SPINACH ROCKEFELLER STUFFED PORTABELLAS

I love spinach in any form. I needed a vegetarian starter for a recent dinner, and found this to be just the ticket. The addition of basil makes it a little different than the standard Spinach Rockefeller.

5 tablespoons butter, divided
16 ounces frozen spinach
1/3 cup chopped onion
1 whole bay leaf, crumbled
1 tablespoon chopped parsley
1/2 teaspoon cavender all purpose Greek seasoning
1/2 teaspoon dried basil
1 stalk celery
1/4 cup dry white wine
1/4 cup fresh lemon juice
1/4 cup breadcrumbs, as needed
1/8 teaspoon anise seed, crushed
4 tablespoons parmesan cheese (optional)
4 portabella mushroom caps, cleaned
1 -2 clove garlic, minced fine
1/2 lemon, sliced thinly (to garnish)

Steps:

  • In a small saucepan, heat 3 tablespoons butter, add all ingredients but breadcrumbs
  • Cook uncovered on medium heat so that the liquid is reduced slightly
  • Reduce heat, and cover, stirring occasionally, till onions are tender
  • Add crumbs and mix
  • To prepare mushrooms, add remaining butter to a cleaned non stick skillet, and saute garlic briefly
  • Add mushroom caps, saute until lightly brown
  • Spoon an even amount of the mixture into each cap, and top with parmesan cheese, if using
  • Place in an ovenproof glass dish, and heat in a preheated 350º oven until heated through, about 15-20 minutes
  • Serve hot, with a garnish of lemon slice atop each cap

"Here we take the elements of a vegetarian lasagna filling-ricotta, spinach and Parmesan cheese-and nestle them into roasted portobello mushroom caps. The recipe works best with very large portobello caps. . . Serve with a tossed salad and a whole-wheat dinner roll or spaghetti tossed with marinara sauce." Note: After making this dish, I have changed the recipe slightly from the original (increased it to 6 mushrooms from 4, added garlic and chives, then mozarella on top instead of parmesan. If you like spicy stuff, I would recommend adding a few crushed red pepper flakes to the marinara sauce. Recipe from Eating Well.

6 large portobello mushroom caps, stems removed
1/4 teaspoon seasoning salt
1/4 teaspoon fresh ground pepper, divided
1 cup part-skim ricotta cheese
1 cup finely chopped fresh spinach
2 minced garlic cloves
1/4 cup finely shredded parmesan cheese
2 tablespoons finely chopped kalamata olives
1 tablespoon finely minced chives (may substitute green onion)
1/2 teaspoon italian seasoning
1 cup prepared marinara sauce
1/2 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 450°F Coat a rimmed baking sheet with cooking spray.
  • Place mushroom caps, gill-side up, on the prepared pan. Sprinkle with seasoning salt and 1/8 teaspoon pepper. Roast until tender, 20 minutes.
  • Meanwhile, mash ricotta, spinach, Parmesan, olives, chives, garlic, Italian seasoning and the remaining 1/8 teaspoon pepper in a medium bowl.
  • Place marinara sauce in a small bowl, cover and microwave on High until hot, 30 to 90 seconds depending on your microwave.
  • When the mushrooms are tender, carefully pour out any liquid accumulated in the caps. Return the caps to the pan gill-side up. Spread 1-2 tablespoon marinara into each cap; cover the remaining sauce to keep warm.
  • Mound a generous 1/4 - 1/3 cup ricotta filling into each cap (depending on the size) and sprinkle with the mozarella cheese.
  • Return stuffed mushrooms to the top rack of the oven and BROIL on high for 3-5 minutes until top is browned. Remove from oven and let stand for 3-5 minutes prior to serving. Serve with the remaining marinara sauce.

4 large portobello mushroom caps, stems and gills removed
1 tablespoon reduced-fat Italian salad dressing
1 egg
1 clove garlic, minced
salt and ground black pepper to taste
1 (10 ounce) bag fresh spinach, chopped
¼ cup chopped pepperoni
¼ cup grated Parmesan cheese
¼ cup shredded mozzarella cheese, divided
3 tablespoons seasoned bread crumbs, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush both sides of each portobello mushroom cap with Italian dressing. Arrange mushroom on a baking sheet, gill sides up.
  • Bake mushrooms in the preheated oven until tender, about 12 minutes. Drain any juice that has formed in the mushrooms.
  • Beat egg, garlic, salt, and black pepper together in a large bowl.
  • Stir spinach, pepperoni, Parmesan cheese, 3 tablespoons mozzarella cheese, and 3 tablespoons bread crumbs into the eggs until evenly mixed.
  • Divide spinach mixture over mushroom caps; sprinkle mushrooms with remaining 1 tablespoon mozzarella cheese and 1 tablespoon bread crumbs. Return mushrooms to the oven.
  • Continue baking until topping is golden brown and cheese is melted, about 10 minutes more.

