Baked Spinach Balls with Parmesan image

Cheesy, spinach balls that taste like spinach dip are the real deal and a delicious way to get your family to eat their leafy greens.

1/2 cup unsalted butter
1/2 cup chopped onions
1 clove garlic, minced
2 10-ounce packages frozen chopped spinach, thawed and drained*
1 1/2 cups breadcrumbs
6 eggs
1 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350F. Line a baking sheet with parchment paper.
  • In a large pan, melt the butter over medium-high heat. Add the onions and cook until soft. Add the garlic and stir. Remove from heat and set aside.
  • In a large bowl, combine the spinach, breadcrumbs, eggs, Parmesan cheese, salt, pepper, and butter mixture. Stir to thoroughly combine.
  • Using a small cookie scoop or spoon, scoop the mixture into your hands and roll into a ball, and place them on the baking sheet.
  • Bake for 15 to 20 minutes, until lightly browned.

I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.

2 (10 ounce) boxes frozen spinach, drained well
3/4 cup melted unsalted butter

1 package (10 ounces) frozen chopped spinach
2-1/2 cups herb-seasoned stuffing mix
1 medium onion, finely chopped
3 eggs, beaten

1/4 teaspoon pepper

Steps:

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. Shape into 1-in. balls; place on an ungreased baking sheet. Bake at 350° for 10 minutes or until very lightly browned. Balls can be made ahead and refrigerated overnight before baking.

1 cup fresh spinach
1 cup dried breadcrumbs
1 egg white
1/2 cup fresh parmesan cheese
rock salt
pepper
1 red chile
50 g butter

Steps:

  • Mix together all the ingredients in a bowl using your hands as this helps get the mix together, the egg white will help to bind the mixture so it should all come together very quickly.
  • Once the mix can be sculpted into a ball shape it is ready to create the individual balls.
  • Tear off sections of the mixture and using your palms roll it into a ball about the size of a golf ball flatten the ball slightly so it is a kind of oval shape.
  • Deep fry the balls until they are a golden brown colour on all sides and serve on top of a creamy pasta dish. The balls should be slighly soft with melted cheese inside if they are cooked correctly.
