HONEY-GLAZED HAM WITH CRANBERRY RELISH
A tangy cranberry-pecan relish adds a festive touch to a honey-glazed spiral sliced ham.

- 1. Remove and discard glaze packet from ham or reserve for another use. Begin by preparing ham according to package directions.
- 2. Make Honey Glaze: While baking, mix honey, mustard and lemon juice in small bowl until blended. Set aside until the last 30 minutes of baking time.
- 3. Make Cranberry Relish: Combine apples and juice in medium saucepan. Bring to a boil over medium heat. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally. Add cranberries; simmer an additional 5 minutes, or until fruit is tender, stirring occasionally. Remove from heat; stir in marmalade and pecans. Set aside until ready to eat. Or, if made in advance, cover and refrigerate until ready to use.
- 4. Uncover ham and brush with the Honey Glaze for the last 30 minutes of the baking time.
- 5. Let stand 10 minutes. Carve and serve with Cranberry Relish.
HOW TO COOK A SPIRAL HAM AND A GLAZE RECIPE
You could add in a splash of bourbon to this glaze or a few tablespoons of adobo sauce (from a can of chipotles), too. I use the same amount of glaze regardless of the size of my ham. Anything over 12 pounds, however, and I'd increase the amounts by at least 50%; you can always serve extra glaze on the side (just warm it slightly in the microwave just before serving).

- Let your wrapped ham sit on the counter for about an hour.
- Preheat the oven to 275F. Line two pieces of foil in different directions on top of a large baking sheet. Remove all the packaging from the ham and discard (keep the glaze if you're using that in place of the one posted here, otherwise you can discard it). Place the ham on top of the foil.
- Mix together all the ham glaze ingredients. Spread the glaze all over the top and sides of the ham and between each slice (you can use a brush but I find that using my hands is easiest). Pull up the sides of the foil and wrap the ham gently (not loose but not too tight, either), using additional foil if necessary.
- Place the ham in the oven and bake it for approximately 18 minutes per pound, opening the foil to baste with the juices a couple of times during cooking.
- Remove from the oven and baste once more with the juices (you can serve extra at the table if desired).

- 1. Prepare ham according to directions on package. The ham that I had called for pre heating the oven to 325 degrees F.
- 2. Wrapping ham tightly in aluminum foil. I used several layers. If using a plastic bag the time required is usually about 14 minutes per pound, or 17 minutes per pound if wrapped in foil. BUT FOLLOW DIRECTIONS ON HAM PACKAGE. My ham required a temperature of 325 for about 90 minutes for the size of ham I had.
- 3. Then I removed foil and added glaze to ham and baked for an additional 25 minutes. Note you can double the glaze recipe if you would like to have extra on the side.
- 4. TO MAKE THE GLAZE: In a medium sauce pan or bowl add the cranberry sauce, brown sugar cloves and lemon juice, stir till well mixed then brush over ham liberally, and return to oven and bake for an additional 25 minutes or so.
- 5. Please note I lined the platter with green leafy Kale then separated ham slices, and arranged them on a platter. Then used a V tool to make the star burst orange and lemon halves and added a maraschino cherry half in the center.

The glaze on this ham is so good! The oven time and glaze amounts are for a 5-pound ham, for a larger ham adjust the cooking time. The ham must be cooked at 325 degrees, not higher.

- Set oven to 325 degrees.
- In a small saucepan combine the cranberry sauce, brown sugar, fresh orange juice, cloves, cinnamon, allspice and black pepper, if using; heat slowly stirring until smooth.
- Place the ham on a rack in a shallow roasting pan with 1/3 cup water.
- Insert a meat thermometer in the ham.
- Bake until the thermometer reaches 125 degrees (about 1-1/2 to 2 hours).

TWICE SMOKED SPIRAL HAM

- In a small saucepan, combine the ginger ale, brown sugar, mustard, honey and apple cider vinegar. Bring to a boil. Cook until glaze is reduced by half, about 15 minutes. Stir in remaining ingredients; cook 5 minutes longer. Remove from heat.
- Remove all of the netting and wrapping from the ham and lay the ham in a large foil pan. Pull the slices apart one by one and drizzle honey glaze down in between the pieces. You will want to hold the front so the slices do not fall all the way over and tear. After that brush the top of the ham with glaze.
- Prep your smoker according to manufacture's directions. We used cherry wood pellets in our Traeger electric smoker. Set your smoker for cooking at about 230 - 240 degrees F. Place the pan with the spiral cut ham on the smoker and close lid. Baste the ham every hour with more of the glaze.
- The smoking process will take 3 hours. This is a double smoked ham so the ham is already cooked, this process adds more smoke flavor and the glaze.

- Remove your ham from the refrigerator and allow to sit at room temperature for 2-3 hours so it can warm up.
- Preheat oven to 325°F. Make sure oven racked is at the bottom. Remove the rack from the roasting pan and add the star anise and a handful of whole cloves to the pan. Fill with an inch of water. Place rack back in.
- If ham is wet and slimy, gently pat dry with a paper towel. Using a sharp knife, score the ham diagonally. Place ham flat face down onto the rack and tightly cover with a sheet of aluminum foil.
- Bake in preheated oven for 30 minutes. Meanwhile, prepare the glaze.
- Add cranberries, honey, water and orange juice to a saucepan over medium heat and cook, stirring occasionally until most cranberries pop and mixture begins to boil, about 5-6 mins.
- Add orange zest (optional), cayenne, mustard, vinegar and brown sugar and stir until smooth.
- Allow to cook for another 3-5 mins or until sauce thickens up. Either using an immersion blender, a regular blender or a food processor, blend sauce until it's nice and smooth. Set aside.
- Once the ham has finished pre-baking, remove from the oven and remove the foil. Brush the entire ham with a coat of glaze, return to the oven and bake for another 20 minutes.
- Continue to re-glaze the ham every 20 minutes until it's finished baking. Make sure the internal temperature is around 130°F - 140°F. The baking time is 18-20 minutes per pound, so baking times may vary. See information in post above for more details.
- For the last 20 minutes of baking, glaze the ham one final time, and spoon some of the fat and clove flavoured water over the ham.
- Once ham has finished baking, remove from oven and spoon more of the juices on top and brush with more glaze.
- Loosely cover the ham with aluminum foil and allow to rest for 15-20 minutes.
- Spoon some more juices on top and brush with a final coat of glaze. Transfer ham to a serving platter with a bed of kale and fresh cranberries. Serve and enjoy!
