2 tablespoons butter, melted, divided
1 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
3 large eggs
1 cup whole milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1 cup chopped onion
Sliced pimientos, optional

Steps:

  • Brush the bottom and sides of a 13x9-in. baking dish with 1 tablespoon butter; set aside. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining butter. Stir in the spinach, cheeses and onion. Spread in prepared pan. , Bake, uncovered, at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean and edges are lightly browned. Cut into squares. Garnish with pimientos if desired.

1 Tbsp. butter
3 eggs
1 cup flour
1 cup milk
1 tsp. baking powder
2 pkg. (10 oz. each) frozen chopped spinach, thawed, squeezed dry
2 pkg. (4 oz. each) ATHENOS Traditional Crumbled Feta Cheese
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
1 Tbsp. dried minced onion

Steps:

  • Heat oven to 350ºF.
  • Bake butter in 9-inch square baking dish in 2 min. or until melted. Remove dish from oven; brush butter onto bottom and sides of dish.
  • Beat eggs with mixer in large bowl. Add flour, milk and baking powder; mix until blended. Stir in spinach, cheeses and onion. Spoon into prepared dish.
  • Bake 35 min. Let stand 15 min. before cutting into squares to serve.

4 tablespoons salted butter
3 large eggs
1 cup almond flour
1 teaspoon baking powder
1 pinch ground nutmeg
salt to taste
1 cup almond milk
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 (16 ounce) package shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place butter in a 9x13-inch baking pan, and put in the oven to melt while preheating.
  • Beat eggs in a medium bowl. Combine flour, baking powder, nutmeg, and salt in another bowl.
  • Add flour mixture to the eggs alternating with the almond milk. Stir in spinach and Monterey Jack cheese. Pour into the melted butter in the baking pan.
  • Bake in the preheated oven until set, 35 to 40 minutes.
  • Remove from the oven and allow to cool for 45 minutes before cutting into 10 squares.

  • Combine eggs, milk, flour, and baking powder.
  • Beat well.
  • Add spinach and cheese; mix well.
  • Pour melted butter into a 13 x 9" pan.

I found this in my mother's collection of recipe clippings, from the 1960's. The only change I made was to reduce the salt to one-half teaspoon. You could probably substitute frozen chopped spinach to save time. I think these taste great at room temperature.

2 tablespoons butter
3 eggs
1 cup flour
1 cup milk
1/2 teaspoon salt
1 teaspoon baking powder
1 lb monterey jack cheese, shredded (Sometimes I use jack cheese with jalapenos)
4 cups spinach, fresh chopped, cooked and drained very well (I use bagged baby spinach, no washing & cooks in 2 minutes)
3 -4 tablespoons onions, minced
1/2 teaspoon mixed Italian herbs
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a 9 X 13 pan. Either melt butter in microwave and then pour into pan, or place baking pan with butter into oven for a minute or two; then remove from oven and tip the pan so that the butter coats evenly on bottom and sides.
  • Beat eggs.
  • Mix flour into beaten eggs.
  • Stir in milk, salt and baking powder.
  • Add cheese and spinach, mixing well.
  • Add onion and seasonings, stirring thoroughly.
  • Spread into baking pan and bake at 350 degrees for 35 minutes.
  • Cool 30 minutes before serving.
  • Cut 6 across and 9 down for the perfect sized finger-food appetizer.

1 tablespoon finely chopped onion

Steps:

  • Preheat oven to 350°F. Place melted butter in 13 x 9-inch baking dish; set aside.

1 cup flour

1 small onion, minced
16 ounces cheddar cheese, grated
2 (10 ounce) packages frozen spinach, chopped, thawed and drained
1 tablespoon pine nuts (optional)

Steps:

  • Preheat oven to 180C/350°F.
  • Pour melted butter into 9 X 13 baking dish and swirl around to cover sides.
  • In medium bowl combine salt, pepper, baking powder and flour and set aside.
  • In large bowl, beat eggs with milk. Add flour mixture and combine thoroughly.
  • Add onion, cheese and spinach, mixing after each addition.
  • Pour mixture into baking dish and sprinkle with pine nuts, if using.
  • Bake for 35 minutes. Remove and let cool 45 minutes to set before cutting into bite-sized pieces.

6 tablespoons whole wheat flour
1 (10 ounce) package frozen chopped spinach, thawed
2 cups low fat cottage cheese

1/8 teaspoon cayenne pepper
1/8 teaspoon nutmeg
