserved Lemon and Olives Recipe image

An easy Moroccan recipe for slow-cooking in a traditional tagine. Beef or goat may be substituted for the lamb.

Provided by Christine Benlafquih

Categories     Dinner     Entree     Main Course

Time 3h45m

Yield 4

Number Of Ingredients 15

1 1/2 pounds (700 grams) lamb, cut into 3-inch pieces
1 large onion, finely chopped
2 cloves garlic, finely chopped or pressed
1/3 cup olive oil
1/2 teaspoon smen ( Moroccan preserved butter ), optional
1 teaspoon ginger
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon turmeric, or 1/8 teaspoon Moroccan yellow colorant
1/2 teaspoon saffron threads , crumbled
1/4 teaspoon Ras El Hanout , optional
1 handful fresh parsley and cilantro sprigs, tied into a bunch
2 1/2 cups water
1 large handful of red or green olives , or a combination
1 preserved lemon, quartered and seeds removed

Steps:

  • Gather the ingredients.
  • Remove the flesh (peel part) from the preserved lemons , and finely chop it. Mix it with the meat, onions, garlic, spices and half of the olive oil .
  • Pour the other half of the olive oil into the bottom of a tagine, and add the lamb and onion mixture. The meat will be less likely to burn on the bottom if you place the meat bone- or fat-side down.
  • Place the parsley and cilantro on top of the meat, add the water, and cover the tagine. Put the tagine over medium-low heat and wait patiently for the tagine to reach a simmer.
  • Once the tagine reaches a simmer, allow it to cook undisturbed for about 2 hours. Use the lowest heat necessary to maintain the gentle simmer.
  • After 2 hours, check the tagine. Add the preserved lemon peels and olives, and a little more water if you feel the liquids have reduced only to oils.
  • Cover the tagine and continue cooking another hour or longer, or until the meat is very tender. Reduce the liquids if necessary, and serve the tagine with Moroccan bread for scooping up the meat and sauce.

  • Start by taking the rosemary and thyme off of the stems and finely mincing them and the sage. Mince the garlic up and put it in a bowl with the herbs, salt, pepper, olive oil, and lemon juice to make a paste.
  • Score the lamb with small criss-cross cuts around the leg. Rub the herb paste over the lamb, making sure that you get it into all of the nooks and crannies. Let the lamb rest for at least two hours before roasting.
  • Take the spit and insert in through the lamb. Spit roasting works best when you skewer the meat lengthwise as close to the center as possible, to keep the weight balanced. It's very important to secure the meat using the large forks that come with your rotisserie kit.
  • Roast the lamb over low heat until it reaches an internal temperature between 140 to 145℉. A three-pound leg will usually take around an hour and a half.

WHY YOU SHOULD SPIT ROAST YOUR NEXT LEG OF LAMB | UMAMI
2021-05-20 Lamb roasting on a spit is a beautiful thing. One advantage to cooking this way is that slowly rotating the meat allows it to continually baste itself in its own juices, which adds flavor and helps keep the lamb tender. The continuous basting is a big advantage spit roasting has over roasting the lamb in the oven or grilling it.

COOKING A LEG OF LAMB ON A SPIT ROASTER
Cooking a couple of legs of lamb on a spit roaster is an easy way to cook for a special occasion or even at Christmas. While you can cook a leg of lamb in your normal kitchen oven, cooking a leg of lamb on the spit will give you a delicious smoky flavour and allow you to also cook other meats (or multiple legs of lamb) on the spit at the same time.