2 large portabella mushrooms, stems removed
3 cups fresh spinach leaves
1 medium tomatoes, cut into wedges
1 1/2 ounces cranberry-walnut goat cheese, cubed
1 tablespoon olive oil
1 dash salt
1 dash pepper
1 dash paprika
2 medium flour tortillas

Steps:

  • Sprinkle mushrooms with dash of pepper, salt and paprika. Heat a medium size pan with olive oil. Add the mushrooms, with the underside of the cap down and cover on medium heat for 4 minutes. Flip the mushrooms and cook for another minute or two. Remove mushrooms onto a plate and put the sliced tomatoes into the already heated pan. Sprinkle with salt, pepper and paprika as well, then cover and cook for 2-3 minutes on low heat. Set aside.
  • Place a tortilla on each plate and layer a quarter of the spinach on each. Then layer the portobello mushrooms and goat cheese cubes. Slop the stewed tomatoes on and layer the rest of the spinach, half on each plate.
  • Fold up the wrap and enjoy!

"NAKED" OYSTERS ROCKEFELLER



sometimes called "Naked" Rockefeller because of the missing shell, but that is all that is missing because the abundance of Oyster and flavor will have the table singing your PRAISE!!!!!

2 pt fresh oysters
2 pkg 10 oz frozen chopped spinach
10 slice of your favorite bacon (oven prepared)
1/2 c asiago cheese, grated
1/2 c mozzarella cheese, grated
1 Tbsp garlic powder
2 Tbsp bread crumbs, seasoned
1 tsp salt
1 tsp black pepper
2 Tbsp butter

Steps:

  • 1. The Prep: Prepare your spinach (package instructions) drain well separate and set aside. Place your bacon on a baking pan in a single layer cook 10-12 minutes at 350* remove from oven and place on paper towels to drain then chop in small pieces. Grate your asiago and mozzarella cheese and place in separate bowls. Last but not least place your oysters in a bowl and gently pick through for shell particles.
  • 2. in a large skillet add your spinach to 2tbs of melted butter and gently saute 2-3 minutes over med heat, add your chopped bacon & garlic powder and saute another 2 minutes, finally add your grated asiago cheese over top of your spinach mixture sprinkle with salt and pepper and remove from heat.
  • 3. Here is the best part. Take a muffin pan and place two of your prepared oysters in each cup, place your spinach mixture over the top, sprinkle lightly with bread crumbs, then add your grated mozzarella over the top of your spinach and sprinkle with remaining bacon pieces. Place in your 400* degree oven for 4-5 minutes (or until cheese on top becomes melty) switch oven to broil and cook until the tops become a golden brown. remove from oven and carefully spoon mixture onto your plate of choice. If you really want to be fancy place over the top of a toasted french bread point.

2 dozen oysters
1/4 lb butter
1 celery rib, chopped
1 medium onion, chopped
1/2 cup chopped parsley
1 box frozen chopped spinach, thawed and drained
1/4 teaspoon anise seed (very imprortant--do not omit)
1/4 teaspoon Worcestershire sauce
cayenne
black pepper
1 cup sharp cheddar cheese
1/2 cup plain breadcrumbs

Steps:

  • Clean& drain oysters and set aside.
  • In skillet, melt butter& saute celery& onion, stir in parsley, spinach, anise, worcestershire, and pepper.
  • Remove from heat.
  • Grease or spray 8 ramekins.
  • Place 3 oysters in the bottom of ea ramekin.
  • Cover oysters with spinach mixture.
  • (***youcan do it in advance up to his point and refrigerate).
  • Bake@ 350 for 30 minutes.
  • Remove& top with cheese and crumbs.
  • Return to oven for 10 minutes.
  • **Ifyou don't own ramekins, bake in a shallow baking pan.
  • This is not a beautiful dish, so the attractive containers help.
  • I made this for years without them.
  • The ramekins make it easier to serve, too.
  • I usually do this as an appetizer, but it makes a main course for 4.
